We had steak and pesto with roast vegetables. We also had zucchini feta and pumpkin cakes. It all tasted really nice.

Chicken dinner
The last few nights I’ve splurged on dinners with lots of things I’ve been trying to avoid to lose some weight. Tonight I returned to my weight loss meal. Chicken thigh meat and a couple of vegetables.

Fried chicken
After trying chicken fried steak on Sunday evening I thought I should try frying some chicken. I tweeted this desire today and buzz_71 asked me to blog it tonight. As if I wouldn’t 😃!!!
I soaked a chicken thigh fillet in butter milk for 20 minutes. This was then egg washed and then floured. The flour also had salt, pepper, mustard, curry powder, and paprika added. I did this twice and then placed the coated chicken into the refrigerator for a few minutes while I heated some vegetable oil in my wok.
I cooked the chicken for about five minutes per side. In addition I had a couple of sweet potato discs deep fried. Along with the chicken and sweet potato I enjoyed some avocado and cabbage.

On an interesting note, whenever I eat paprika I have very vivid dreams. If I go to sleep in a bad mood I have night mares, if I go to sleep happy I have happy dreams or at least dreams reflecting what I’ve been doing that evening but in positive tones. On Sunday night I had watched The Big Bang Theory and that night dreamt I was debating Sheldon Cooper about my favourite subject, viz., pus associated with soft tissue infections.

Smoked salmon for dinner
Tonight I prepared a simple smoked salmon meal. I processed some avocado, tomato, parsley, dill, chilli flakes, Tabasco sauce and olive oil. I also added some capers and black cracked pepper. It was quick and easy so I can get through more paperwork tonight that I’ve brought home.

Chicken fried steak
It sounds odd doesn’t it? While I was away I read a blog from one of my favourite Bloggers, viz., Karen from Back Road Journal fame. Karen recently posted about one of her childhood favourites, i.e., A Taste Of Texas, Chicken Fried Steak With Cream Gravy.
I thought I’d at least give the steak a go. I can do her vegetables another time.
I agree with Karen, tenderising with buttermilk is always a good thing.
I took Karen’s advice and applied the egg wash and flour process twice.
I used enough sunflower oil in my wok to ensure the coated meat sat about halfway in the shimmering oil. I didn’t make the cream sauce like Karen did, rather than waste the buttermilk, I used it instead of plain milk. It tasted okay. Next time I’d do it as Karen did.
For those that know me, I like cabbage so I steamed some and also fried some sweet potato discs.
The finished product tasted pretty good. The crusty flour coating was nice and spicy and the meat was very tender.

LAX to SYD dinner on Vaustralia
On my flight from Los Angeles to Sydney I had what I think was the best airline meal I’ve ever had.
It started with a lovely Mexican bean soup with tomato bean and coriander salsa. Having spent some days in Mexico this week this was a nice touch. With the soup I had some nice garlic bread.
For the entree I had the Atlantic smoked salmon with tomato caper and herb dressing with sesame seed grissini. It was just the perfect amount.
For the main course I had the most amazingly tender Red wine braised beef with soft polenta roasted shallots and salsa verde. This was better than almost any fancy restaurant meal I’ve eaten.
I finished the meal with three cheeses, viz., Brillat savarin triple cream from Normandy France, Foume d’Ambert Blue from Auvergne France, and Saint-Nectaire Washed rind from Auvergne France. This was accompanied with dates, almonds and crackers.

I cannot recommend Vaustralia more highly. It was a fantastic flight. The cabin manager and her team were friendly, attentive and cheery the whole flight.

Breakfast between MEX and LAX
Last night in Mexico dinner
I decided on the buffet in the hotel restaurant,viz., Manhattan Deli Sheraton Reforma.
I started with salad and then some Mexican hot food followed by creme caramel and cheesecake.
