A simple meal for one.
Ingredients
  • Chicken Maryland
  • Cos lettuce
  • Capsicum
  • Chilli
  • Olive oil
  • Heirloom tomatoes
  • Worcestershire sauce
  • Fennel seeds
  • Cracked black pepper
  • Sea salt flakes
Instructions
  1. Heat your oven to 150 °C
  2. Place Chicken Maryland piece on a rack in a roasting tray
  3. Grind salt and pepper over the chicken
  4. Add some fennel seeds
  5. Put in the oven for 60 minutes
  6. When the chicken is ready remove from the oven and rest for 30 minutes
  7. Twenty minutes after removing the chook from the oven cut the lettuce, capsicum and chilli to make the salad
  8. Blend the tomatoes and Worcestershire sauce and then heat in the microwave oven
  9. Plate up
  10. Shoot a photograph (I used a Nikon D5300 and Nikkor 35 mm lens at 1/4 seconds f/16 and ISO 100)
  11. Eat the meal
  12. Wash the dishes
  13. Write the recipe
  14. Write the blog post

  1. A fine bit of Atkins going on there – i did similar – grilled chicken wrapped in bacon but ruined it by sticking it in a baguette…with mayo
