Regular readers and followers on Instagram will know that I have a thing for the Mavi breakfast wrap. The “Mavi special” contains an hashed brown, mushrooms, bacon, fried egg and cheese. The customer gets a choice of tomato or barbecue sauce. I’ve seen one person asked for tomato and barbecue sauce to be combined. I’m not sure of that combination.
Bacon and egg breakfast wrap recipe

Ingredients
- Helga’s flatbread wrap (whole grain)
- Bega cheese
- Shepard avocado
- Spinach and chard leaves
- Fried eggs
- Streaky bacon
- Barbecue sauce
- Pepper
Instructions
- Cook the bacon in a benchtop oven at 200 °C for 15 minutes
- Fry two eggs slowly and gently
- Wilt the spinach and chard in the frying pan
- Mash the avocado in a bowl
- Lay out the flatbread and put two slices of cheese on it
- Put it into a microwave oven for 10 seconds to soften the cheese and the bread
- Spread out some avocado
- Lay on the spinach and chard
- Lay on the eggs and some pepper
- Lay on the bacon
- Squirt on some barbecue sauce
- Roll the bread into a wrap
- Cut like a fancy man
- Shoot a photograph
- Eat the wrap
- Wash the dishes
- Write the recipe
- Blog (verb)

They are a go to in my house, normally they have eggs, bacon & kale and a smokey tomato chutney. Kinda simple, but always so tasty. 🙂

We do a similar “wrap” over here, that can be eaten any time, but instead of the spinach leaves and cheddar cheese we use pinto beans and white dry cheese. The bacon can be replaced by either pork or beef. The eggs we put them scrambled, the avocado we don’t mash it, we put the avocado slices and we also add a dollop of sour cream. It’s a mean “wrap” (well, we actually can’t wrap it because of everything we put inside, we only fold it in half) but it’s delicious. 🙂
I was thinking of doing scrambled eggs too 😀 I frequently put too much and have trouble rolling the wrap.
Don’t wrap! If you just fold in half, you can really pack it in with tons of yummy things! 😀
