A perfect low carb roast Chicken Maryland dinner

I managed to do two laps of Lake Ginninderra today, nearly 24 thousand steps. I built up an appetite on a cold winter’s day. All day I’ve been thinking of cooking and eating a low carb roast Chicken Maryland dinner.

I’ve written many times how the Chicken Maryland is my second favourite part of a chicken. That said, it often contains my favourite part of the chicken, viz., the cloaca.

Instructions
  1. In a nonstick bowl add some Brussels sprouts and almonds
  2. Add a little grapeseed oil
  3. Rub some oil into the skin of the chicken and lay on top of the Brussels sprouts and almonds
  4. Shake some chicken salt and pepper onto the chicken
  5. Place a slice of pumpkin next to the chicken
  6. Roast in a benchtop oven at 200 °C for 1 hour
  7. When finished allow the chicken to rest for 15 minutes
  8. Plate up and shoot a photograph
