Taco Saturday

Have you ever had a Taco Saturday and eaten tacos for breakfast, lunch and dinner? Today I had tortillas filled with goodness three times. This extravaganza was inspired by a blogger friend Julie who is currently on a camping holiday. We started a discussion in the comments of a recent post and the notion of breakfast tacos was raised. It cascaded from there.

 

This morning started well with a panorama of the sunrise.

I went for a walk to build an appetite.

My breakfast taco was made with a line of cheesy potato gems (tater tots for my US friends), streaky Pialligo Estate Artisanal bacon and creamy buttery scrambled eggs.

After some grocery shopping I needed my lunch taco which contained smoked salmon with a guacamole laden with chilli.

After lunch I needed to make some purchases and walked by the lake. I had noticed an abandoned car on my morning walk.

I also spent some time sitting on a bench day dreaming.

For dinner I had some Coles pulled pork and made some macaroni cheese from scratch.

  1. Truly a trio of taco-y goodness there Gary. (say that three times fast!). The lake sure is looking pretty. Pity about that abandoned car. Who would throw out a perfectly good car? I see even the use of the batman logo couldn’t save it… sad, even the front seat is hanging its head.

    1. Thanks Kirsty. The car was gone the next day which is good. I do like the lake, it’s always a good photo opportunity.

  3. Way to go with your Taco Saturday. Very, very, creative and certainly very, very well done. You know, you could eat any of the tacos you made any time of the day. Out of the three, I really like the breakfast taco – but since I am not a huge fan of bacon, if I do make a version of yours, I will substitute it for smoked ham 😀

    Doesn’t look like your tacos are saucy – but that’s also just the way I like mine.

    I see you used soft shell taco. Any fan of the hard shell ones, Gary? 😀

    1. Thank you Mabel. I also like the hard shells but I thought a wrap like preparation was the way to go.
      Ham would work well. I’d be tempted to add a Hollandaise sauce for that 😁
