Hot and spicy cauliflower and sweet potato soup is a thing. I know cauliflower soup isn't to everyone's liking, but the addition of some curry powder, chilli flakes and roasted sweet potato can make a big difference.

Ingredients
  • 1 Cauliflower
  • 1 Sweet potato
  • ¼ Brown onion
  • 100 grams Streaky bacon
  • 1 teaspoon Sesame oil
  • 1 teaspoon Sesame seeds
  • 1 teaspoon Poppy seeds
  • 1 teaspoon Curry powder
  • 1 teaspoon Chilli flakes
  • 1 teaspoon Iodised salt crystals
  • 1 teaspoon Black peppercorns
  • 1 Litre Chicken stock
  • 2 wedges Blue cheese
  • 1 handful Coon® cheese
  • 2 dollops Sour cream
Instructions
The soup cooking part
  1. Take a whole cauliflower and break it down into florets. Using a sharp paring knife cut around the core and gently pull the florets off.
  2. Take a whole sweet potato and cut into 1 cm³ pieces.
  3. Finely chop ¼ of an onion.
  4. Slice a rasher of streaky bacon into small pieces.
  5. Lay out the sweet potato, onion and bacon onto a baking tray and season with sesame oil, iodised salt and freshly cracked pepper along with a teaspoon of dried chilli flakes. Add some sesame seeds and poppy seeds too.
  6. Cook the sweet potato, onion, and bacon in an oven for one hour at 150 °C/302 °F.
  7. Cook the cauliflower florets in chicken stock with one teaspoon of curry powder until you can penetrate the stalks with a sharp knife without resistance.
  8. Drain the cauliflower of most of the stock and then add the sweet potato, onion and bacon to the saucepan with the cauliflower.
  9. Blend everything with a stick blender until it is relatively smooth. It doesn't have to be super-smooth, you know how I like it rough. Mouthfeel is important.
  10. Add a few dollops of sour cream and blend.
  11. Mix through some grated Coon® cheese until it melts.
  12. Serve the soup with some blue cheese

Did you enjoy the smell of boiling cauliflower in the flat with all the windows and doors closed?

No, it smelt like I was living in the most evil fart. It’s like an evil spirit exists in my flat and it constantly farting. I fear if I light a match to light a candle I will cause an explosion which will destroy the apartment block and wreak havoc across Canberra.

Did the blue cheese make a difference?

Oh boy, did it ever. It made a huge difference and it was fantastic.

  2. As soon as I saw the heading for your post I couldn’t believe it Gary – no meat and I laughed, then I see bacon in your soup which I could exclude (as well as the cheese/sour cream now). Glad it was delicious as it sounds it.

  3. I like cauliflower to munch on raw and cooked all kinds of ways. Your soup sounds good, the only thing I would probably leave out is the poppy seeds and that is just personal taste.

    1. Cauliflower seems to be a little divisive, just like Brussels sprouts and broccoli. I like that as I get older, I’m more enamoured by these vegetables.

  5. I don’t mind cauliflower soup, but haven’t cooked it myself so I don’t know the the degree of the evil smell that brings about. I take that it is really evil…

    I don’t watch TV when I cook. Usually when I cook, while something is cooking I’ll be chopping up something else or start washing up already. Or just arranging the kitchen 😂

      I like having the TV on and listening in as I do things in the kitchen. I should start to think about video again. When I did the videos in the past I couldn’t have the TV on.

  6. I LOVE cauliflower soup. I use a Jamie Oliver recipe for cauliflower soup and the last time I made it, I took your advice and added some spice to it. Great tip! I don’t watch TV when cooking as it’s practically the only thing I do mindfully.

    1. Cool, thanks, Emma. I did think about roasting the cauliflower too to make this soup but split the difference with the sweet potato.
