A simple meal that has a good amount of oven time so you can relax when you get home from work
Ingredients
- Chicken Maryland pieces
- Pumpkin diced
- Mushrooms sliced
- Parsley chopped
- Spring onion sliced
- Chilli diced
- Pepper
- Cream
- Butter
- White wine
Instructions
- Place the chicken, pumpkin and mushrooms into an oven safe frying pan
- Gently sautée for a few minutes
- Place into a preheated oven (150 °C) for one hour
- Rest the chicken for at least 30 minutes
- Remove the pumpkin and plate with the salad
- Heat up the chicken juices and mushrooms and reduce until the chicken juices have evaporated
- Deglase with some white wine and reduce
- Add some cream to thicken
- Add some butter to glisten
- Plate up
- Capture an image (or two) using Nikon D5300 and Tamron 90 mm MACRO at 1/15 second, f/8 and ISO 100 using CamRanger remote control for better focus control
- Eat the food
- Wash the dishes
- Write the recipe and blog
