Panko and fried shallot crumbed beef burger with pearl barley couscous

Last week I was watching my favourite YouTube cook, viz., Hilah Johnson from Hilah Cooking. Her most recent recipe was panko and fried onion crumbed pork chops. This inspired me to make panko and fried shallot crumbed beef burger with pearl barley couscous.

I mean what’s not to like about Hilah. She’s Texan with a cool accent and she also spent some time living in New Zealand and Australia.

So what do you need to make these crumbed beef burgers

  • Beef burgers from Coles (or wherever you shop). I couldn’t be bothered making them from scratch. You can do that if you like.
  • Frozen White Wings pearl barley couscous
  • Plain flour
  • Mixed dried herbs
  • Smoked paprika
  • Egg
  • Dijon mustard
  • Panko bread crumbs
  • Fried shallots

How do you put it all together?

  1. In a small food processor crumb the fried shallots
  2. Combine the panko bread crumbs and put into a bowl
  3. Crack an egg and whisk in some Dijon mustard
  4. Add some plain flour to a bowl and then add some mixed dried herbs and smoked paprika (the proportions are up to you)
  5. Coat the beef burgers in the flour and then the egg wash and then finally the crumb mix
  6. Gently shallow fry in grapeseed oil the crumbed beef burgers for about 3 minutes each side and place on absorbent paper to drain the burger of excess oil
  7. Microwave the pearl barley couscous for 150 seconds

How do you prepare the dish for a photograph?

  1. Spread the pearl barley couscous onto a plate
  2. Place the crumbed beef burger on top
  3. Add some barbecue sauce and Dijon mustard to taste
  4. Shoot a photograph
  5. Eat the meal
  6. Wash the dishes
  7. Write the recipe
  8. Blog and vlog (verbs)

How did it taste?

Bloody superb. The crumb was really nice. Two thumbs up Hilah 👍👍  The crumbed beef burger was really good.

Schnitz at Woden What I ate today

I went out to lunch today with a few friends to Schnitz at Woden. Schnitz is a franchise from Melbourne and it specialises in chicken, beef and fish schnitzel. I wasn’t aware that you could get beef and fish schnitzel. I thought you could get chicken and veal schnitzel. Otherwise it’s just crumbed fish and steak. They also do crumb-free schnitzel which IMHO is just wrong.

Anyway I started the day with some avocado and pickled ginger on toasted Rye.

For lunch I had a chicken schnitzel with chips and sweet chilli mayonnaise. It was okay. The schnitzel was on the small side but the chips were very tasty.

For dinner I went with a light sandwich. A beef burger with avocado and pickled ginger.

Food for footy finals

Last night I went out with some friends from the hospital. We went to Chong Co Thai in Kingston. I enjoyed a lamb shank massaman curry and some coconut rice. I woke up feeling a little nauseated, tired and experiencing blurred vision. Not a good way to begin a weekend of footy finals.

Tonight my two favourite teams in the National Rugby League are playing in the first round of the footy finals series. The Brisbane Broncos are playing the North Queensland Cowboys. I’m hoping the Broncos defeat the Cowboys. Both teams get another chance and ultimately I’d love if they both met again in the grand final. Can you imagine a Broncos Cowboys grand final at Lang Park? Of course the NRL wouldn’t allow it. It’s as likely as letting the football star rather than the crappy entertainment Channel Nine insists on torturing us with. Why do we need Jimmy Barnes and Cold Chisel screaming at us? I’d prefer a school choir to sing the national anthem and then kick off of the game. Worse still Channel Nine will insist on having Phil Gould in the commentary box. The focus should be the footy not the entertainment all in the name of television ratings. So much time is wasted when all the fans and viewers want is to watch the footy.

So let’s get back to some food and photography.

I’m thrilled that Jolene Blalock favourited and retweeted a tweet of mine. Jolene played T’Pol on Star Trek Enterprise. T’Pol was one of my favourite characters on Enterprise. She really developed as a character throughout the four short seasons. I wish there had been another season of Enterprise.

As I left the hospital yesterday I saw this sign on a window. I shared it on Instagram and Facebook and pondered whether this could be a new ice cream store. I’m expecting it will be used to store semen, embryos and for tissue banking.

So it was a great game tonight. The best team won. The Broncos defeated the Cowboys.

Caramel latte sundae

Regular readers know of my love of all things from Ricardo’s Cafe in Jamison. The cake display has recently changed over and I have been drooling over the caramel latte sundae. You can see a nice photograph of the old line up on their Facebook page.

Ricardo’s cafe has recently been written up in The Canberra Times’ Good Food Guide and there was news that a second restaurant will be opening in Woden near to where I work. I’ve been joking with friends that my Lowes discount card will be smashed soon as I buy new larger trousers and a new belt.

I finished work a little early today and drove to Ricardo’s Cafe and picked up a caramel latte sundae to enjoy as dessert tonight.

Before I get to dessert though I needed to make dinner. For that I made a simple beef and bacon burger with some avocado.

I smashed the avocado first and added lots of chili flakes to add a little spice! To try to reduce the fat levels I didn’t use butter this time and no cream cheese. It still tasted pretty amazing.


 

So after enjoying the burger I pulled out the caramel latte sundae and tried to eat it slowly and savour it. I used a teaspoon which I always find better for desserts. The popcorn was pretty nice. It was still crunchy and had a great caramel flavour. Inside the dessert was smooth, sweet and had a lovely caramel surprise inside.

Simple nude burger with #PowerofMushrooms

I still have mushrooms and after a long day it was a simple nude burger tonight

I woke up feeling a bit crook this morning and I had a long day at work today. The easy thing to do was buy some regular beef mince from Coles for $3.

Recipe Type: A simple meal with mince when you don’t have a lot of time or motivation

If you lack a little motivation and you don’t have much time, mince is your friend
Ingredients
  • Regular beef mince
  • Dried mixed herbs
  • Paprika
  • Black pepper
  • Chilli flakes
  • Salt
  • Egg
  • Grated tasty cheese
  • Worcestershire sauce
  • Mushrooms
  • Butter
  • Cream
  • White wine
  • Cos lettuce
  • Avocado
Instructions
  1. In a bowl add the mince, beaten egg, dried mixed herbs, chilli flakes, paprika, pepper, salt and grated cheese
  2. Mix it all up and then add the Worcestershire sauce
  3. Let the mince rest for about 15 mince
  4. In a hot pan cook the burger pattie for 7 minutes each side
  5. In the same pan fry off the mushrooms
  6. After the second 7 minutes let the burger pattie rest for another 7 minutes
  7. Place cos lettuce on a nicely coloured plate
  8. In the frying pan deglase the good bits with some white wine
  9. Add a little cream and butter to make a nice rich sauce
  10. Put the burger on the lettuce
  11. Top the burger with the mushrooms
  12. Spoon the sauce over the mushrooms
  13. Slice the avocado and put next to the burger
  14. Capture an image
  15. Eat the meal
  16. Wash the dishes
  17. Watch MasterChef Australia
  18. Write the recipe and blog it
  19. Have a good night
 
Notes
I hope you enjoy this. It should be tender and moist inside the burger pattie. The mushrooms and sauce should really make it creamy along with the avocado. With the pepper and chilli flakes your mouth should sing 🙂
