I was feeling quite low today and thought preparing something complicated would take my mind off things.
Tonight I had a rack of pork cutlets. I thought I would serve the pork loin with a pumpkin risotto and broccoli. I’ll keep the pork fillet and bones for a slow cook type meal later in the week.
I made my first risotto last night so this was a bit of an experimental extension. And no, I did not eat the fat or the crackling. I need to stop eating too much fat.
