Sous vide duck breast with mashed celeriac and quinoa
Yes, you read that correctly. I’m mixing quinoa and mashed celeriac together. After the success of serving quinoa and mashed pumpkin separately last weekend, I thought, why not see how quinoa tastes and feels in a starchy mash.
The other day I was in a text message conversation with Dad. He and Mum eat pretty well, and by that I mean they eat lots of fruit and vegetables and their meals are not dominated by animal protein like that of their sons.
Dad mentioned he ate a couple of pieces of KFC hot and spicy chicken and said he enjoyed it. It had been some years since he had enjoyed any KFC at all.
Celeriac mash is a new love of mine. I’ve been making it a little recently to enjoy with steak. I was on Twitter earlier today and my friend, Zena, mentioned she was keen to try mac and cheese made with brie, parmesan, and blue cheeses. Given I’m low carb living at the moment, I thought I’d try three cheeses with my Vegemite celeriac mash. I call it my Easter tri-cheeses Vegemite celeriac mash.
I still want to make a mac and cheese with brie. Just alone to see what it tastes like. That and maybe blue cheese and parmesan mixed with it next time.

Its botanical name is Apium graveolens variety rapaceum while that of celery is Apium graveolens variety graveolens. So celeriac and celery are the same species of plant, celeriac is cultivated for the edible root and celery for the stalks.

Last week I made a dynamite spicy pumpkin soup. At the time I was also thinking of making cauliflower soup and adding some jalapeño peppers to spice it up a bit. Of course I’d also add my secret ingredient, viz., SPAM®
Tonight I put together a cauliflower soup with a twist. In addition to the jalapeño pepper and SPAM® I added some celeriac. It was delicious.
Delicious cauliflower soup

Ingredients
Cauliflower
Celeriac
SPAM®
Jalapeño pepper
Lime juice
Cream
Fried shallots
White wine
Grapeseed oil
Instructions
Add about 2 tablespoons of grapeseed oil to the saucepan and heat
Dice the SPAM®
Dice the cauliflower and celeriac
Slice the jalapeño pepper
Fry off the SPAM® until it has taken on some colour and is sticking to the bottom of the saucepan
Add the jalapeño pepper slices and fry until softened
Add the celeriac and fry off until softened
Add the cauliflower
Add a splash of white wine and some water to just cover the cauliflower
Bring to a slow simmer and cook for 20 minutes
When the cauliflower is soft blend with a stick blender
Add some cream and blend until smooth
Serve in a bowl and garnish with fried shallots
Keep the leftover soup in another bowl, cover and freeze for another time
