Spam and chicken again!

Even though cheesy chicken wings make great footy food, there isn’t any football worth watching tonight.

So the manflu continues. Last night was awful, I coughed all night. This morning as I lumbered out of bed my throat felt like it was on fire, my neck was stiff from a really poor ‘sleeping’ position but my phlegm wasn’t as tenacious as it was yesterday. Perhaps the spam helped after all.

Some friends on social media have suggested a chicken broth may help. I’m too lazy to make chicken soup. As I was shopping this morning I thought it would be nice to use up the remaining spam and have some chicken wings.

What you need to make this

  • About 500 grams of chicken wings
  • Olive oil
  • Some diced spam
  • Grated Coon cheese
  • Slices of red, green and yellow capsicum
  • Wedges of potato
  • Slices of onion
  • Some chopped jalapeño pepper and red chilli with spring onions and chives
  • Panko crumbs

How do you put it all together?

  1. In a large bowl add the chicken wings and everything except the chopped jalapeño pepper and red chilli with spring onions and chives
  2. Mix everything well and then lay it out on some baking paper in a roasting tray
  3. Cook in an oven at 150 °C for 1 hour
  4. Remove from the oven and garnish with the chopped jalapeño pepper and red chilli with spring onions and chives
  5. Set aside some cheesy chicken wings and spam for lunches

Prepare it for a photograph

  1. Plate up
  2. Shoot a photograph
  3. Eat the meal of cheesy chicken wings and spam
  4. Wash the dishes
  5. Make a nice picture using Adobe Lightroom and Adobe Photoshop

How did the cheesy chicken wings taste?

Great. These cheesy chicken wings would be great to eat while watching the footy.

By the way, I was so happy that Fiji won the rugby 7s at the Rio Olympic Games. There is no more deserving team. I can just imagine how their government will react. Hopefully the team will receive a ticker tape welcome on their return.

Baked fried pan grilled jerk chicken wings in buffalo barbecue sauce

Mmm…chicken wings in America are really good.

I’m in Washington, D.C. for work at the moment. I was recently chatting with an American friend on Twitter about barbecue food and she mentioned chicken wings. I love chicken wings. As much as I am a ‘thigh man’, chicken wings are fantastic. The meat is always tender and sweet and it’s relatively easy to get the skin to be nice and crispy.

I thought I would take the opportunity while I am in the USA to try some barbecue chicken wings.

I ordered some from the room service menu. They arrived hot and smelled really good.

Unfortunately, the room lighting was poor. I had all the incandescent lamps on and in a dark room the yellow cast was very pronounced.

The wings were good. The skin was crispy, salty and sweet with a little tang. The meat was moist, tender and soft enough to be sucked off the bone. The serving size was also generous. I forgot to add the blue cheese sauce into the photograph. My friend asked if I had some. Indeed I did.

I’d happily eat these again.

I also ate a nice ribeye steak with the bone in last night.

I went to another place with colleagues and enjoyed a nice pork chop with Brussels sprouts cooked with bacon and a side of Mac and cheese. That was really nice.

I spent a little time at the Capitol building and got to sit in and watch a couple of senators make speeches on national security.

Footy food for state of origin 2

Tonight’s match was the most important game of rugby league this year. Queensland needed to defeat NSW to ensure not just a series win but a set up for a clean sweep. NSW was desperate to win to set up a decider at Lang Park.

Every state of origin match like a grand final needs footy food. In fact state of origin is more important than a grand final or an international test match so the food needs to be super tasty and super simple.

I started the day with a small simple breakfast with a big dinner in mind.

For lunch I had leftover roast lamb with some cheese and leaves.

For my main meal I bought 500 grams of chicken wings. I specified the forearm equivalent, i.e., the radius and ulna and not the humerus. I reckon this has the most tender meat and when it’s cooked well it falls from the bones easily. I coated the chicken with oil and added some chicken salt, pepper and chili flakes. I put them into an oven at 150 °C for 60 minutes. I also added some Brussels sprouts and some little nubs of beef mince. To this I added some slivered almonds and pine nuts and then added a layer of grated cheese. All this is similar to what I had on the night of game 1. That night I had panko coated wings. Now that I’m doing a bit of low carb eating I’ve avoided the panko crumbs.

So this is the footy food I had tonight for game 2 of the 2015 state of origin series.

In the end New South Wales defeated Queensland 26:18. It was a bit of a lacklustre game tonight. Queensland’s defence wasn’t as good as it has been or should have been. Bring on game 3. A decider at Lang Park the home of Queensland rugby league.

The best low carb chicken wings recipe

I reckon this is the best way to cook chicken wings. It’s super easy and relatively quick allowing you time while the chicken in in the oven to attend to other important things in life like take rubbish (garbage) to the bin or sitting down and having a drink and relaxing while the news is on TV.

Like with most cooking, low and slow is best. Unlike a weekend, on a weekday after work you can’t afford to do real slow cooking unless you use a slow cooker and have it on at home in the kitchen while you’re at work constantly worrying if your rented apartment is on fire and there are firefighters picking through the debris.

Ingredients
  • Chicken wings [try to get the midsection winglets, I reckon it’s the most tender part and has the sweetest flesh]
  • Brussels sprouts [I pick five to avoid a carbohydrate overload from these delicious little green balls]
  • Pepper
  • Chili flakes
  • Grape seed oil
  • Fennel
  • Parsley
  • Mint
  • Radish
  • Red onion
  • Lime juice
  • Mayonnaise
Instructions
  1. In the plastic bag the chicken came in add the Brussels sprouts and a good plash of oil
  2. Rub the oil all over the chicken and Brussels sprouts through the bag
  3. Add in some salt and pepper [you can use chicken salt if you like too]
  4. Empty the bag onto a baking tray lined with baking paper [for ease of cleaning]
  5. Put the baking tray into an oven at 150 °C for 1 hour [in my mind this is low and slow, it ensures well cooked (safe) and tender chicken]
  6. At the end of the hour remove the chicken and Brussels sprouts from the oven and allow the roasted meat and vegetable to rest for at least 10 minutes
  7. While the roasted meat and vegetable are resting prepare a small fennel salad with fennel, parsley, mint, radish, red onion, lime juice and a teaspoon of full fat mayonnaise [not that full fat mayonnaise is low carb while light mayonnaise replaces the fat with sugar]
  8. Plate up on a plate
  9. Shoot a photograph
  10. Eat the meal
  11. Wash the dishes
  12. Write the recipe
  13. Blog (verb)

Tips and tricks

  • If you’re interested in keeping to a low carb way of eating, avoid ‘light’ or ‘lite’ foods. Fats tend to be replaced with sugars.
  • Buy chicken winglets in a plastic bag rather than by a cling wrapped plastic tray. The plastic bag the chicken comes in helps you coat the chicken with oil plus condiments. Once you’re at a stage when you can add some carbs, the plastic bag is a great way to add bread crumbs (preferably panko crumbs) or flour.
  • Coating the Brussels sprouts in a little oil and roasting reduces the bitter taste some people complain of with Brussels sprouts

So for dinner I started with meat chips. These are slices of salami cooked in a hot oven and allowed to cool to a crunchy chip. I served these with cream cheese with chives and spring onion. That makes up this evening’s vegetables

So this is the footy food I had tonight for game 1 of the 2015 state of origin series.

I ended up finishing it before the game started. Kick off is meant to be at 8 pm but channel 9 never seems to get it right. The pre-game mucking around with singing songs no one understands and then listening to someone butcher our national anthem pushed the kick off to about 8.20 pm. I still reckon a sure winner for the national anthem is a school choir. What a thrill would it be for them to sing the national anthem for the greatest sporting event that happens three times a year for the greatest game of all.

I kept sane by listening to the game on the ABC Radio app rather than listen to the Channel 9 broadcast. There was about a 30 second delay on the telecast but it meant I didn’t have to listen to Phil Gould and Andrew Johns.

In the end Queensland defeated New South Wales 11:10. It was a tough tight game. Bring on game 2.
