7 steps to make delicious chicken thighs

While my favourite cut of chicken is the Maryland, when that piece is not available the next best thing is a thigh with the skin still attached. For reasons that escape me, Coles has started calling chicken thighs, chicken cutlets. Bizarre if you ask me.

In terms of basic cooking, you can’t beat a simple oven roast at 180 °C for between 50 and 60 minutes depending on size, number and how closely spaced the thighs are in your baking tray.

My preferred method though for cooking chicken thighs in the oven is to ensure a crunchy skin and to have something with some extra crunch to accompany the chicken meat.

For me the bestest tastiest chicken thighs are those cooked with cheese and on a piece of bread. If done well you end up with a really crispy cheesy skin and a nice tasting piece of toast.

Step 1

You can use any type of bread really although I probably wouldn’t use a sweet bread like raisin toast. I also wouldn’t use a flat bread or unleavened bread. In fact if you have a stale loaf and you can cut it yourself a thicker than normal slice is best.

There’s no need for butter because the fat and juices from the chicken will be absorbed by the bread and the melting cheese will give it a richness you can’t beat.

I use Coon grated cheese on the bread and then lay the chicken on top.

On top of the chicken I use slices of cheese. I recommend a cheese that melts nicely. I like Swiss cheese and Colby cheese. Gruyere would also be good.

On the cheese I like some freshly cracked black pepper and some chilli flakes and a little sea salt.

If you do this right you end up with tender moist chicken flesh, crispy skin and some lovely toast which will hold all manner of vegetables accompaniments.

Cheesy pulled pork toasted sambo

What could be better than cheesy pulled pork on a sandwich?

Check out my cheesy pulled pork sambo. This is a fantastic way to finish off some leftover pulled pork. Next time I may do it with macaroni cheese.

I tried to use cheeses that I knew would melt well. I went with Swiss and Colby cheeses. Because I have to use a communal toasted sandwich maker at work, I always wrap my sambos in baking paper before packing them in a lunch box. Today I had a little cheese and olive oil on the outer surfaces of the pumpkin bread to make it extra crunchy.

This was delicious and four slices of cheese had it coming out the sides getting crispy on the outside. The baking paper kept it all together and avoided any mess so the next person won’t get a contaminated sandwich.

Do you like crunchy rice?

You know when you fry some rice and you take it a little too far and the rice gets a little crunchy? I love that. I love the texture. I love the mouthfeel. It’s great when the rice is also with a nice meal full of nice flavours and other textures.

Last night I made some quinoa rice to have with my baked salmon and sugar snap peas.

I used the leftover quinoa rice tonight when I baked my grilled cheese Chicken Maryland pieces. I basically spread the rice onto some baking paper on a baking tray and covered the rice with the chicken pieces. On top of the chicken pieces I laid a couple of slices of Colby cheese. I then baked this in an oven at 150 °C for 1 hour. At the end of the cooking I let the chicken rest for 20 minutes. Cooking the chicken on the quinoa rice meant the rice absorbed all the fatty juices from the chicken.

The result was a nice layer of crunchy rice with crispy cheesy skinned Chicken Maryland. I also served the meal with a cob of sweetcorn which I baked in the oven wrapped in some aluminum foil.

Ingredients
  • Chicken Maryland
  • Colby cheese slices
  • Beetroot coleslaw
  • Red quinoa
  • White quinoa
  • Chives
  • Parsley
Instructions
  1. In a pyrex bowl add 1 cm of water and then add some red and white quinoa
  2. Lay a rack over the water to support the chicken
  3. Put the chicken on the rack and season with salt and pepper
  4. Add a couple of Colby cheese slices on the chicken and add some cracked black pepper
  5. Cook in an oven at 150 °C for 1 hour
  6. Allow the chicken to rest for 20 minutes and prepare the salad
  7. Add the quinoa and some of the chicken fat to the salad and mix
  8. Plate up and shoot a photograph
  9. Eat the meal
  10. Write the recipe
  11. Wash the dishes

How to make a bacon, spam and vegetable curry pie

Mmm…curry pie 

So it’s the end of the work week. well sort of, I think I’ll be going into the office over the weekend but that’s another story. I hadn’t intended on cooking tonight but after pulling some vegetables out I thought why not make a pie.

Ingredients
  • Butter
  • Eggs
  • Cream
  • Sweet potato
  • Peas
  • Corn
  • Carrot
  • Streaky bacon
  • Spam

  • Dessicated coconut
  • Curry powder
  • Tasty Coon cheese
  • Colby cheese
Instructions
  1. Shred the streaky bacon and dice the spam then bake in a hot oven for 15 minutes
  2. In a bowl add sweet potato peeled with a peeler, peas, corn kernels, diced carrot and diced tasty Coon cheese
  3. In another bowl beat some eggs and cream
  4. When the bacon and spam are ready add it to the vegetables and mixed through with some curry powder
  5. Add the vegetables to a buttered pyrex dish
  6. Pour over the eggs and cream
  7. Cover with slices of Colby cheese
  8. Put into an oven at 200 °C for 40 minutes
  9. Shoot photographs
  10. Eat it all up
  11. Wash the dishes

Okay so I probably shouldn’t have eaten all of the curry pie but gee it tasted good. I loved the crusty cheesy top.
