Crispy crackling pork belly

On Wednesday night I attended a 3 Seeds Cooking School class and learnt how to get the pork belly crackling really crispy. I thought for tonight’s dinner I would try to replicate the dish. I spent most of the day thinking about how I was going to cook dinner. All I could think of was crispy crackling.

To start the day though I enjoyed an egg on an English muffin along with some Buderim Ginger Factory ginger marmalade. After the grocery shopping I went for a walk around Lake Ginninderra and enjoyed some coffee and cake as well as seeing a pelican.

The caramel popcorn cupcake was really nice. The mocha also hit the spot nicely.

It’s been awhile since I’ve seen a pelican on Lake Ginninderra.


 

For lunch I tried to be simple and had some smoked salmon on a plain bagel.

  • Sweet potato

  • Sweet corn
Instructions
  1. Wrap the sweet corn in foil after wetting it under running water
  2. Roughly chop or slice all the vegetables and fruit and lay in the bottom of a baking tray
  3. Dry the skin of the pork belly
  4. Score the rind with a sharp knife penetrating the skin and fat
  5. Rub in oil and salt flakes until it feels soapy and then rub some more
  6. Lay the pork belly on the mirepoix
  7. Surround the pork meat with scrunched up baking paper to protect it while cooking
  8. Place the corn and baking tray in a hot oven 220 °C (fan forced) for 30 minutes
  9. Turn the oven down to 150 °C for 30 minutes
  10. Remove everything out of the oven and allow everything to rest
  11. Cut the pork belly into rectangular prisms
  12. Plate up
  13. Shoot a photograph
  14. Eat the meal
  15. Wash the dishes
  16. Write the recipe

What I ate today | RSPCA cupcakes

I’m not sure I should have eaten anything today after my epic ekka weekend. I was hoping to focus on healthful food but then a friend mentioned an area at work was selling RSPCA cupcakes in support of the Royal Society for the Prevention of Cruelty to Animals. Naturally I succumbed. Cruelty to animals is abhorrent, that said, when appropriate and when the ends justifies the means, I am a supporter of the selective use of animals for testing countermeasures developed and manufactured to protect humans. There are some diseases that are now so rare but so important the only way to test new products for diagnosis and treatment is by using animals.

For breakfast this morning I had some smoked salmon and an egg on an English muffin.

This afternoon I experienced sudden onset vertigo and headache. I feel like I’m developing an infection of some sort. Because I’m not feeling well and to maintain the salmon theme I cooked a fillet of salmon in paper along with a cob of sweet corn.

Ingredients
  • Salmon fillet with skin on
  • Lemon
  • Sweet corn
Instructions
  1. Wet a cob of corn under some running water
  2. Wrap in aluminium foil
  3. Put into an oven at 200 °C for 1 hour
  4. Rub some olive oil on a fillet of salmon
  5. Place on some baking paper
  6. Add some lemon zest
  7. Add a wedge of lemon
  8. Seal in the paper (I use staples)
  9. When the corn gets to the 40 minute mark put the salmon in the oven for 20 minutes
  10. At the 1 hour mark remove the salmon and corn and allow the food to rest for 5 minutes
  11. Plate up and shoot a photograph
  12. Eat the meal
  13. Wash the dishes
  14. Write the recipe
  15. Blog (verb)

What I ate today

Well yesterday was huge. I got to spend the day in the fresh air (please note yesterday’s apparent temperature was close to subzero degrees Celsius all day) learning from AFP experts about explosives and bombs.

This morning I enjoyed a whole grain English muffin. One one half I had some Oxford marmalade and on the other half I had some Buderim Ginger Factory ginger, lemon and lime marmalade. For lunch I had leftover organic red rice pork congee with chunks of ham hock on rye bread as a toasted sandwich. For dinner I had a couple of BIRDS EYE salmon patties with some quinoa rice and kale.

Tassal Premium Tasmanian Lemon and Cracked Pepper Salmon Burgers

In my endeavour to explore low saturated fat options that are convenient and delicious I thought I would try these Tassal Premium salmon burgers.

My first impression needs to be considered in the context that I burnt my palate and tongue on Sunday morning and my tongue has blistered.

I also had a day away and eating meeting food and some confectionary I bought for the flight back to Canberra.

The perfect meal after a 4 am wake up and interstate meeting is a sandwich. I made a salmon, lettuce and tomato sandwich using an English muffin as the bread.

I cooked it by pan frying in some grapeseed oil for four minutes each side on moderate heat.

Conscious of my tongue and palate I made sure I waited long enough before starting to eat it.

So how did I find the Tassal Premium salmon burger? It was okay. It wasn’t good and it wasn’t bad. For convenience the burgers are fine. For taste not so great. That said, I will try more of them when my tongue has healed. For now though I won’t be highly recommending Tassal Premium salmon burgers unless you want something quick and easy.
