In my endeavour to explore low saturated fat options that are convenient and delicious I thought I would try these Tassal Premium salmon burgers.

My first impression needs to be considered in the context that I burnt my palate and tongue on Sunday morning and my tongue has blistered.

I also had a day away and eating meeting food and some confectionary I bought for the flight back to Canberra.

The perfect meal after a 4 am wake up and interstate meeting is a sandwich. I made a salmon, lettuce and tomato sandwich using an English muffin as the bread.

I cooked it by pan frying in some grapeseed oil for four minutes each side on moderate heat.

Conscious of my tongue and palate I made sure I waited long enough before starting to eat it.

So how did I find the Tassal Premium salmon burger? It was okay. It wasn’t good and it wasn’t bad. For convenience the burgers are fine. For taste not so great. That said, I will try more of them when my tongue has healed. For now though I won’t be highly recommending Tassal Premium salmon burgers unless you want something quick and easy.

Baked chicken thigh with chia rice and avocado in a lettuce wrap

This whole low fat approach to eating is pretty good once I get the hang of working out what foods are low in saturated fats. I have to admit to some compromises, for example, low fat chicken usually mean chicken breast, but for me, I like baked chicken thigh with the fat trimmed.

Ingredients
  • Skinless chicken thigh
  • Avocado
  • Rice
  • Chia
  • Honey
  • Soy
  • Lime
  • Cos lettuce leaves
  • Chili flakes
Instructions
  1. In some aluminium foil place a skinless chicken thigh plus lime wedges and add some honey and soy sauce.
  2. Wrap up the chicken and bake in a benchtop oven at 200 °C for 60 minutes.
  3. Microwave the rice and chia.
  4. Mash an avocado with some extra virgin olive oil.
  5. Mix the avocado and rice and add some chili flakes.
  6. When the chicken is cooked let it rest for 10 minutes and then shred.
  7. Add the shredded chicken thigh meat to the rice and avocado mash.
  8. Plate up and shoot a photograph.
  9. Eat the meal as a wrap.
  10. Wash the dishes.
  11. Write the recipe.
  12. Blog (verb).

BLAT Bacon lettuce avocado tomato sandwich

This week Liz from Bizzy Lizzy’s Good Things wrote about an ultimate BLT (bacon lettuce tomato) sandwich. It inspired my Saturday lunch. 

While I was thinking of replicating Liz’s version I had some left over ciabatta in the freezer as well as an avocado that needed eating. In my mind there is no point wasting good food.

Ingredients
  • Ciabatta bread
  • Vine ripened tomato
  • Streaky bacon
  • Cos lettuce
  • Avocado
  • Lemon
  • Grapeseed oil
  • Pepper
  • Butter
Instructions
  1. Add a little butter to the bread and grill butter side down in a hot pan until golden brown
  2. Cook the streaky bacon in a bench top oven at 200 °C for 15 minutes
  3. Make an avocado spread with avocado, grapeseed oil, lemon juice and some pepper
  4. Slice the tomato, drain on some kitchen towel and add pepper
  5. Cut the cos lettuce to fit the bread
  6. Apply the avocado spread to the bottom piece of bread
  7. Lay on the lettuce
  8. Lay on the streaky bacon
  9. Lay on the tomato
  10. Shoot a photograph with the top piece of bread artistically positioned over a corner of the sandwich
  11. Shoot another photograph with the rose from my garden
  12. Put some avocado spread on the top piece of bread and put the sandwich together
  13. Cut the sandwich on an angle
  14. Shoot a close up photograph showing all the internal goodness
  15. Eat the sandwich
  16. Wash the dishes
  17. Write the recipe
  18. Blog (verb)
