Chicken rissoles | Elite Meats @2CC | #bestblogs13 | The Castle


As a kid growing up in Brisbane one of Mum’s regular dishes was salmon rissoles. If you’re not from Australia or New Zealand you may not be familiar with what a rissole is. The wikipedia entry is pretty reasonable. I know for Mum’s salmon rissoles the main ingredients were tinned pink salmon and mashed potato, as well as bread crumbs and lots of finely cut vegetables. One of my favourite Australian movies is “The Castle” which contains so much that is typically Australian. As a result when the producers tried to adapt it for an American audience various words had to be changed, i.e., meat loaf instead of rissole (alternative versions).

Anyway, I’m quite fond of rissoles so yesterday when Bron pointed out rissoles in the Elite Meats display I jumped at the chance to buy some. When speaking with one of the butchers he said there were made in-house and like everything in the shop all the produce is organic and free-range. The rissoles were made from chicken mince and cheese and vegetables and then coated in fresh bread crumbs. All that was needed was some shaping and then a shallow pan fry.

The rissoles tasted pretty good. I’d happily recommend them to anyone living in Canberra and is venturing to Kippax Fair in Holt.

Pacific Fair


Today is 2013/01/01 (YYYY/MM/DD this is the way I shorthand dates), the first day of 2013. It was also the last day we spent on the Gold Coast. I promised Miss11 and Miss15 a shopping trip in the tourist shopping centre, viz., Pacific Fair.

To start though we needed breakfast. We walked across the road to Bistro Blanc on Surf Parade on Broadbeach.

Miss11 and Miss15 both had bacon and egg on a muffin with a hash brown.

Okay Pacific Fair with Miss11 and Miss15 meant lots and lots and lots of dress and shoe shops. It also meant looking at some novelties.

I haven’t posted pictures of everything they looked at. I am fortunate that my daughters like looking and are careful when choosing to spend money, even my money. In the end everyone came away happy.

For morning tea, you guessed it, it had to be another vanilla slice.

This one I shared with Miss15 who reminded me that when we lived in Darwin every Saturday or Sunday morning I’d walk to the local pastry shop and buy them caramel tartlets and buy myself a vanilla slice or bee sting.

After more than half a day of shopping we needed some food before the drive back to Brisbane. We opted for a mall Chinese takeaway. This was a $10 plate of self service. It was awful. Truly disgusting. The worst I’ve ever had. The place is called Cathay Oriental at Pacific Fair shopping centre. Don’t do it is my advice. McDonald’s or KFC would be better.

Shopping is hard work. We all shared this. Worst mall Chinese food ever.

As we were driving home Mum and Dad were cooking dinner. Basically it was wonton soup without the wonton wrappers. Instead it was served with noodles.

For my last night in Brisbane with my parents and two of my daughters, Mum made her “world famous” pavlova. One of the greatest Australian inventions ever (I write this to deliberately stir up my friends and family from New Zealand*).

Okay, tomorrow, I return to Canberra. I have had a great little break in Brisbane and the Gold Coast.

*For all I care, New Zealand can keep Russel Crowe and Richard Wilkins as their own. Pavlova is ALL AUSTRALIAN.

ANZAC Day post

I will not forget.

Today I wanted to do something that involved a product of New Zealand. However, there has recently been some controversy in the news because a journalist from New Zealand called Australian soldiers lazy bludgers (http://www.stuff.co.nz/national/last-post-first-light/6792303/No-apology-over-dig-at-Aussie-soldiers). That gave me a reason to pause and reconsider. Rather than something obvious like lamb I chose tinned beef. Bully Beef (bully beef; from the French bouilli “boiled”) is the name of a tinned meat that soldiers ate in the field. Soldiers’ only food was whatever they had carried ashore in their packs. Apparently for several days on end all they had to eat was a little bully beef, some tea, sugar and a few very hard biscuits from the ship. Now who can forget some of my special corned beef dishes? My Man versus Food version and my previous sausage roll.

For lunch I made myself a sausage roll with the corned beef. I added a little flavour with GOA beef curry powder and an onion. I also added a little Worcestershire sauce (http://en.wikipedia.org/wiki/Worcestershire_sauce).

One of the other flavourings for today is rosemary. I didn’t realise until recently what the significance of rosemary is for ANZAC day. A sprig of rosemary is worn on ANZAC day. It is an emblem of both fidelity and remembrance in literature and folklore. It is found growing wild on the Gallipoli peninsula. Today I acquired my rosemary outside of Swimming Australia on Beissel Street in Belconnen (http://en.wikipedia.org/wiki/Swimming_Australia). This is particularly apt given it’s an Olympic year and my favourite sport is swimming.

Dinner was a surprise and by surprise I just put stuff into a saucepan and hoped for the best. It was surprisingly good. I did the usual sauteing of onions, garlic and ginger. To this I added some diced tomatoes and then diced chicken thigh meat. After everything was soft I added Mudgeeraba Parsee Chicken and Potato curry powder. I added some sliced potato and sweet potato and then put the lid on the saucepan and kept it simmering for three hours. With half an hour to go I added some beans, corn and mushrooms. I served it with noodles.

Yep @PeskyPippi and @TheBernieBrand I got whipped cream


Not long ago @SarcasmFairy introduced us to @TheBernieBrand who introduced us to @PeskyPippi. One of the first things mentioned was whipped cream in a can and sending an image of a nozzle in one’s mouth inhaling whipped cream. I’ve never touched a can let alone had whipped cream from a can.

Yesterday while at Costco we saw, snaffled and bought a catering version of cream in a can from New Zealand. I’ve commented previously on fine produce from New Zealand in a post that is not meant to be mentioned in polite company.

So if you visit PeskyPippi’s website and go through the recent posts you’ll come across Got Whipped Cream? I Dare Ya On this you’ll come across a variety of tweeps who have had a nozzle in their mouth and swallowed.

My own Man v Food challenge or something I really like from New Zealand


Monday nights mean Man v Food on 7mate. I’ve only just discovered this show and some of my twitter friends watch and tweet along the way.

Tonight I went into overboard indulgence on ghastly food (well according to those close to me). The dish was centred on a 326 g can of New Zealand corned beef. This is premium quality meat and I am so happy to have found it at CostCo.

I used a 200 × 160 mm Pyrex dish and laid out two pieces of bread on the base to absorb all the oily flavour. I sauteed a finely chopped medium onion and three cloves of garlic in a non-stick wok. Once they softened I added a little white wine and the 326 g of corned beef. After the beef softened I added Clive of India curry powder, mixed dried herbs and some Worcestershire sauce. To this I added some coconut cream for flavour.

The topping consisted of two grated potatoes which I ‘dried’ with a salad spinner. I kept the potato water to thicken the beef. To the potato I added 100 g of Parmesan cheese plus a few crushed garlic cloves and an egg to bind it. I laid the beef on the bread and spread it out. I then added the potato and cheese topping. I grated a little more cheese on top and then popped into a moderate oven for 45 minutes.

When it came out it was nicely browned and cooked through.

The bread did the job and soaked up all the oily goodness and a lot of flavour.

So this is what my plate looked like. What you didn’t see is that I polished off the entire dish in true Man v Food style. It was awesome. I fear every pore will emit garlic tomorrow. I will stay pretty much to myself except for a big meeting in the afternoon. Oops. :-)

Tonight I had a lamb fore quarter chop meal planned (again). Yeah, I know I do this regularly. It’s a great meal though when I want to watch television. This afternoon I watched Casey Stoner win the MotoGP at Phillip Island and the championship. Then I enjoyed watching the Kangaroos (Australia) play against the Kiwis (New Zealand) in today’s rugby league test match in Newcastle. It was good to watch Australia play well and win the game.
