Panko crusted salmon

Panko crusted anything is good. I’ve done it on salmon before but as a cheat using olive oil as an adherent. Tonight, I used the old fashioned plain flour and egg method to crumb (or bread as American cooks seem to say) the salmon.

Ingredients
  • 1 piece Salmon (tail end)
  • ½ cup Plain flour
  • 1 piece Egg
  • 1 splash Full cream milk
  • ½ cup Panko breadcrumbs
  • 4 tablespoons Olive oil
Instructions
  1. Add the flour to the plastic bag the salmon is wrapped in and coat the salmon in flour.
  2. Beat the egg in the milk and bathe the floured salmon in the egg-milk mixture.
  3. Coat the salmon in the Panko breadcrumbs and allow the salmon to cool in the refrigerator for about 5 minutes.
  4. Heat up a frying pan and add the olive oil.
  5. Gently lay-in the salmon skin side down and shallow fry, agitating occasionally to ensure it doesn’t stick to the frying pan.

  6. After a few minutes turn the salmon over and finish cooking. It will probably take five minutes in total.
  7. Allow the salmon to rest for a minute or two.
  8. Plate up with whatever vegetables you want.
  9. Shoot a photograph and eat the salmon and enjoy the moist tender flaky flesh in your mouth along with the crispy crunch of the Panko crumbs.
  10. Hope the photograph looks good and then blog about it and hope some more that people will share the recipe on social media.

Can I crumb other things?

Yep, you can crumb any meat and even vegetables.

Could I deep fry rather than shallow fry the salmon?

Sure, I don’t think it would be as nice though nor as easy to control the cooking. But I’m all for deep frying anything.

Is there a vegetarian version?

Of salmon? No. There’s no vegetarian version of salmon. You could crumb a piece of tofu or a mushroom rissole if that is what you want.

What else did you eat today?

For breakfast, I had a jalapeño Spam and smoked cheddar sausage roll.

It’s a Monday and the start of new work week. I was meant to be in Sydney for a meeting but decided to stay in Canberra and join by teleconference so I could handle a load of other work. Over my lunch break as I was enjoying a light smoked salmon and lettuce snack I pondered tonight’s Panko crusted baked salmon with quinoa rice and kale.

It’s been a few months since I’ve cooked with panko crumbs so my mouth was watering as this was cooking.

Ingredients
  • Salmon with the skin on
  • Quinoa
  • Rice
  • Kale
  • Almond flakes
  • Fried shallots
  • Capsicum
  • Chili
  • Dill
  • Lemon zest
Instructions
  1. In a frying pan heat some grape seed oil and then add the kale, chili and capsicum
  2. Sautée until the kale has started to wilt
  3. Add almond flakes and fried shallots
  4. Cook the salmon in the oven for 12 minutes after coating in grape seed oil and panko crumbs
  5. Cook some quinoa and rice together
  6. Plate up the kale, chili, capsicum, almond flakes and fried shallots
  7. Spoon up some quinoa rice as a bed for the salmon
  8. Place the salmon on the rice
  9. Add some lemon zest to the salad and dill to the salmon
  10. Shoot a photograph
  11. Eat the meal
  12. Wash the dishes

So this is how I cooked my Panko crusted baked salmon tonight. I like that I was able to incorporate healthful additions like quinoa and kale. The whole meal had a great combination of flavour and crunchy texture. I know some people have said they dislike kale, but when it’s wilted and cooked in a little oil in a nonstick frying pan it takes on the flavours of the other foods it’s cooked with. In this case the chili and capsicum.

Cheating with microwave quinoa rice

Okay so I’m Chinese so you might expect I’m good or at least okay with cooking rice. Well I regularly overcook or undercook rice. Because I live alone I see no point in buying a rice cooker. I often play around with microwave settings or cook rice in a saucepan on the stovetop. On the weekend while I was grocery shopping I found Coles microwave quinoa rice for $2 a packet. The packets contain 2 serves so that’s $1 for a serve of rice and quinoa. Bargain! In 90 seconds I have cooked quinoa rice or chia seed rice.

I had the worst Mondayitis today. I had a poor night’s sleep and during a really vivid dream my alarm went off. My skin has been right off too. It’s so dry, I spent the day in discomfort with dry skin. This is despite ample moisturiser this morning after my shower. To top things off when I went to put my trousers on I couldn’t get the button in the buttonhole. Clearly I’ve been enjoying too much Cadbury’s Vegemite chocolate. It’s currently 2 blocks for $7 at Coles but I’m told it’s a lot cheaper at Woolworths.

So during the day I was thinking I have salmon in the refrigerator and I knew when I got home I’d want a quick and simple dinner. I’m also in a money saving mood at the moment. I’m saving money for an end of year event with my daughters. I need to spend less money on myself and save save save.

  • Salmon

  • Grape seed oil
  • Chili flakes
  • Coles microwave quinoa rice
  • Parsley
  • Chives
  • Lime
  • Mayonnaise
Instructions
  1. I bought the salmon from the Coles delicatessen. In the plastic bag it came in I add some oil and the panko crumbs and rub it all over the fish
  2. Put the fish on a baking tray lined with baking paper
  3. Add some chili flakes and pepper
  4. Bake at 200 °C for 16 minutes
  5. When the salmon has been cooked turn off the heat and open the oven door and let the salmon rest for a few minutes
  6. While the salmon is resting microwave cook the quinoa rice
  7. Aliquot half the cooked quinoa rice into a bowl and put into the refrigerator
  8. Mix in some cut parsley and chives in the remaining quinoa rice
  9. Cut a lime into wedges
  10. Plate the salmon first and then the rice and then the lime wedges and add a dollop of mayonnaise
  11. Shoot a photograph
  12. Eat the meal

So tonight I’m doing another version of the panko chicken thigh which I highlighted last night. Tonight I added avocado rice which I prepared earlier in the week. This time though I had rice and quinoa rather than rice and chia.

I cooked the panko chicken thigh in the same way as well as the avocado rice. The only difference tonight was serving potato gems and some mayonnaise.

  1. In a plastic bag add the chicken thigh, oil, chicken salt and panko crumbs. Make sure the chicken is well coated and massage it all in
  2. Put the chicken in the oven at 150 °C for 1 hour
  3. At the 40 minute mark put the potato gems in the oven
  4. Smash the avocado with lime juice and oil
  5. Add the cooked rice and quinoa to make the avocado rice
  6. Remove the chicken and let it rest for 20 minutes while the potato gems continue cooking
  7. Plate everything up

Delicious panko chicken thigh

I love fried chicken but I hate wasting oil. This delicious oven roasted panko chicken offers an alternative to deep frying the chicken in oil and coated in flour and eggs.

Tonight I had some leftover rice and chia which I enjoyed with salmon last night. I knew I wanted the rice to absorb the chicken flavour so I cooked the chicken directly above the rice to allow the chicken juices to flow into the rice.

  1. In a plastic bag add the chicken thigh, oil, chicken salt and panko crumbs. Make sure the chicken is well coated and massage it all in
  2. Butter/oil a metal sleeve and place on a tray lined with baking paper
  3. Add the leftover rice and chia
  4. Add some chili flakes and a little oil and pepper
  5. Lay the chicken thigh on top of the metal sleeve so its juices drizzle into the rice
  6. Drizzle a little golden syrup over the chicken thigh
  7. Cook in an oven at 150 °C for 1 hour
  8. At the end of the cooking allow the chicken to rest for a full 20 minutes
  9. Lay some spinach leaves and chard on a plate
  10. Place the chicken on the plate
  11. Try to get the rice and chia stack to remain as a stack but don’t lose sleep if it falls apart

I reckon this panko chicken thigh looks fantastic.

The chicken was perfectly cooked. The muscle was juicy and tender. The panko crusted skin was crunchy and full of salty flavour.
