Have you ever had a Taco Saturday and eaten tacos for breakfast, lunch and dinner? Today I had tortillas filled with goodness three times. This extravaganza was inspired by a blogger friend Julie who is currently on a camping holiday. We started a discussion in the comments of a recent post and the notion of breakfast tacos was raised. It cascaded from there.
This morning started well with a panorama of the sunrise.
I went for a walk to build an appetite.
My breakfast taco was made with a line of cheesy potato gems (tater tots for my US friends), streaky Pialligo Estate Artisanal bacon and creamy buttery scrambled eggs.
After some grocery shopping I needed my lunch taco which contained smoked salmon with a guacamole laden with chilli.
After lunch I needed to make some purchases and walked by the lake. I had noticed an abandoned car on my morning walk.
I also spent some time sitting on a bench day dreaming.
For dinner I had some Coles pulled pork and made some macaroni cheese from scratch.
Some readers know of my many alter egos. For example, on Friday I posted on my other blog about the limitations of diagnostic tests, especially serology tests. In the past I’ve also posted about offal on Dr Offal. Tonight though I’m posting about giblets here on Yummy Lummy. Possibly my least known blog is the one about odd movies.
I really like giblets. I have happy memories of Mum cooking giblets. On a cold night, Mum’s chicken giblets and steamed rice was really comforting and warming. I would tell people about the meal and I usually received a negative reaction. It’s no surprise when I posted a photograph on social media yesterday about my purchase I received mixed reactions. One of my social media friends compared chicken giblets to cat food. Lucky cats I say.

So today I slept in a little and enjoyed some low fat scrambled eggs with smoked salmon.
After breakfast, I called Dad and wished him Happy Father’s day. I went for a walk on the cloudy Sunday morning and shot some photographs.
After the walk I went and put some diesel into my car and then went about preparing dinner.
For lunch I had leftover asparagus and silverbeet soup with some Greek yoghurt and Parmesan cheese.
I spent the afternoon doing some work, watching House, MD on Netflix and trying to stay warm.
Tonight I spoke with my daughters via FaceTime and enjoyed a Father’s day by myself.

Today is the birthday of one of my best friends from Medical school. I sent her an e-mail to wish her all the best and then I decided to have another crack at the low fat scrambled eggs I did last week. I shot a series of photographs just for fun.

After breakfast I went grocery shopping and had a coffee at Everbean Espresso Bar in Westfield Belconnen.
After grocery shopping I went for a walk around Lake Ginninderra.
For lunch I met Bron at Ricardo’s Cafe and Patisserie. I had a Reuben sandwich and a peanut paste and jelly dome.
I shot a few photographs on the way.
For dinner I had some baked salmon with curry coconut quinoa rice.
I hope everyone has had a good weekend. Mine was pretty good when it comes to food. Otherwise the weather in Canberra has been pretty ordinary. It’s been cold, wet and windy.
So this morning I made low fat scrambled eggs and enjoyed some Buderim Ginger Factory ginger, lemon and lime marmalade. I went on a walk around Lake Ginninderra and stopped at Heather’s House of Cake for a caramel chocolate caramel (yes two caramels) cupcake. For lunch I had some leftover organic red rice pork congee on rye bread. While I was watching Netflix I enjoyed a snack of almonds, cashews, Queensland nuts and golden roughs. For dinner I some baked salmon with quinoa rice which was bound with some Greek yoghurt and English marmalade.

A while ago while I was doing low carbohydrate and high protein I was eating a lot of scrambled eggs with butter and cream, I even posted my thoughts on the Gordon Ramsay method and the Heston Blumenthal method. Here is how I used the Ramsay method to make low fat scrambled eggs which taste really good.
Now that I’m doing a low fat style of thing, I was wondering if I could use the same technique but with relatively low saturated fat ingredients. It turns out I can. These eggs turned out with nice smooth folds just like I was using cream and butter. I was surprised. They tasted good too.
