What do I call this?


Okay, it’s been a shocker of a work week. Tonight I left work and knew all I had was some sweet potato and Gruyere cheese. What to do?

Okay so I’ll tell you what I put in this and you tell me what it is (please).

Grated sweet potato
Grated Gruyere cheese
Chopped onion
Pouring cream
One beaten egg
Chilli flakes
Course ground black pepper
Asparagus spears

I mixed the sweet potato, Gruyere cheese and onion and lightly packed into a Pyrex dish. I beat an egg and added to some pouring cream and added to the dish. I added chilli flakes, pepper and asparagus spears and then topped with a little more Gruyere cheese.

So what do I call this?

It tasted good, that’s all I know :-)

Steak anyone


On the weekend we went to Costco and amongst other things bought steak. We bought New York strip steak. This cut is becoming more popular in Australia.

On Sunday night Bron cooked. Last night I did. I love steak.

Seeking redemption after last night’s transgression


Last night I made a dinner which I thought was fit for Man v Food. It was based in tinned meat, potato and cheese. I received mixed reactions today from friends. Mostly negative reactions but at least one positive. The positive reaction was from a friend whose husband loves Man v Food and who is keen on a visit to the USA to do a Man v Food eating tour. Most reactions were dismay that I would eat meat from a tin. What I didn’t say was how much I really like tinned corned beef as much for the fat content as well as connective tissue content like big arteries and veins.

My biggest regret about last night was the amount of garlic I used and the fact that all day I could taste and smell garlic. I thought for dinner tonight I would do something unexpected but in keeping with my style.

Surprise surprise, tonight’s meal contains no meat, not even bacon pieces. I prepared sweet potato fritters and salad for dinner.

Grate sweet potato and cheddar cheese. Crumb a slice of bread. Bind with an egg. I added seasoning to taste. I made a few fritters and baked in an oven for 45 minutes. I added no oil.

Yes, I know they are uneven :-)

Tonight I had some avocado, peaches, sweet corn, and cherry tomatoes tossed in a little lime juice and balsamic vinegar.

Out of work early and a simple dinner


I was so happy to leave work at 1730 AEDT tonight. It meant I got to my kitchen a bit after 1800 AEDT. I have so much work e-mail to get through as well as personal e-mail so I thought a bit of skinless chicken thigh and some vegetables.

I had a good day when I think about it. It was busy and there were lots of things to do. On the good side I got to see Bron and I spent time with team mates talking about food and cooking and eating. I also had a very positive meeting with one of my bosses in the morning.

The sweet potato was tossed in a little flour with the chicken. The chicken and sweet potato was cooked in the oven at 150 °C for 45 minutes. The avocado was just ripe. The broccoli and asparagus were simply zapped in the microwave.

Coming back from a week away overseas


I got back into Canberra this morning at about 0930 AEDT. I’m very grateful to Bron for coming and picking me up and dropping me off at my place. I had an invitation to share calamari with her this evening but this afternoon I started coming down with rhinorrhoea and pharyngitis. The plan tonight is early to bed and hopefully I’ll have a reasonable sleep.

On Wednesday night in Washington I did not sleep at all. Not a wink. I ended up watching American television in all its glory. I think I watched alligator catchers, barehanded catfish catchers (noodling), a guy in Colorado who has more guns and flame throwers than anyone else in the world, a show comparing the AK-47 against other assault rifles and loads of cooking programs.

On Thursday morning, I had a free session so I walked >12 km around all the museums and monuments in Washington DC. So on the flight home my thighs were really aching. It all meant though I slept on the flight between LAX and SYD. A little over six hours straight. That is remarkable for me. There was also a screaming baby next to me as well. That said, when I woke up, there were no smiles. I figure my snoring kept everyone else awake. No one was brave enough to nudge me, or if they did I was so out of it I didn’t stir at all.

Today all I’ve done is wash clothes and towels and put stuff away. I wasn’t sure what to prepare for dinner. Before I go away I usually clean out my refrigerator and throw old stuff away. When I was a kid we come home to a failed freezer and I’ve never forgotten the rancid putrefying odours. I had a small piece of pork in the freezer and a sweet potato in the pantry. I went and did a little grocery shopping and bought a small tub of sour cream, some chives and some extra vegetables.

I really could not be bothered slow roasting the pork. I was too tired and not in the mood. I pulled out my pressure cooker and put the pork in that. I added some celery, carrot and potato along with onion and baby leeks. I had the pressure cooker go for about 45 minutes. As I was releasing the pressure I cooked some sweet potato in boiling water and then pureed it with my Bamix™ after adding a little butter and sour cream. I also cooked some baby broccoli too.

This was nice and rustic with good texture.

Okay, it’s time to wash the dishes and get ready for bed or maybe a soak in the bath tub.

 

Pork belly. Simple and good.


I had another big day at work. I wanted something I could cook while continuing to work from home. I still have a teleconference tonight at midnight so I didn’t want to muck around a lot.

I chose a small piece of belly pork, a small sweet potato and an avocado. I turned the sweet potato into a mash with butter and Gorgonzola cheese. I scored the pork with a sharp knife and rubbed in salt, a little sugar and some pepper.

This was not a low calorie meal. I do like butter.

Out of the oven the pork rind was crispy.

Plated up with the pork on the sweet potato mash and the two halves of an avocado. I like pepper, chili flakes and Tabasco sauce.

The mash was thick and smooth and tasting like cheese. The flesh of the pork was tender and juicy and full of nice fatty flavour.

 

Yes! I did eat all that meat.


I have the utmost respect for people who choose not to eat meat. In 1984 I didn’t eat meat because my cadaver reminded me of roast lamb. Having to spray it with formalin each day to keep the flesh preserved and from going off just put me off meat.

Once anatomy was over I got back into eating meat again.

Tonight I thought about salmon and then saw a small piece of lamb shoulder that I thought I would like to roast.

This was so tender and it smelt so good, I nearly pulled a tooth when I started chewing on the string used to tie it together.

I love steak


I often feel like eating steak. For the last few months my staple protein has been skinless chicken thigh. That said I have been allowing myself red meat every now and then.

A few weeks ago I had an Angus rib eye fillet at Kingsleys steak and crab house. The steak was amazingly tender. That’s an onion ring on top :-)

Last weekend I had a Scotch rib fillet with prawns and calamari at the Canberra Southern Cross Club at Jamison. It was pretty awesome.

Tonight I wanted to cook myself some steak. This is a Scotch rib fillet from Coles. It’s sitting on a sweet potato stack. It’s topped with cheese and avocado and a side of roast pumpkin.

This was a very satisfying meal. The creaminess of the avocado and the juiciness of the steak went so well together.

 

Chicken dinner


The last few nights I’ve splurged on dinners with lots of things I’ve been trying to avoid to lose some weight. Tonight I returned to my weight loss meal. Chicken thigh meat and a couple of vegetables.

Fried chicken


After trying chicken fried steak on Sunday evening I thought I should try frying some chicken. I tweeted this desire today and buzz_71 asked me to blog it tonight. As if I wouldn’t 😃!!!

I soaked a chicken thigh fillet in butter milk for 20 minutes. This was then egg washed and then floured. The flour also had salt, pepper, mustard, curry powder, and paprika added. I did this twice and then placed the coated chicken into the refrigerator for a few minutes while I heated some vegetable oil in my wok.

I cooked the chicken for about five minutes per side. In addition I had a couple of sweet potato discs deep fried. Along with the chicken and sweet potato I enjoyed some avocado and cabbage.

On an interesting note, whenever I eat paprika I have very vivid dreams. If I go to sleep in a bad mood I have night mares, if I go to sleep happy I have happy dreams or at least dreams reflecting what I’ve been doing that evening but in positive tones. On Sunday night I had watched The Big Bang Theory and that night dreamt I was debating Sheldon Cooper about my favourite subject, viz., pus associated with soft tissue infections.
