How to make a quick and easy spicy cheesy lamb roll with gravy

Introduction

Today is my last day of annual leave. I thought I would celebrate with a treat for lunch. I had some leftover slowly roasted lamb shoulder in the refrigerator so I thought I’d make a lamb roll.
The difference would be that I added some cheese, spring onions, red chillies and instant gravy (brown onion).

 

The stuff you need

  • One bread roll. I prefer a white bread but you could use brown or wholegrain or even gluten-free if that tickles your fancy (or if you have cœliacs disease).
  • Butter is purely optional but if you like it I recommend it.
  • Grated cheese. I prefer Coon cheese.
  • Leftover lamb shoulder meat. I shredded the meat and heated it up in the microwave oven.
  • Instant gravy. Use whatever brand you like. I went with a brown onion flavoured gravy.
  • Spring onions. Thickly sliced.
  • Red chillies. Thickly sliced.

 

How do you put it all together?

  1. I warmed up my roll by using the microwave oven. While it was cooking I had a small cup of water in there to avoid the roll from drying out.
  2. Cut the roll lengthwise and put some cheese in the slot.
  3. Use some tongs or your fingers to add the warmed up meat.
  4. Add the spring onions and chillies on top of the meat.
  5. Pour on as much gravy as the roll will soak up. That can mean a lot of gravy. I like a lot of gravy.

It looked great and tasted fantastic. I’d do this as often as I could if it wasn’t for the extravagance associated with the lamb roll.

Streaky bacon and pink ling

Have you tried pink ling?

So on Saturday instead of picking up two pieces of salmon I bought one piece of salmon and one piece of pink ling. I’ve been conscious that the salmon is very expensive at about $32 per kilogram while the pink ling is about half that price. I’ve never had pink ling as far as I know so I was interested in trying it out.

I assumed it could be baked just like salmon so I gave it a go. To hedge my bets I also baked some Pialligo Estate artisan bacon, knowing if the fish wasn’t too good the bacon would save the dish.

What you need to make this dish

  • One piece of pink ling
  • Two rashers of streaky bacon from Pialligo Estate
  • Strips of capsicum
  • One avocado diced with a little olive oil

How to put it all together

  1. Add the capsicum fish and bacon onto a baking tray
  2. Cooking in an oven at 200 °C for 15 minutes
  3. Allow everything to rest for 5 minutes while preparing the avocado
  4. Plate up

Prepare for a photograph

  1. Shoot a photograph
  2. Eat the dish
  3. Think about the future of pink ling in my life
  4. Wash the dishes
  5. Write the recipe
  6. Make nice pictures using Adobe Photoshop and Adobe Lightroom
  7. Blog and Vlog (verbs)

How did it taste?

Well I don’t think I’ll place pink ling on my favourite list

I think I may need to cook it differently. It basically lacked taste/flavour. I needed to add some extra salt and pepper after my first bite.

I may need to crumb it or batter it or at least pan fry it.

I was expecting it to be firm and flaky but it was soft and mushy.

The bacon was delicious as was the avocado

Final thoughts

It was an interesting experiment. Well worth doing. I won’t give up yet. I need to have a few more goes. At half the price of salmon I can afford to experiment a little with it.

How do you pronounce quinoa?

How do you pronounce quinoa? I say KEEN-wah. I expect there are many variations. One Australian satirical blog however reckons it is officially pronounced as Wan-Ker. In a satirical dig at the superfood and its devotees this blog likened quinoa lovers with bearded hipsters in coffee joints. It’s also taken aim at kale before too.

In an act of defiance I ate quinoa and kale tonight. To enhance my left-leaning green credentials my quinoa and kale along with brown rice were part of a leftover meal (see what I did there? Recycling!). I bet you never thought you’d read “left-leaning green credentials” in a Yummy Lummy post did you? I can do satire too

And to further demonstrate I’m in touch with my inner self, I ate baked beans and Worcestershire sauce on toast for breakfast because you know baked beans make you fart and the more you fart the better you feel, so baked beans should be had every meal!!!
