Baked salmon, Brussels sprouts, bacon and parmesan
Even though I’ve technically stopped salmon Mondays, I still find myself cooking salmon on a Monday. Tonight I made a baked salmon dish and supplemented it with my trendy vegetable for the moment, viz., Brussels sprouts. Even Not Quite Nigella has recently celebrated Brussels sprouts. What better way to celebrate the official birthday of Her Majesty, Queen Elizabeth II than with a favourite vegetable.
