On Thursday night I enjoyed some super tender pork belly at The Hellenic Club in Woden. I felt like eating more pork.

Last week I cooked my version of chicken rice. It wasn’t traditional chicken rice. I’ve never eaten traditional chicken rice. I thought this would also work with pork, so I gave it a go.

There’s nothing special about this recipe. It’s pretty simple and not too expensive. The only equipment you need is a pressure cooker.

The quinoa and rice combined nicely to become crunchy which was an added bonus.

Ingredients
Pork
  • Pork belly strip
Quinoa rice
  • Quinoa and rice
  • Chicken stock
  • Sesame oil
  • Peas
  • Corn kernels
Instructions
The quinoa rice bit
  1. Add one cup of quinoa and rice (combined) to the pressure cooker vessel.
  2. Add four cups of chicken stock.
  3. Add a teaspoon of sesame oil.
The pork bit
  1. Remove a strip of pork belly from packaging.
  2. Add the pork belly to the pressure cooker vessel.
The cooking bit
  1. Set the timer to 25 minutes and turn on the pressure cooker.
Peas and corn kernels
  1. When the timer has finished, equilibrate the pressure and open the vessel.
  2. With a wooden spoon scrape the crunchy quinoa rice from the cooking vessel.
  3. Add a cup of frozen peas and corn kernels to the quinoa rice and stir through.
Plating up bit
  1. Add the crunchy quinoa rice to a bowl.
  2. Add the super tender pressure cooker pork belly on top of the crunchy quinoa rice.

Questions and answers

Surely one meal of super tender pork belly is enough in one week?

In my humble opinion, you can’t have too much pork belly, especially super tender pork belly. The meal I had at the Hellenic Club on Thursday evening was nice, but the gravy was a little too salty. The meat was really nice, so I wanted something different but with pork belly.

Did you really only eat one strip of pork belly? I thought you are a human macrophage!

Yep because I’m going to cook the remaining strips of belly pork tomorrow night.

How do you make the quinoa rice crunchy?

I figured if I only used four cups of stock it would get absorbed and the quinoa rice would be firm and hopefully the quinoa rice touching the cooking vessel would get nice and crunchy.

  1. It looks like a good filling meal, Gaz. I don’t mind crunchy rice at all, but as you know, not a huge fan of pork or belly pork or pork belly. Just not my taste no matter how you cook it and what gravy or sauce you douse it with. But I guess if you like it enough, nothing wrong with eating it more than once a week 😀

  2. That looks lovely, Gary, and I’m thinking I need to buy myself a pressure cooker. I love pork belly, but don’t cook it often because it’s a hassle. Not in the pressure cooker though! I like crunchy rice but haven’t had it very often. My husband buys quite a few of those easy cook grain packs and they often include quinoa and rice.
