Last week I cooked a quick Thai red curry pumpkin soup and I thought if it works for pumpkin it will work for cauliflower.

This Thai red curry cauliflower soup is so simple. It could easily be made after work on a weeknight or on a weekend evening after being out all day.

You can’t go wrong with this soup. All you need is a saucepan and a stick blender.

A really quick, easy, and very tasty Thai red curry cauliflower soup

Ingredients
  • 1 head Cauliflower
  • 1 bunch Coriander
  • 1 tablespoon Thai red curry paste
  • 1 tablespoon Freshly cracked black peppercorns Ground in a mortar with a pestle
Instructions

  1. With a parring knife cut out the core of a cauliflower head and then break down the florets with your fingers.

  2. Put the cauliflower florets in a saucepan and add some cold tap water and a vegetable stock cube.

  3. Put the saucepan on a hob and turn on the heat and get the water boiling. Maintain a gentle boil and cook until the cauliflower florets are easily penetrated by the tip of a sharp knife or a skewer.

  4. While the cauliflower is cooking in vegetable stock, put a couple of tablespoons of whole peppercorns into a mortar and grind the peppercorns with a pestle.

    Chopped coriander leaves and stems, freshly ground whole peppercorns and Thai red curry paste.
  5. Chop a whole bunch of coriander including the stalks.

  6. When the cauliflower is cooked turn off the heat and add a tablespoon of Thai red curry paste, and then blend smoothly with a stick blender.

  7. Add in the coriander and pepper leaving a little of each for the final garnish.

  8. Blend in the coriander and pepper.

Plating up
  1. Transfer the soup to a bowl and garnish with coriander leaves and pepper.

Questions

Does cooking cauliflower stink up the joint?

Yep. My flat now smells of cooked cauliflower. The Thai red curry paste though added some garlic odours too which has helped my the place stink even more. I may need to open the windows but it’s bloody cold in Canberra tonight.

What’s your favourite stick blender?

I like my trusty old Bamix. I’ve had it for more than 20 years.

Why no meat tonight?

I don’t need meat every night. I mean during the week I usually have some salmon, some chicken and there’s often some pork. On weekends, I like to mix it up a bit and the odd meat-free meal is quite refreshing.

It’s not like I didn’t have meat today. For lunch while on a teleconference I ate a chicken schnitzel which I cooked in butter and topped with blue cheese, triple cream brie, and smoked cheddar cheese.

  1. I love spicy soups and this one is a cracker. I’m going to put it on next week’s menu. Cauliflower doesn’t make me fart (I don’t think…) but the smell of it when it is cooking is rank. I’m kind of indifferent to coriander, which I know is unusual as it’s often a Marmite (Vegemite in deference to you, Gaz) food.
