Slow cooker beef short ribs with pan-fried mushroom, eggplant, zucchini and strawberry jam

To celebrate and because it was a –3 °C morning in Canberra, the slow cooker came out and beef short ribs were cooked.

Slow cooker beef short ribs with pan-fried mushroom, eggplant, zucchini and strawberry jam for Queensland Day

Beef short ribs

  • 1 rack Beef short ribs (3 ribs)
  • 1 Leek
  • 3 Carrot
  • 3 stalks Celery
  • 1 bunch Thyme
  • 1 bunch Rosemary
  • ½ cup Barbecue sauce
  • 1 cup Beef stock

Vegetables

  • 1 large Mushroom
  • 1 tiny Eggplant
  • 1 tiny Zucchini
  • 1 teaspoon Strawberry jam
  • 1 knob Butter

Beef short ribs

  1. Dice and chop the leek, carrot, and celery and put it into the slow cooker vessel.

  2. Toss in some rosemary and thyme.
  3. Add a cup of beef stock.
  4. Lay the beef short ribs on top and the squirt some barbecue sauce over the meat.

  5. Cook in the slow cooker for 6 hours.

Vegetables

  1. Dice the mushroom, eggplant, and zucchini and sauté with some Queensland nut oil and butter.
  2. Add in a teaspoon of strawberry jam for sweetness.
  3. Mix everything around.

Plating up bit

  1. Serve the rack of ribs on a dinner plate and add the vegetables next to the ribs.

Questions and answers

Why isn’t Queensland day a gazetted holiday?

I don’t know. I reckon it should replace the Queen’s birthday gazetted holiday. It’s a far more significant day than the ceremonial celebration of Her Majesty’s birthday.

What’s with the eggplant (aubergine) and zucchini (courgette)?

It’s odd, isn’t it? Eggplant 🍆 and zucchini are not regular features of my diet yet they are delicious vegetables.

What else did you do on Queensland day?

I had a migraine headache also it’s one of those painless migraines with the visual aura and worsening tinnitus. Yesterday I experienced blurred vision and loud ringing in my left ear.

I went for a walk around Lake Ginninderra and it made it worse.
