One pork knuckle gave me six meals.
On Saturday night, I cooked a pork knuckle for dinner and had enough leftover for four more meals. Here is what I did with that one pork knuckle for readers on a budget and cooking for one.
Saturday night
Pork knuckle with crackling on potato mash with green vegetables.
Sunday dinner
Laksa-flavoured pork knuckle curry
Monday lunch
Pork knuckle meat with cherry tomatoes and cucumber.
Tuesday dinner
Oven-cooked laksa-flavoured pork knuckle curry
Wednesday lunch
Pork knuckle meat with cherry tomatoes and cucumber.
Wednesday dinner
Pork knuckle meat with a tomato-based sauce
I don’t think I have ever cooked a pork knuckle.
If you enjoy pork and crackling, Heather, it’s worth a go.
Thanks Gary I will certainly try it.
Impressive!!!! Love your adding it to ‘salad’ bits for lunch snacking. Stretching out a piece of meat is so much fun. So many ways to enjoy one product. How large was that knuckle? Wonder if I could find those here in EOregon?
Thanks, Kris. I think it was about 1.5 kg with the bone in.
Glad to see you like brussel sprouts Gary; I love them especially with pepper.
…and a little salt too 🙂
Number one and two are my favourites, though all the dishes look delicious!
Thanks, Emma. It turned out to be an economical piece of meat!
