As well as sharing the 5 most viewed posts for 2018 on Yummy Lummy, I’ll share a recipe inspired by a conversation I had with a work colleague, Kerri. Kerri mentioned she hadn’t seen much Spam on my social media feeds lately. I explained that I wait until someone mentions Spam to me and then I crack open a tin.

Kerri wondered what would happen if someone mentioned I haven’t had much broccoli on my social media feeds lately? I answered I’d probably post more Spam. That said, I like broccoli, especially with some bacon.

So for dinner tonight I’m combining some Spam and some pork belly. I’ll pre-cook the pork belly in my Tupperware Microwave Radiation Pressure Cooker and then finish it off with some diced Spam in the benchtop toaster oven.

Ingredients
Pork belly and Spam
  • Pork belly rashers
  • Spam
  • Chicken stock
  • Smokey barbecue sauce
  • Hoisin sauce
Salad
  • Fennel
  • Red onion
  • Spring onion
  • Radish
  • Pumpkin seeds
  • Sunflower seeds
  • Peanuts
  • Dill
  • Parsley
  • Red wine vinegar
  • Lime juice
  • Lime zest
Instructions
Pork belly and Spam
  1. Cut the pork belly into bite sized pieces.
  2. Cut the Spam into small bite sized pieces.
  3. In the cooking vessel add the pork belly and a couple of cups of chicken stock.
  4. Cook with steam under pressure and microwave radiation for about 15 minutes. This bit depends on whatever pressure cooker you have and is really a feeling for your cookware. I can’t describe this. It’s beyond science. This is the art of cooking. This is the joy of cooking. This is not a manual or a protocol or a check list. Just go with the flow baby.
  5. Reduce the pressure in the cooking vessel and allow the inside to get to atmospheric pressure at your altitude.
  6. Drain the soft, tender, juicy, and moist pork belly pieces. Place them into a mixing bowl along with the Spam pieces.
  7. Add some good sized squirts of smokey barbecue sauce and a few shakes of Hoisin sauce and mix it all about.

  8. Lay out the sauce-coated pieces of pork belly and Spam onto some baking paper on a roasting tray and cook in an oven for 20 minutes at 200 °C/400 °F. I used a benchtop toaster oven.
Salad
  1. Thinly slice the fennel, spring onion, and red onion and place into a mixing bowl.
  2. Use those fancy knife skills with a parrng knife to cut the radish into small cubes and add them to the bowl.
  3. Add a splash of the red wine vinegar and a splash of olive oil, and a squeeze of lime juice.
  4. Allow this to sit and pickle while the meat (yes, Spam is meat) cooks.
  5. When it’s time to plate up…
  6. Chop the dill and parsley roughly and add it to the bowl along with the nuts and seeds and lime zest.
  7. Toss your salad (please, please, please do not look up Urban Dictionary for “toss your salad” it has nothing to do with salad).
Plating up bit
  1. Put the salad into a bowl and then add the pork belly and Spam pieces. Use enough for a meal and aliquot the rest to a container and refrigerate it for some other meal.
  2. If you want to be fancy you can garnish the dish with something green.
Blogging bit
  1. Shoot a photograph and a short video because Google now wants video on recipe cards.
  2. Eat the meal.
  3. Wash the dishes (hint, wash as you cook, it makes life easier).
  4. Write the recipe.
  5. Write the blog post.
  6. Hit publish and hope this blog post gets shared on Twitter, Facebook, and Pinterest.

As you can see pork dishes are popular on Yummy Lummy. I didn’t put the view counts in because Yummy Lummy doesn’t get seen by that many people and it’s kind of embarrassing how few views I actually get 😂

Why mix Spam and pork belly?

Well, why not? I had an open tin of Spam and on its own it wouldn’t have been as nice as with the pork belly.

  1. I know I have mentioned to you I enjoy seeing what you eat every week so all your posts are enjoyable even though you cook lots of meat I still like to see what you cook and eat. I did love the post when you only ate vegetarian and I remember your posts from HK with your girls. I enjoyed them very much too. All the best for 2019 Gary.

  2. Another original recipe from you, Gaz. Though I am not a fan of pork belly, I am sure this dish would be a great pork and Spam dish for someone else out there. For me, I like eating Spam on its own or with eggs like you’ve shown in the first photo. In primary school in Singapore, during I liked ordering the fried rice from canteen as it contained pieces of Spam. Seriously, I could eat Spam every day. The other day I tried the less-sodium Spam variety. It did not taste the same.

    Wow, 3 out of 5 are pork posts and the others chicken. So lovely to see a Coles-titled one came tops #1 (I wanted to view the comments for that post, not sure if I was able to load it). Let me tweet the post for you after the holiday 😃
