What I ate today

After yesterday’s amazing morning with Owen Saddler at Dream Cuisine Patisserie and Café, I was on a sugar high for hours. I knew I probably should not have eaten dinner and I certainly didn’t feel like it, but I didn’t want to wake up in the middle of the night feeling hungry.

I ended up with something light. A toasted bread roll with cream cheese and sweet chilli sauce.

I woke up this morning after a sleepless night and after a couple of coffees made myself a hot breakfast.

After breakfast I went for a walk around Lake Ginninderra and shot a few photographs. On the way out I noticed a notice stuck to a wall of the apartment complex I live in.

We’ve been having trouble with some of the residents shopping at the local Westfield shopping mall and bringing their groceries back with shopping trolleys and then abandoning the trolleys on the pathways around the apartment complex. The trolleys weren’t just on the footpath but also in the internal courtyard and walkways.

My neighbours in the place I rent are a mixture of people with a lot of Chinese students who attend the University of Canberra.

At the end of my walk I stopped at the Everbean Espresso Bar in the Westfield shopping mall. While I was there I met one of the owners, Andrew. He’s seen my Instagram feed and wanted to say hello. The coffee at Everbean Espresso Bar is also very good.

While I was there I enjoyed a nice caramel milk shake.

When I got home I made a simple lunch.

A smoked salmon bagel with cream cheese, raw red onion, capers, wasabi sesame seeds and sweet chilli sauce.

After ironing and watching some Star Trek I went back out to the Westfield shopping mall to get some more groceries.

For dinner I made prawns and udon noodles.

Tonight I wanted something quick and easy so I decided on red curry prawns with udon noodles. Again this was an Asian inspired creation with some European elements like tasty mature cheese and Greek yoghurt.

Ingredients
  • 90 grams [url href=”https://yummylummy.com/2015/10/31/garlic-prawns-and-bacon-with-udon-noodles/” target=”_blank”]Udon noodles[/url]
  • 200 grams raw peeled prawns
  • 1 tablespoon tomato sauce
  • 1 tablespoon sweet chilli sauce
  • 100 grams mixed quinoa
  • 100 grams shredded kale
  • 100 grams parsley chopped fine
  • 100 grams mint leaves chopped fine
  • 1 teaspoon red curry paste
  • 100 millilitres light coconut milk
  • 1 tablespoon Greek yoghurt
  • 1 tablespoon fried shallots
  • 1 tablespoon flaked almonds
  • 1 teaspoon chilli flakes
  • 1 teaspoon cracked black pepper
  • 1 tablespoon shredded mature tasty cheese
Instructions
  1. Cook the [url href=”https://yummylummy.com/2015/10/31/garlic-prawns-and-bacon-with-udon-noodles/” target=”_blank”]udon noodles[/url] as [url href=”http://www.hakubaku.com/en/” target=”_blank” rel=”nofollow”]per the package[/url]
  2. Cook the quinoa along with the udon noodles
  3. In a hot frying pan or wok fry off the prawns lightly with tomato sauce and sweet chilli sauce
  4. Take the prawns off the heat and transfer to a bowl while half cooked
  5. At the end of the udon noodles cooking add the kale and then strain
  6. Add the udon noodles, quinoa and kale to the hot frying pan and stir in the prawns
  7. Add the Greek yoghurt and coconut milk
  8. Add everything else except the cheese and half the chopped parsley and mint
  9. take the pan off the heat and then add the cheese and stir through
  10. Plate up and garnish with the mint and parsley
  11. Shoot a photograph

These red curry prawns are pretty tasty. This dish was so quick and easy to make and so filling.

I’ve enjoyed a pretty filling food day.

For breakfast I went to SPACE Kitchen in Woden.

I had the Space Benedict which consisted of two poached eggs with a beetroot reduction Hollandaise sauce and a pulled pork croquette.

I also enjoyed an Oreo peppermint milkshake. The crumbed Oreo was fine enough to come up the straw. It was really good.

For lunch I toasted a bread roll and enjoyed a wasabi aioli avocado sandwich with red onion and wasabi sesame seeds.

So I’m still doing the udon noodles thing. As I was driving home from work today I was chatting with Mum and explained the meal at XO Restaurant Narrabundah and how I made garlic prawns and bacon with udon noodles. She said she didn’t like them because they were too thick however she thought the concept of Asian bolognese was really interesting.

I had a pretty good day at work although I have a splitting headache because of my lingering persistent cough after my bout of ManFlu last week. I wasn’t really in the mood for anything fancy for dinner. I wanted something quick and easy. Given how simple it was to prepare the udon noodles from the other night and given the amount of Atlantic salmon I have the refrigerator, it was a simple decision to make some noodles with the salmon.

Ingredients
  • 90 g [url href=”http://www.hakubaku.com/en/” target=”_blank”]Hakubaku organic udon noodles[/url]
  • 100 g white uncooked quinoa
  • 1 piece Atlantic salmon with skin on
  • 1 handful of chopped kale
  • 2 teaspoons chilli flakes
  • 1 teaspoon cracked black pepper
  • 1 tablespoon Greek yoghurt
  • 100 mL light coconut milk
  • 1 tablespoon fried shallots
  • 1 tablespoon flaked almonds
Instructions
  1. [url href=”https://yummylummy.com/2015/10/23/perfectly-baked-salmon/” target=”_blank”]Bake salmon[/url]
  2. When the salmon is cooked roughly flake it
  3. Get some water boiling and add the quinoa and the udon noodles for 8 minutes
  4. At the end add in a handful of chopped kale and take off the heat
  5. Drain the noodles, quinoa and kale and then add to a hot frying pan
  6. Add flaked salmon and stir in with the Greek yoghurt, light coconut milk, fried shallots, and flaked almonds
  7. Plate up half and put the other half in a container for the refrigerator for lunch tomorrow

With the memory of Asian bolognese from Thursday night at XO Restaurant still fresh in my mind tonight I made garlic prawns and bacon with udon noodles. In my mind an improvement on an Italian garlic prawn pasta. This is the first time I’ve bought bacon for about six months. With the recent IARC/WHO announcement in mind I only bought one 50 g rasher. I’ve never done that before.

Ingredients
  • 90 g [url href=”http://www.hakubaku.com/en/”]Hakubaku organic udon noodles[/url]
  • 250 g raw peeled garlic prawns
  • 50 g streaky Primo bacon
  • 2 teaspoons chilli flakes
  • 1 teaspoon cracked black pepper
  • 1 teaspoon good grub hub wasabi sesame seeds
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped basil
  • Zest from 1 lemon
  • 1 tablespoon Greek yoghurt
  • 100 mL light coconut milk
  • 1 tablespoon garlic aioli
  • 1 tablespoon fried shallots
  • 1 tablespoon flaked almonds
Instructions
  1. Get some water boiling and add the udon noodles for 8 minutes
  2. Fry off the streaky bacon which has been cut into strips
  3. Add the garlic prawns to the hot frying pan and stir fry until they just change colour
  4. Remove the prawns and bacon from the heat and put into a bowl
  5. When the udon noodles have cooked drain and add to the hot frying pan
  6. Return the prawns and bacon to the frying pan and quickly fry
  7. Add the Greek yoghurt, coconut milk and aioli and mix everything in
  8. Add the parsley and stir
  9. Turn off the heat and add the chilli flakes, cracked black pepper, wasabi sesame seeds, fried shallots and flaked almonds
  10. Stir together and plate up into a bowl
  11. Garnish with chopped basil, lemon zest and a little more of the wasabi sesame seeds
  12. Shoot a photograph
  13. Record a time-lapse video while eating
  14. Wash the dishes

This was a really tasty meal. The udon noodles are terrific at absorbing the flavours of garlic and bacon and the hot and spicy chilli flakes.

For dessert I enjoyed some Weis’ pineapple, coconut and lime sorbet.

For lunch I ate a poppy seed bagel with smoked salmon, cream cheese, wasabi sesame seeds, capers and dill. It was a pretty good sambo.
