Spam fried cauliflower rice inspired by Mrs Woog

Cauliflower rice was recently mentioned by Mrs Woog over at her blog. I should disclose I have not listened to her podcast but I did write a comment. It sort of fits in with a Tweet from today.

You’ll need to read the comment I made on Mrs Woog’s post to see why.

So now that I seem to have recovered from my traveller’s diarrhoea, it seemed appropriate to have some Spam for lunch. I’d eaten a couple of rashers of streaky bacon for breakfast, so I thought some vegetable matter would be appropriate for lunch. Spam fried cauliflower rice was the first thing that came to mind.

I bought everything from Coles. The Spam was on special.

Spam fried cauliflower rice inspired by Mrs Woog and her comments on cauliflower rice.

Spam fried cauliflower rice is a reasonably good low carb and perhaps keto alternative to a standard fried rice meal. It's possibly safer too if you normally use leftover rice knowing the leftover rice has its own risks associated with Bacillus cereus intoxication.

Ingredients
  • 1 packet Cauliflower rice microwave ready
  • Spam low sodium
  • Soy sauce
  • ¼ Brown onion diced
  • Peas
  • Corn
  • 1 Egg
Instructions
  1. Cook the cauliflower rice with microwave radiation according to the instructions for use.
  2. Dice a 1 cm slice of Spam and cut into 1 cm cubes.

  3. Heat the oven to 250 °C/480 °F.
  4. Cook the diced Spam for 15 minutes.
  5. Heat a frying pan to hot.
  6. Add a little high smoking point oil (I use avocado oil) to the frying pan.
  7. Sauté the onion in the oil until the onion has softened and starts to caramelise.
  8. Toss in the cauliflower rice and begin to move around the frying pan.
  9. Add the cooked Spam which should have a nice crust on each cube.
  10. Stir the Spam through the cauliflower rice and keep everything moving to avoid it sticking to the frying pan.
  11. Add in enough frozen peas and corn to add some colour.
  12. Add a good splash of soy sauce and stir through.
  13. Remove the frying pan from the heat and allow the contents to rest in the frying pan.
  14. Heat a small frying pan to hot.
  15. Add enough high smoking point oil to cover the bottom of the frying pan.
  16. Crack the egg in the hot oil and fry the egg, using a spoon to scoop hot oil over the egg white.
  17. As the egg white sets, turn off the heat and prepare to plate up the meal.
  18. In a small bowl add the Spam fried cauliflower rice and place the fried egg on top.
  19. Add a little soy sauce over the egg.
  20. Put the rest of the Spam fried cauliflower rice into a container and refrigerate for a leftover meal the next day.
  21. Shoot a photograph of the finished dish.
  22. Eat the meal.
  23. Savouring the joy that is Spam and wonder if Mrs Woog might like form of cauliflower rice.
  24. Wash the dishes.
  25. Write the recipe.
  26. Write the blog post and hope followers and social media friends will share it with all and sundry.

Questions and answers

Why did you write that leftover rice can be unsafe in the recipe summary?

Rice can be easily contaminated with spores from the bacterium Bacillus cereus especially if it’s left uncovered and unrefrigerated on an open bench. When the rice is reheated, the spores germinate into the vegetative form of the bacterium and flourish. the bacterium elaborates toxins that are capable of causing vomiting and diarrhoea and is a well-described cause of food-related diarrhoea.

The safest way to avoid this problem is to immediately cover and refrigerate rice that you cook and want to keep for a leftover meal.

Why do you read Mrs Woog’s blog? Isn’t it for women?

Mrs Woog is a fantastic blogger and sure, her audience is mostly women, I guess. I read a lot of blogs and I like reading blogs written by Australians. Mrs Woog is a stayer and she’s funny in a snarky sarcastic way that many Australians are.

Are you sick? Why the low sodium Spam?

I have a family history of essential hypertension and my blood pressure is now in the range requiring mild anti-hypertensive medication. I dislike the medication’s side effects. I don’t want to have any change that might mean I’ll need to increase the dose.

I checked the cans of Spam and the low sodium tins don’t have any more carbs than the original tins so I thought why not? All I’m going to miss out on are the different flavours of Spam. In my mind, if I cook the Spam with other foods, I’ll get those flavours absorbed anyway.

  1. Oh Spam, that takes me back. We used to have Spam regularly for Saturday lunch when growing up. Two pieces of grilled Spam fit perfectly on a piece of toast, then we’d cover it with tomato sauce, yum! But these days there are so many Spam varieties! I like they have low sodium as a choice.
    I love cauliflower, but it certainly doesn’t love me back 🙁 I’ll have to look into Mrs Woog, she sounds fun!

    1. One of the benefits of living alone Kirsty is that the after effects of cauliflower don’t offend anyone else 😂
      I try not to eat Spam too often, like you, lightly grilled or fan fried, it’s a winner.

    1. I’m happy it comes in ready to cook packets now. It takes away the tedium of food processing and the associated mess.

  2. This is super timely! I saw the caulis last week and thought “it’s time to try that new potato ricer”. I’ve also got the turkey SPAM waiting to be tried too, so now I’ve two reasons! Must try Mrs Woog as well!

    1. The cauliflower rice is worth a try as a quick and easy meal when you don’t want to go to the trouble of boiling rice.

      Oddly enough, pasta isn’t rated as a high risk.

      It was low carb ginger beer, although it’s not carb-free.
