KFC, Udon noodles, cream of mushroom soup, and frozen vegetables with crispy chicken skin and tomatoes

I bought a 21-piece bucket of KFC on Friday night. I’m too old now to do the whole bucket in one go. I stagger a bucket over three meals these days.

I wasn’t sure where to go with this recipe. I decided I wanted some Udon noodles and something to thicken them. As I was grocery shopping I saw some tins of soup on special and bought a tin of cream of mushroom soup.

Ingredients
  • KFC chicken
  • Udon noodles
  • Vegetable stock
  • Cream of mushroom soup tin
  • Broccoli
  • Cauliflower
  • Peas
  • Corn
  • Capsicum
  • Mushrooms
  • Tomatoes
Instructions
  1. Boil the Udon noodles in vegetable stock for 6 minutes
  2. Drain the noodles and rinse in cold water
  3. Empty the tin of soup into a mixing bowl
  4. Break up the chicken and put the cooked meat in the mixing bowl
  5. Keep the chicken skin aside
  6. Add the frozen broccoli, cauliflower, peas, corn and capsicum and stir through
  7. Add the noodles and stir through
  8. Transfer everything to a baking tray
  9. Bake for 30 minutes at 200 °C (400 °F)
  10. Add the chicken skin on top and add some cherry tomatoes
  11. Bake for 20 minutes at 200 °C (400 °F)
  12. Remove the baking tray from the oven and allow to rest for 5 minutes
Plating up bit
  1. Spoon some of the pie onto a plate
  2. Put the rest of the food into a bowl, cover with plastic wrap, and refrigerate
Blogging bit
  1. Shoot a photograph and a short video because Google now wants video on recipe cards.
  2. Eat the meal.
  3. Wash the dishes (hint, wash as you cook, it makes life easier).
  4. Write the recipe.
  5. Write the blog post.
  6. Hit publish and hope this blog post gets shared on Twitter, Facebook, and Pinterest.

Questions and answers

How many meals can you make from a 21-piece bucket?

Usually three meals. This is my last meal from last night’s bucket.

What pieces went into the pie?

Mainly breast pieces. I like eating the thigh pieces when I get home with the bucket. The following day I eat the drumsticks and wings. I leave the breasts to last because I don’t like breasts. I like thighs.

Where’s the cheese?

Some Coon cheese would have been nice but this pie was thick enough without adding any cheese.

  2. I haven’t ever eaten KFC–probably because at the stage of my life when I would have done so happily, I was a veggie. Perhaps it should go on my bucket list?! Probably rotisserie chicken for me. Like you, thigh meat every time. I had a salad while out for lunch with a friend this week and they used chicken breast and no dressing so it was very dull and very dry.

    1. It took sous vide cooking for me to finally enjoy a bit of breast. Roast chicken breast is often so dry and stringy.

  3. I enjoy Udon noodles. Given the food scandals that KFC has had I would buy the rotisserie chicken. Where I Live KFC was found to be selling Kentucky Fried Rats. A few years ago my girlfriend found a fried rat in her meal. As a result many KFC’S have gone out of Business.

    Of course with my High blood pressure I stay away from both KFC and Popeyes chicken. It’s like they poured a bucket of salt onto each piece. Yuck.

    1. Yikes. We’ve not had any scandals like that here yet. I’d be horrified to find a rat in my bucket of fried chicken.

      1. In many ways I’m glad my body reacts negatively to most fast food. That way I avoid headaches, stomach pain and cooked rodents. Plus some fast food restaurants are just plain unsanitary.

          1. Well I’m really enjoying my semi-retirement. I took a part time job with the Brooklyn Public Library in January. Everything is going well and other than having a cold in January and February I’m healthy. I want to be able to do the things I want to do without worrying about the aftereffects of bad food. Life is good.

            1. That’s fantastic that you’re doing well in semi-retirement. Life is more important than enjoying bad food.

              1. True. Working for the Library is wonderful. My bosses treat me extremely well. Our Team is fantastic. I work in the Adult Learning Centers doing Lots of Research and Community Outreach. Having a great time.
