The salmon was baked for 15 minutes at 200 °C. I made stick blender Old Bay Hollandaise according to the recipe you’ll find on the blog post later. The kale was baked along with the salmon after I’d squirted it with Queensland nut oil and seasoned it with iodised salt and freshly cracked black pepper. The potato mash was cooked with microwave radiation and garnished with pistachio nuts and parsley. Have a good one. This is the last video for a week. Catch you later.

It’s spring so it’s time to have a little spring clean. I wanted to clean out the refrigerator and consume some things that have been in the freezer.

I had a packet of potato mash in the freezer and it had to be consumed rather than discarded.

There is nothing special about this meal, but it’s another example of how living alone doesn’t have to mean a boring or complicated meal. This meal is simple, delicious, and I reckon if I was inclined to, I could cook this for someone else.

I get asked by people, especially on social media, if I cook for other people. I don’t. I just don’t like cooking for others. I’m also not a sociable person in real life. It’s why I enjoy social media and blogging. I can develop and maintain virtual friendships without the drama of real life friendships and relationships.

The other reason why I won’t cook for others is because I’m a better photographer and photograph editor than I am a cook. I like to make the meals I cook and eat look good in photographs, but there have been times when the meal can be pretty ordinary.

One of the reasons why I’m so repetitive in the meals I plan and cook is that I’ve hit on some tried and true recipes which I like.

Ingredients
Salmon
  • 1 fillet Atlantic salmon farmed in the seas around Tasmania
  • Iodised salt
  • Black pepper
  • Queensland nut oil
Old Bay Hollandaise sauce
  • 3 Egg yolks
  • 1 tablespoon Lemon juice
  • ½ teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 100 grams Butter melted
Potato mash
  • 1 packet Potato mash
Kale
  • Green kale leaves
Instructions
Salmon
  1. Preheat the bench top toaster oven to 250 °C knowing it will never reach this temperature given the toaster cost all of $AUD40 from Kmart.
  2. Keep the fillet of salmon in the environmentally unfriendly plastic bag.
  3. Add in a few good grinds of iodised salt and black pepper.
  4. Squirt in a bit of Queensland nut oil.
  5. Using your hands outside of the environmentally unfriendly plastic bag, massage your fillet of salmon so it’s covered with the seasoned oil.
  6. Remove the oily seasoned fillet of salmon from the environmentally unfriendly plastic bag and put on a baking sheet lined with baking paper.
  7. Put the salmon into the toaster oven for 15 minutes.
  8. Once cooked, remove the salmon and allow it to rest for a few minutes before lifting it from the baking sheet and carefully laying it onto a warm plate. It’s important to be careful so you lift the fillet of salmon in one whole piece.
Old Bay Hollandaise sauce
  1. Add the three egg yolks to a tall cup suitable for the Bamix™ stick blender.
  2. In a small bowl add the lemon juice, Dijon mustard, and Old Bay seasoning. Mix it with a spoon or whatever you want to mix it with. Use your finger if you like, but please make sure you have a thoroughly clean finger. Given this is a raw egg recipe, the last thing you want is a finger that has been contaminated by faecal flora or other potentially harmful microorganisms to be used to stir a food product rich in nutrients which bacteria especially thrive on.
  3. Using microwave radiation, melt the butter. If you are opposed to using microwave radiation, melt the butter with some other source of heat. I like using microwave radiation because in my opinion is to safe and convenient.
  4. Blend the egg yolks.
  5. Add the mixture of lemon juice, Dijon mustard, and Old Bay seasoning and blend.
  6. Slowly add the melted butter and blend at the same time to create a thick yet smooth creamy sauce.
Potato mash
  1. Follow the instructions to make the potato mash with microwave radiation.
Kale
  1. You can do this on the same baking sheet as the salmon or on a separate baking sheet.
  2. Cut the kale leaves from the stem and chop roughly.
  3. Put the kale leaves in a bowl and squirt with Queensland nut oil and add a grind of iodised salt and black pepper.
  4. Rub the oil and seasoning into the leaves.
  5. Put the leaves onto a baking sheet lined with baking paper.
  6. Put the baking sheet into the preheated toaster oven for 15 minutes.
Plating up bit
  1. With the cooked salmon already on a warmed plate, spoon the potato mash next to the salmon.
  2. Add the kale chips to the ‘negative space’ left on the plate.
  3. Pour the Hollandaise sauce over the salmon and dribble some onto the potato mash.
  4. You could garnish with chopped parsley if you have any.
Blogging bit
  1. Shoot a photograph and a short video because Google now wants video on recipe cards.
  2. Eat the meal.
  3. Wash the dishes (hint, wash as you cook, it makes life easier).
  4. Write the recipe.
  5. Write the blog post.
  6. Hit publish and hope this blog post gets shared on Twitter, Facebook, and Pinterest.

Nope, no way. Even if I went to culinary school, I don’t think I’d want to cook for others. I just don’t like people enough to want to do that.

    I think I’d actually find it hard to cook for one as so many of my recipes are huge!

  3. I used to love cooking for others and entertaining, but now I just enjoy putting together a few chips and dips and tasteful store-bought items. It takes the pressure away so that I can just have fun with guests. By nature, I’m an introvert, so I don’t have people over too often–so when I do, I just want to enjoy the company.

  4. I do like that about social media but I also like seeing people and friends in real life. But I can imagine that it puts a nice limit to the interaction you want to have and you can simply walk away rather than get caught up in drama.

  5. I clean all year round. I just like a clean house, clean everything – so I clean at least once a week. Sometimes you got no choice but to cook for others, even if it means sharing the tub of ice-cream you bought 😑 I would most certainly cook for money. One hour $50 for a meal, we have a deal 😀
