Creamed spinach with blue vein cheese and mushrooms

Today began with strange dreams. I know I tossed and turned a lot. My dreams involved family members in unusual predicaments. Friends’ faces appeared randomly. There were no clear actions in the dreams.

This morning, I went for a walk along the beach and enjoyed the early sunrise. I expect to continue relishing this until October, when daylight saving time begins, which may affect my mood. Many people prefer walking later in the day. Daylight saving times makes this choice easier. I treasure walking in early morning light and sunshine.

Recipe

Ingredients

  • Butter
  • Spinach leaves
  • Swiss brown mushrooms
  • Cream cheese (softened)
  • Cream
  • Blue vein cheese
  • Salt
  • Freshly ground black pepper

Method

  1. Roughly cut some Swiss brown mushrooms.
  2. Place a frypan over medium heat. Add the butter and allow it to melt (but not brown).
  3. Sauté the mushrooms.
  4. Increase the heat to medium–high and add the spinach in batches, stirring each handful until just wilted before adding more.
  5. Once all the spinach is wilted, reduce the heat to medium. Stir through the cream cheese and heavy cream until the mixture is smooth and glossy.
  6. Crumble in the blue vein cheese. Remember to stir constantly. Continue to cook for 2–3 minutes. Cook until the sauce thickens enough to coat the back of a spoon.
  7. Season with salt and pepper.

Make ahead and “safe” storage.

  • This dish can be prepared up to a day in advance.
  • Cool completely, cover and refrigerate.
  • To reheat, gently warm in a saucepan over low heat. Add a splash of cream if the sauce has thickened too much.
  • Enjoy with steak, roast chicken or simply on its own for a luscious side.

Thoughts on the meal

  • Sometimes, I enjoy eating spinach leaves. I used to have steamed spinach leaves every morning with some cheese and a steamed egg. Later, I read about some issues related to eating too much spinach.
  • I had the creamed spinach as a side dish with a rump cap steak. The steak and creamed spinach go well together.
  • I enjoyed the meal. It was delicious.

    I love creamed spinach. Gruyere is my preferred cheese for it. I remember about a third of my dreams. Some of them are hilarious. I don’t eat enough spinach for it to be a problem. I detest Scottish winters. At the end of December, it gets light at 8.30 am and gets dark at 3.30 pm. I counteract this by going winter holidays to the sunshine.

      Yikes, I don’t think I’d cope well with winter in Scotland. It would be good to retire into the tropics.

    Thank.you for sharing your creamed spinach/mushroom creation, this dish looks amazing. Much the same as your gorgeous Adelaide beach scenes it is such a pretty place and you’ve captured its beauty well. Vivid dreaming seems to be generic and it’s phenomenal how real your dreams can be, especially when involving close people/family.

      Thanks, Merryn. The creamed spinach was good enough as a meal on its own. I’ve been buying a lot more cream and blue vein cheese lately to “cream” mushrooms and broccolini too.

    I love that you love walking on the beach. I do, too. I like morning walks, because the beach is typically desserted, and a morning walk also sets the day up right. But I also love walking the beach mid-day, in the blazing sun. (It’s summer right now where I live.)

      Thanks, Jeff. I enjoy the walking by the beach for the same reasons you’ve mentioned.
      The daily maximum temperatures here regularly hit 43 °C (109 °F) and the beaches get crowded with people seeking relief.

    I dream a lot and I love what my dreams tell me because they often are very telling about how I feel about a situation or at least what my interests are :) I love the sound of this creamed spinach. I am a bit obsessed with creamed spinach honestly and the blue cheese addition sounds so good!

      That’s interesting about your dreams, Lorraine. My dreams seem very random.
      The blue vein cheese goes so well with the spinach. I know many recipes use Parmesan cheese. I think next time I’ll use both.

    This may sound peculiar but it makes me ‘happy’ to see you with dishes like the spinach one – not that it is in any way important but I can ‘relate’! I love spinach, mostly in salad form or steamed with nuts and seeds – healthy and tasty! Mushrooms I could eat at every meal :) ! As I have always been an evening person, with most of my most productive work appearing near the midnight hour, I have always cherished daylight saving. Love having my dinner outdoors around 9 pm . . .

        Am smiling and wondering . . . theatre, ballet, opera, symphony, chamber music et al all begin at about 8pm . . . and that is the time most friends want to meet in restaurants and one does not extend one’s own home dinner invitations much earlier . . . and all the evening uni and organizational and panel and business meetings . . . most only start at 8.00 or 8.30 :) ? Personally, unless ill, I don’t think I have ever thought of going to sleep before 11pm :) ! Since I was about 4 !!!

          Since I’ve been a young boy I’ve enjoyed the early morning and have always preferred that to the evening.
          I have no need for socialising so I’m happy to be asleep early.
