I managed to do two laps of Lake Ginninderra today, nearly 24 thousand steps. I built up an appetite on a cold winter’s day. All day I’ve been thinking of cooking and eating a low carb roast Chicken Maryland dinner.
I’ve written many times how the Chicken Maryland is my second favourite part of a chicken. That said, it often contains my favourite part of the chicken, viz., the cloaca.
A perfect low carb roast Chicken Maryland dinner

Instructions
- In a nonstick bowl add some Brussels sprouts and almonds
- Add a little grapeseed oil
- Rub some oil into the skin of the chicken and lay on top of the Brussels sprouts and almonds
- Shake some chicken salt and pepper onto the chicken
- Place a slice of pumpkin next to the chicken
- Roast in a benchtop oven at 200 °C for 1 hour
- When finished allow the chicken to rest for 15 minutes
- Plate up and shoot a photograph
