I modified Emma’s recipe to suit my tastes and predilections. I urge you to read Emma’s version and mine so you can see I’ve done my best to avoid any accusation of plagiarism.

Cauliflower cheese for some people is the ultimate comfort food. Cauliflower has recently taken on this aura as a low carb healthful option to a starchy root or tuber. Please note, I’m not using the word ‘root’ as a verb in Australian vernacular, rather I’m using the word ‘root’ as a noun. Although, in the Australian vernacular, ‘root’ can be converted to a noun when described and prefaced with the adjective ‘good’.

Baked salmon with creamy cabbage and Brussels sprouts plus nuts for crunch

Do you like nuts for crunch? Mouthfeel is important and the best textures are crunchy ones that’s why I like to add nuts for crunch.

Based on last night’s post about eating the same thing everyday I thought I’d go with the repetition theme and cook baked salmon again. This time I added some extra greens with Brussels sprouts. Add to that a handful of slivered almonds and pinenuts you have a great crunchy tasty dish.

Baked salmon with creamy cabbage and Brussels sprout plus nuts for crunch

Ingredients
  • Salmon
  • Brussels sprouts
  • Cabbage
  • Slivered almonds
  • Pine nuts
  • Dill
  • Lettuce
  • Fried shallots
  • Chili flakes
  • White wine
  • Cream
  • Grated cheese
  • Pepper
  • Butter
  • Green leaves and parsley
Instructions
  1. Rub the salmon in some olive oil
  2. Rub in some chili flakes
  3. Bake in a benchtop oven at 200 °C for 15 minutes
  4. Shred some cabbage and along with Brussels sprouts microwave for 90 seconds
  5. Sautée the cabbage and Brussels sprouts in melted butter until the cabbage is soft and has started to brown
  6. Add in some green leaves and parsley and wilt
  7. With the heat high add a splash of white wine and reduce
  8. Add some more butter and a splash of cream and reduce
  9. Add a handful of nuts
  10. Add some fried shallots
  11. Take off the heat
  12. Add some grated cheese
  13. Add some shredded lettuce
  14. Add coarsely ground black pepper
  15. Plate up and shoot a photograph
  16. Eat the meal
  17. Wash the dishes
  18. Write the recipe

A perfect low carb roast Chicken Maryland dinner

I managed to do two laps of Lake Ginninderra today, nearly 24 thousand steps. I built up an appetite on a cold winter’s day. All day I’ve been thinking of cooking and eating a low carb roast Chicken Maryland dinner.

I’ve written many times how the Chicken Maryland is my second favourite part of a chicken. That said, it often contains my favourite part of the chicken, viz., the cloaca.

Instructions
  1. In a nonstick bowl add some Brussels sprouts and almonds
  2. Add a little grapeseed oil
  3. Rub some oil into the skin of the chicken and lay on top of the Brussels sprouts and almonds
  4. Shake some chicken salt and pepper onto the chicken
  5. Place a slice of pumpkin next to the chicken
  6. Roast in a benchtop oven at 200 °C for 1 hour
  7. When finished allow the chicken to rest for 15 minutes
  8. Plate up and shoot a photograph

Low carb chili minced beef and creamy cabbage creation

The only meat I had in the refrigerator this evening was about 300 g of ground or minced beef. I also had some cabbage and mixed leaves which I’ve been using for lunches. Add to that some slivered almonds, pine nuts, various condiments, white wine, cream and cheese and I had dinner.

I like that some of the bits of beef look like little worms. If only they moved. Then it would be like eating Gagh. Apparently gagh is best eaten live

  • Ground or minced beef
  • Butter
  • Shredded cabbage leaf
  • Mixed leaves (spinach, rocket, chard)
  • Slivered almonds
  • Pine nuts
  • Chili flakes
  • Nutmeg
  • Chicken salt
  • White wine
  • Cream
  • Grated cheese
  • Fried shallots
Instructions
  1. Cook the beef in a frying pan until all the meat is brown and cooked through
  2. Add the shredded cabbage and mixed leaves and a good handful of chili flakes
  3. Cook in high to wilt and soften all the vegetables
  4. Add in a good wedge of butter
  5. Toss in a handful of nuts
  6. Shake in the chicken salt and nutmeg
  7. Add a splash of wine and reduce
  8. Add the cream and stir through and ensure it’s incorporated throughout
  9. Take off the heat
  10. Add some fried shallots and grated cheese
  11. Plate up and shoot a photograph
  12. Eat the meal

Sorry the parsley is out of focus. This was really nice. It had heat from the chili flakes, texture from the nuts, healthfulness from the greenery and manly happiness with red meat 

This is the sort of meal anyone can just put together with stuff that is in the refrigerator. It’s cheaper than takeaway and tastier I reckon. There wasn’t a lot to clean up afterwards either. In my mind it’s a winner.

Footy food for state of origin 2

Tonight’s match was the most important game of rugby league this year. Queensland needed to defeat NSW to ensure not just a series win but a set up for a clean sweep. NSW was desperate to win to set up a decider at Lang Park.

Every state of origin match like a grand final needs footy food. In fact state of origin is more important than a grand final or an international test match so the food needs to be super tasty and super simple.

I started the day with a small simple breakfast with a big dinner in mind.

For lunch I had leftover roast lamb with some cheese and leaves.

For my main meal I bought 500 grams of chicken wings. I specified the forearm equivalent, i.e., the radius and ulna and not the humerus. I reckon this has the most tender meat and when it’s cooked well it falls from the bones easily. I coated the chicken with oil and added some chicken salt, pepper and chili flakes. I put them into an oven at 150 °C for 60 minutes. I also added some Brussels sprouts and some little nubs of beef mince. To this I added some slivered almonds and pine nuts and then added a layer of grated cheese. All this is similar to what I had on the night of game 1. That night I had panko coated wings. Now that I’m doing a bit of low carb eating I’ve avoided the panko crumbs.

So this is the footy food I had tonight for game 2 of the 2015 state of origin series.

In the end New South Wales defeated Queensland 26:18. It was a bit of a lacklustre game tonight. Queensland’s defence wasn’t as good as it has been or should have been. Bring on game 3. A decider at Lang Park the home of Queensland rugby league.
