Tonight I walked from my hotel into town and through to the Hanuman Restaurant. I wasn’t sure where I wanted to eat initially and I thought it would reveal how predictable and obsessive I am, but you know what? Who cares. I like the food. I like the restaurant. It was my choice.
Tonight is game two in this year’s state of origin series. On the old blog you can find many posts about state of origin and where my allegiances lie. Needless to say the photograph of me on my about page has the Queensland flag as a background. The Maroon jumper I wear in my twitter and instagram avatars says it all QUEENSLANDER!!!
On the way home tonight I stopped at Jamison Takeaway in the Jamison Plaza and bought some potato scallops and calamari rings to snack on while I cooked my dinner.
Sorry it’s a little blurry. I was so excited about eating them 🙂
A need to do a shout out to the lovely ladies at the Jamison Takeaway. They always give me an extra potato scallop. They are the best.
For dinner I made honey soy chicken wings. They make great footy food. Click on the image if you want to see a bigger version.

Ingredients
Chicken wings
Honey
Soy sauce
Olive oil
Sherry
Dessicated coconut
Sesame seeds
Chilli flakes
Pepper
Instructions
In a bowl add the chicken and everything else
Mix well and allow to rest for ten minutes
Put into a preheated oven (150 °C) for one hour
Plate up
Capture an image with a Nikon D5300 and a Tamron 90 mm Macro lens at 1/25 seconds, f/8 and ISO 100
Eat the food while watching the pregame highlights
Wash the dishes
Write the blog post
Enjoy the game

Delicious Chicken Maryland is my favourite piece of roasted chicken for a meal. It contains the juicy tender dark meat of the thigh and the fun of meat on a stick in the drumstick. If you’re extra lucky you get the cloaca too for an extra special treat.
Place about ⅓ cup of quinoa and rice into the bottom of the roasting tray
Add ⅔ cup of water to the roasting tray
Place a rack in the roasting tray and add the Chicken Maryland which has been rubbed with olive oil, salt and dried mixed herbs
Place the chicken into an oven at 150 °C for 1 hour (use a meat thermometer to ensure food safety)
Cut the potato, sweet potato and capsicum into wedges or batons
Dice some classic SPAM®
Finely dice some jalapeño pepper
Put the jalapeño pepper, potato, sweet potato, capsicum and SPAM® into a large bowl and mix with some olive oil, grated cheese, cracked black peppercorns, and a dash of Worcestershire sauce
Lay out the vegetables onto some baking paper on an oven tray
Place the vegetables into the oven on another shelf with the chicken and cook for 1 hour
Pull the chicken out of the oven and make sure the meat thermometer has achieved the correct cooking temperature to kill most vegetative bacteria (this is 75 °C according to chicken.org.au)
Allow the chicken to rest for about 20 to 30 minutes (resting is really important, it helps ensure a succulent flesh)
Scoop out the quinoa and rice from the baking tray and place half in a bowl in the refrigerator for lunch the next day with some salad leaves.
Keep the rest of the quinoa and rice warm to serve with the chicken and vegetables
Hopefully you’ve timed the cooking of the vegetables to coincide with the end of the resting period of the chicken
When the chicken is rested plate up the vegetables onto a plate, then place the rice and quinoa next to the vegetables. Finally add the chicken.
If you are French you probably made a sauce and lots of it to enjoy with the chicken, me, I’m an Australian. We don’t need sauce.

Regular readers know I love the cloaca roasted nice and crispy, but failing that, my favourite meat is the dark thigh meat. Having a drumstick on it to make a Chicken Maryland is okay too but it’s really the thigh meat. I also like chicken wings, roasted in a hot oven.
Besides oven roasting how else do you like cooking chicken?
When making chicken curry, I like using a slow cooker and making a nice full bodied curried chicken.
Skin off or skin on?
Is that a serious question? I love chicken skin. One of my favourite things is deep fried chicken skin as a snap with dip. I seriously like fried chicken and crispy chicken skin. One of my favourite Chinese dishes is a boiled chicken that has had boiling fat poured on it to crisp up the skin. It’s amazing.
Why does everything taste like chicken?
Well, it doesn’t really. Beef tastes like beef, lamb like lamb and pork like pork. I’ve eaten crocodile and it didn’t taste like chicken.

I’ve just got home (Canberra) after a busy weekend in Brisbane to see my daughters. May is a big month for us, my father’s birthday is in May, my eldest two daughters both share a birthday in May (two years apart), it’s mothers day in May and my birthday is in May.
I arrived late Friday night and the girls were already in ‘bed’ ready to sleep. They had a big Saturday ahead of them.
On Saturday we got out of bed at 5 am and ate a quick breakfast. I had peanut paste on toast (I didn’t have time for a low carbohydrate meal) while the two youngest ones had Mum’s lemon curd on toast. We had to be on the road by 6.30 am and on our way to Yatala for the QGSSSA Cross Country championships. Athletics is not the favourite sport for Miss13 and Miss17 however, as all rounders they compete in as many sports as possible. The meet is held at Rivermount College which isn’t part of the QGSSSA. The college is at Yatala near the Gold Coast.
Just thinking back a bit, when I arrived Friday night I discovered that a tube of moisturiser (yes I have Ichthyosis) had ‘exploded’ in my bag and the shirt I was going to wear had been ruined. Mum said I should wear one of Dad’s shirts. She also said it would be warm so short sleeves wouldn’t be a problem. I always listen to my mother.
So we arrive at Yatala and it’s cloudy and cold. I’m shivering. Thanks Mum 🙂
The girls run well and enjoy themselves. The next stop is the Sleeman Sports Complex in Chandler. We have to get Miss17 there for gymnastics training. Even though she didn’t make the Queensland team this year she’s allowed to compete at the national championships this week in Melbourne. She has to train at Gymnastics Queensland headquarters in Chandler. Before we get there though, Miss17 suggests a spot of morning tea at Yatala Pies.
Yatala Pies is a bit of an institution in South East Queensland. Their pies are known far and wide. Funnily enough I’ve never eaten in the Yatala Pies shop. This was a first.
Miss17 had a curry chicken and vegetable pie, Miss13 had a sausage roll and I elected to have a pasty. It’s been ages since I’ve had a good pasty. This one didn’t disappoint. I loved it.
Now regulars readers know me so it shouldn’t be any surprise that when I saw Vanilla slice I had to have one. Yatala Pies sells French Vanilla slices with a whopping big layer of French vanilla cream. It was gorgeous.
After a lot of driving back and forth between Chandler and Chermside it was a long tiring day. After getting the kids back to my parents’ place it was time to cook our special May dinner to celebrate so many birthdays and mothers day.
I said to Mum that I wanted to cook salmon and would be wonderful is Miss17 could make a salad. I also made a pumpkin cauliflower mash which I used to smear the plate and perch the salmon on.
For dessert, Miss17 had made an ice cream cake. The base was made with Ferrero Rocher, Chocolate Mint and Queensland nut (Macadamia) ice creams. The top had a combination of mixers added to make it a cake to remember.
After dinner we watched The Hunger Games on DVD. I’d never seen it before. It was good.
After a good night’s sleep Miss19 joined us after a busy weekend of working and studying. We had planned a special breakfast together. My daughters and me 🙂 We decided to head to Groove Train at Chermside because it was close and the last time we were there we enjoyed the food.
