What I ate this week

It’s been a busy week. I’ve had a rental inspection and I’ve had to pack up my work space for building maintenance. There’s also been work. There’s also been some fun. I’m still enjoying learning more of what has happened over the last forty years from friends from Stafford Heights State School.

Pulled pork

Last Sunday I made some pulled pork in the slow cooker and rejoiced in the knowledge that I would have plenty left over for lunches.

I had toasted sandwiches made with raisin toast and cheese. Some people questioned my use of raisin toast but I explained that pork loves fruity sweetness. Some queried my use of cheese (Swiss and Gouda) and I explained that it’s a toasted sandwich and so it must have cheese.

I also used some of the leftover pulled pork in Friday night nachos after being inspired by blogger and YouTube star Hilah Johnson.

Salmon

As is tradition I enjoyed Salmon on Monday and Tuesday evening. I have taken a liking to frying ramen noodles and eating them with my salmon.

Cheerios

Wednesday evening was the third State of Origin game between the XXXX Queensland Maroons and the Victoria Bitter New South Wales Blues.

For dinner I had cheerios and macaroni cheese.

It was marvelous to see Cam Smith raise the shield above his head. Queensland have won 10 out of the past 11 contests.

Fish tacos

Thursday was pay day and as is my want I bought lunch. I bought fish tacos from Urban Bean Espresso Bar. They were quite nice. The sweet potato batons were also very nice.

I was still hungry on Thursday night and ate two Chicken Maryland pieces served on some pearl couscous along with an avocado.

After the baos I enjoyed a butcher’s board at Marble and Grain with some Wagyu rump, lamb rib, bone marrow, venison sausage, black pudding and chorizo stuffed onion.

Meat pie

I like Garlo’s meat pies. This was a beef and mushroom pie with some Worcestershire Sauce injected into it before cooking and some Havarti cheese laid on top to melt.

Coles leftover pulled pork nachos

So tonight’s Coles leftover pulled pork nachos is inspired by a friend on Twitter. Hilah Johnson is a blogger from Texas (although she now lives in California with husband Chris and son Flint). Hilah is best known for her YouTube channel “Hilah Cooking“. She has a spin off series called “put it in my mouth” which shows Hilah receiving snacks from fans from around the world and she reviews the food. Hilah also sells eBooks and I think her best ones are her taco books.

So this morning Hilah is tweeting about making nachos and that got me to thinking about how to use up some of my leftover pulled pork. I’ve had pulled pork with cheese between toasted raisin toast three times this week and as much as I like it I need to try something else. The comments on Instagram have been interesting. I reckon pork loves fruity sweetness (like apple sauce) and so the raisin toast is a perfect carrier for a pulled pork sandwich.

Ingredients

So here’s what you need for Coles leftover pulled pork nachos

  • Corn chips
  • Pulled pork
  • Cheese (I like Coon)
  • Red onion
  • Jalapeño pepper
  • Chilli
  • Spring onion
  • Barbecue sauce or whatever sauce you fancy

How to put it together

  1. Heat the oven to 200 °C (that’s 400 °F)
  2. Lay out the corn chips on a baking tray with some baking paper
  3. Place the leftover pulled pork on the chips
  4. I didn’t both removing any of the fatty bits, I figure the flavour is in the fat
  5. Add some red onion (aka Spanish onion and by Spanish I don’t mean Spanish)
  6. Add some grated cheese, I use Coon because I like Coon but you could use Coles tasty or any other cheddar cheese
  7. Drizzle over some barbecue (or if you can’t spell BBQ) sauce [would you believe in grade 6 I was marked incorrectly in a spelling test for using BBQ instead of barbecue]
  8. Bake for 10 minutes
  9. Add spring onions and chives and fresh chilli to taste
  10. Serve with caramelised onion
  11. Eat while watching the footy

It’s been a fun week

School reunion

Well not quite. It’s been a fun week thinking about the primary school I attended, viz., Stafford Heights State School is celebrating 60 years of teaching primary school students this year. A reunion event is planned for September. Facebook is being used to share the love and information. It’s been really interesting seeing a lot of old photographs from school including sporting team photos and others. I’ve been added to a Facebook Messenger group for people who attended from 1971 to 1977. It’s been a lot of fun catching up with some people who I have not seen or spoken with for around 40 years.

I wrote a couple of pages of memories which got a few people chatting. One of the things I mentioned was the first girl I kissed and girls I had a crush on at school. Then there were my memories of playing hockey, cricket and rugby league. It’s not surprising as we all get older than some of us have a few medical complaints ranging from bad knees and shoulders, deafness and sight problems.

What I ate and did this week

It’s been a good week. A busy week but a good week. Yesterday an election was held to determine the Australian government. Unlike the previous election when the conservative coalition (Liberal Party and National Party) won convincingly, we still do not know which party will govern and who our Prime Minister will be. Under our ‘caretaker’ conventions, a new government, the 45th government, will not be sworn in until the result is clear. Counting will resume on Tuesday so we will continue to wait. Last week I mentioned how I voted early to avoid crowds and queues. I had thought I may attend a polling venue or two to check out the sausage sizzles and cake stalls. It was interesting to read on Twitter how many people went for a #democracysausage Twitter was pretty cool in that when #ausvotes was used a little character of a sausage on a piece of white bread would appear in the tweet.

Yesterday a Facebook friend and I were discussing VLOGging so I had a go. I’m sorry about the volume changing midway. I’m not sure if I’ll do more, but it was pretty easy. My only problem is that the upload speeds I get with Telstra ADSL is pretty slow and it takes hours to upload a short video to YouTube.

Friday was a funny day (funny in a good way). I turned up to work (Fridays are my clinical duties day, I’m an Honorary Visiting Medical Officer in ACT Pathology at The Canberra Hospital) and noticed my laboratory coat was hooked over three hooks. I thought that was a little unusual. I continued to my work area and then I saw an old photograph from my Facebook profile on a whiteboard. It’s an old photograph that had been altered by a former work colleague in 2010. A mullet had been added and my head was put on another person’s neck. It looks pretty funny. As I continued I found copies in all sorts of unusual places, behind doors, on doors, in draws, under keyboards, on staplers, and you guessed it behind my laboratory coat. It’s nice to be considered by my work mates as someone worthy of having fun.

I don’t have a heap of food photographs from this week. I was a little unwell early in the week and didn’t feel like eating much or photographing my food.

It feels like it has been a long week. Last week  and the week before were relatively short in the sense I was travelling for work.

It was also a big week in other respects. I attended a dinner to farewell a very senior colleague and the same night the mighty Queensland XXXX Maroons defeated the New South Wales cockroaches in the second game of this years State of Origin series. Given Queensland won the first game this means another series victory for the Maroons and this time on home soil at Lang Park. It was hard not to wear a smile on my face for days. I’m still smiling.

I’m very grateful to my friends and family who kept me updated via text messages throughout the evening.

I also voted yesterday. The election is next week but I thought I’d get it over a week early to avoid the crowds and queues. The only thing I missed out on was a sausage sizzle and cake stall. I enjoy voting. I take my time and ensure I mark every box, I don’t just mark the easy options along party lines.
