Taco Saturday

Have you ever had a Taco Saturday and eaten tacos for breakfast, lunch and dinner? Today I had tortillas filled with goodness three times. This extravaganza was inspired by a blogger friend Julie who is currently on a camping holiday. We started a discussion in the comments of a recent post and the notion of breakfast tacos was raised. It cascaded from there.

 

This morning started well with a panorama of the sunrise.

I went for a walk to build an appetite.

My breakfast taco was made with a line of cheesy potato gems (tater tots for my US friends), streaky Pialligo Estate Artisanal bacon and creamy buttery scrambled eggs.

After some grocery shopping I needed my lunch taco which contained smoked salmon with a guacamole laden with chilli.

After lunch I needed to make some purchases and walked by the lake. I had noticed an abandoned car on my morning walk.

I also spent some time sitting on a bench day dreaming.

For dinner I had some Coles pulled pork and made some macaroni cheese from scratch.

Weekend recovery

A weekend recovery is what I needed. I’ve recently spent two weeks in Manila for work and ended up getting respiratory and gastrointestinal illnesses. Suffice to say I still have a hacking cough which has also given me a sore back and my bowels still feel a little delicate although I feel a lot better now that I can control what I’m eating and breathing fresh air.

On Thursday night I watched Maeve O’Meara on Food Safari on SBS and she did a segment on Pialligo Estate artisan bacon. It’s my favourite bacon. It’s also local bacon smoked in Canberra. I decided I buy some for the weekend.

Friday night I made myself chicken thigh schnitzel burger inspired by Hilah Johnson.

For Saturday breakfast I made myself a Pialligo Estate streaky bacon and fried egg roll.

For lunch I felt like some raw onion and coleslaw with cream cheese

I felt well enough on Sunday to go for a walk around Lake Ginninderra

But for breakfast I had some melted cheese on toast

For lunch after I did my ironing and watched an episode of Star Trek TNG I made myself a Pialligo Estate streaky bacon cheeseburger

For dinner on Sunday I slowly roasted some blade beef with some quinoa and vegetables. I had enough left over for two more meals.

The meat just fell apart as I pressed down with my knife.

Yummy Lummy cauliflower soup with Pialligo bacon and gorgonzola

Tonight I got home a little early and made cauliflower soup

It’s been quite cold over the last week so what could be better than some home made soup with enough left over for lunch the next day.

This is a dead easy way to cook cauliflower soup
Ingredients
  • Cauliflower
  • Pepper
  • Chicken stock
  • White wine
  • Bacon
  • Spring onion
  • Grapeseed oil
  • Mushrooms
  • Gorgonzola cheese
  • Smoked cheddar cheese
  • Parsley
  • Curry powder
  • Pouring cream
Instructions
  1. Prepare your ingredients by cutting the bacon into thin strips, slice the spring onion, slice the mushrooms, chop the parsley, break up the cauliflower and crumble the Gorgonzola and smoked cheddar cheeses
  2. Sautée the bacon and spring onion in a little grapeseed oil in a stainless steel saucepan
  3. Make sure you get it nice and browned off
  4. Add the mushrooms and soften with the heat
  5. Deglase with a good splash of white wine and cook off the alcohol
  6. Add the curry powder
  7. Add the cauliflower florettes and then add a little boiling water and chicken stock
  8. Simmer for 20 minutes and make sure the cauliflower is softened so you can mash it with a spoon
  9. Drain off most of the water
  10. Blend with a stick blender and add pouring cream
  11. Reheat to bubbling
  12. Take off the heat and add the cheeses
  13. Aliquot some into a microwave sippy cup for lunch and put in the refrigerator
  14. Pour the rest into a big bowl
  15. Garnish with some extra parsley
  16. Capture an image (I used a Nikon D5300 and a Tamron 90 mm Macro lens at 1/200 seconds f/5.6 and ISO 100)
  17. Enjoy the soup
  18. Wash the dishes
  19. Write the recipe and blog about it
  20. Share on various social media platforms like twitter and facebook
  21. Hopefully people will like the recipe and write a nice comment

What I ate and did this weekend

I’ve had a good weekend. I’ve been doing a two day learning course on Adobe Lightroom and Adobe Photoshop. I’ve been using Lightroom for a couple of years but I know very little about Photoshop. It was a really good experience. The weekend was arranged by the Canberra School of Photography and the teacher was David Harradine. I’d happily recommend courses by Irene Lorbergs at CSP and David from whack.com.au

I’ve also eaten well this weekend mind you at the course I ate nut muesli bars, potato chips and diet coke.

Brodburger is a like an institution in Canberra and they’ve opened another food truck this time specialising in hot dogs.

I went for a walk earlier this morning and deviated from the normal path by seeking out the BrodDogs food truck in one of the car parks of the Belconnen Westfield shopping centre. Tara had given everyone the heads up on Twitter
