Bacon or salmon

Well it’s not really a question of bacon or salmon. Occasionally it can be bacon and salmon.

I came home early today with ManFlu which gave me an opportunity to focus on work e-mail and do some reading. The World Health Organization (WHO) recently released a report from the International Agency for Research on Cancer (IARC) on the potential causal relationship between the consumption of red meat and processed meat with neoplastic diseases. The paper in Lancet Oncology is available for free. The IARC paper’s authors reported that processed meat can cause bowel carcinoma and red meat probably causes bowel carcinoma. This doesn’t mean if you eat a tin of spam or eat a sausage you’ll develop bowel carcinoma nor does it mean you cannot enjoy a good steak or pork chop occasionally. In my mind if these are occasional treats I’m going to make sure I focus on quality rather than quantity.

What it does mean, and none of this is new information, is you shouldn’t eat bacon everyday but one or two rashers a week is probably okay. A small steak once a week is probably okay too. It also means we need to eat more fruit and vegetables.

What does it mean for me as a lover of red meat and SPAM? Well as I’ve written recently I’m taking my health a little more seriously especially after the faecal occult blood test gift from the government and my first colonoscopy which thankfully didn’t find a bowel carcinoma (yet). With an eye on blood biochemistry and bowel health I’ll still occasionally indulge in bacon and SPAM. After all Canberra boasts Australia’s best artisan bacon and my shelf of shame has three tins of SPAM after so much fun on the Hawaiian holiday adventure.

So tonight I just had salmon mainly because I felt unwell and just wanted something simple. Click on the photograph and you’ll see a short time-lapse video of me eating this bad boy.

A lot of my friends in university ate a lot of instant noodles instead of proper meals. I’ve seen documentaries where instant noodles form the basis of a whole cuisine for some people. I like them but I don’t love them. That said, I always have some in the shelf of shame because they’re cheap and I couldn’t be bothered buying fancy noodles.

Tonight I baked some salmon, flaked it and added it to some noodles for a filling meal for one.

How to make dinner with salmon and instant noodles

Ingredients
  • Salmon 1 fillet with the skin on
  • Kale coleslaw from Coles
  • Yoghurt with chia
  • Sesame seeds
  • Pumpkin seeds
  • Parsley
Instructions

  2. When it’s cool enough to touch flake the salmon
  3. Make the noodles as per the packet instructions
  4. As the noodles are cooked add a handful of kale coleslaw
  5. Drain the noodles and vegetables and put them in a bowl
  6. Add the flaked salmon, yoghurt, sesame seeds and pumpkin seeds
  7. Stir carefully to avoid breaking up the noodles
  8. Put into a nice bowl and garnish with parsley
  9. Shoot a photograph
  10. Record a time-lapse video as you eat
  11. Wash the dishes
  12. Write the recipe

Hot and spicy spam while watching #MKR

When I recently posted a meal with spam in it on instagram I received a lot of comments that Coles and Woolworths had cans of spam on special. As part of my Saturday routine grocery shopping I went for a look in the tinned meat aisle and found what I was looking for for my shelf of shame.

Annie and Lloyd are cooking tonight on MKR. The colour of the cooked hot and spicy spam reminds me of Annie’s blush.

I’ve only ever purchased the regular spam and never any of the fancy varieties. When I say fancy varieties I think in Australia there is only low sodium, hot and spicy and bacon spam.

So tonight I had a salmon fillet and I thought rather than fried rice I’d do spam and quinoa along with a refreshing salad.

Ingredients
  • Salmon
  • Hot and spicy spam
  • Quinoa
  • Fennel
  • Parsley
  • Red onion
  • Capers
  • Pomegranate arils
  • Mango
  • Avocado
  • Lime juice
Instructions
  1. Cook the quinoa in chicken stock
  2. Cook the salmon in a really hot pan for five minutes with the lid on. Have the diced hot and spicy spam in the frying pan too
  3. Prepare the salad while the quinoa is cooking
  4. After the quinoa has drained and cooled add the hot and spicy spam
  5. Let the salmon rest
  6. Plate the salad
  7. Add the mixed quinoa and hot and spicy spam
  8. Place the salmon on top
  9. Shoot a photograph
  10. Eat the dish
  11. Do the dishes
  12. Write the recipe
