Slow-cooked pork knuckle with fresh egg fettuccine, tomato sauce and steamed broccolini
Ingredients
- Coles slow-cooked pork knuckle.
- Latina fresh egg fettuccine.
- Broccolini
- Diced tomatoes
- Black olives
- Olive oil
- Onion
- Garlic
- Red wine
- Basil
- Oregano
- Mushrooms
Instructions
- Follow the instructions for use on the box of the pork knuckle.
- Follow the instructions for use on the packaging of the fettuccine.
- Sautée onions and garlic in some olive oil.
- Add the tin of tomatoes and bring to a simmer.
- Add in some roughly torn basil, olives, oregano, and some hand broken mushroom caps.
- Add in a splash of red wine, simmer, and reduce a little.
- Add the cooked fettuccine to the sauce and thoroughly amalgamate everything.
- Steam the broccolini.
- Plate up with the pork knuckle meat, pork crackling, and broccolini.
- Garnish with some basil and shaved parmesan.
