Doing it again with baked salmon and creamy Brussels sprouts

So last night I made what I thought was an amazing baked salmon with creamy cabbage. I had an extra piece of salmon and I figured if it was good enough last night I’d repeat it tonight with a slight twist. Regular readers will have noticed my fondness of Brussels sprouts so I thought I’d combine the baked salmon with creamy Brussels sprouts.

A yummy delicious way to enjoy a wonderful vegetable that for some reason so many people dislike.
Ingredients
  • Salmon
  • Soy sauce
  • Grape seed oil
  • Cabbage
  • Brussels sprouts
  • [cap id=”attachment_12304″ align=”alignnone” width=”980″][img src=”https://yummylummy.com/wp-content/uploads/2015/06/2015-06-12_16.56.20_001_GARY_LUM_FB-1024×683.jpg” width=”980″ height=”654″ class=” size-large” title=”Brussels sprouts” alt=”A close up of Brussels sprouts”]Brussels sprouts close up[/cap]
  • Bacon pieces
  • Slivered almonds
  • Pine nuts
  • Ground nutmeg
  • Chicken salt
  • White wine
  • Cream
  • Butter
Instructions
  1. Add some oil to the plastic bag containing the salmon
  2. Rub in the oil
  3. Place the salmon on a baking tray lined with baking paper
  4. Drizzle a little soy sauce on the salmon (this will create a sticky crispy layer under the skin)
  5. Bake in a benchtop oven at 200 °C for 15 minutes
  6. Slice one cabbage leaf and cook in the microwave oven for 1 minute with four Brussels sprouts and bacon pieces
  7. In a frying pan add some oil and a good slice of butter
  8. Turn up the heat and add he drained cabbage, Brussels sprouts and bacon pieces
  9. Cook the vegetables until the liquid is boiling and the water evapourates away
  10. Add a small handful of slivered almonds and pine nuts
  11. Shake in a little bit of chicken salt
  12. Shake in a little ground nutmeg
  13. With the heat on high add a splash of white wine
  14. Reduce away the white wine then add a splash of pouring cream
  15. Reduce to a sauce
  16. Pour the creamy Brussels sprouts sauce into a bowl
  17. Add the salmon on top
  18. Shoot a photograph
  19. Eat the meal
  20. Wash the dishes
  21. Write the recipe

I know a lot of people complain that Brussels sprouts are bitter and yucky. I think if you pick them young and cook them gently the bitterness isn’t a problem. Obviously using some bacon, butter and cream will provide a rich lusciousness that coats the tastebuds.

I can highly recommend this way of cooking some salmon and creamy Brussels sprouts.

It’s been a long day at work. I got home around 7.30 pm and tore into the refrigerator to pull out a piece of salmon. I’ve been thinking of baked salmon all day. I still hadn’t fully formed in my mind how I was going to cook it but as I got undressed it dawned on me to to use some spinach, rocket and chard leaves along with some sliced cabbage.

The texture tonight came from the nuts in the creamy sauce along with some crunch from the cabbage.

There was also texture in the skin of the baked salmon with the sticky crispy skin.

This is a dish that needs a good amount of seasoning and it brings out the flavours and textures.

I reckon this is the best way to cook chicken wings. It’s super easy and relatively quick allowing you time while the chicken in in the oven to attend to other important things in life like take rubbish (garbage) to the bin or sitting down and having a drink and relaxing while the news is on TV.

Like with most cooking, low and slow is best. Unlike a weekend, on a weekday after work you can’t afford to do real slow cooking unless you use a slow cooker and have it on at home in the kitchen while you’re at work constantly worrying if your rented apartment is on fire and there are firefighters picking through the debris.

Ingredients
  • Chicken wings [try to get the midsection winglets, I reckon it’s the most tender part and has the sweetest flesh]
  • Brussels sprouts [I pick five to avoid a carbohydrate overload from these delicious little green balls]
  • Pepper
  • Chili flakes
  • Grape seed oil
  • Fennel
  • Parsley
  • Mint
  • Radish
  • Red onion
  • Lime juice
  • Mayonnaise
Instructions
  1. In the plastic bag the chicken came in add the Brussels sprouts and a good plash of oil
  2. Rub the oil all over the chicken and Brussels sprouts through the bag
  3. Add in some salt and pepper [you can use chicken salt if you like too]
  4. Empty the bag onto a baking tray lined with baking paper [for ease of cleaning]
  5. Put the baking tray into an oven at 150 °C for 1 hour [in my mind this is low and slow, it ensures well cooked (safe) and tender chicken]
  6. At the end of the hour remove the chicken and Brussels sprouts from the oven and allow the roasted meat and vegetable to rest for at least 10 minutes
  7. While the roasted meat and vegetable are resting prepare a small fennel salad with fennel, parsley, mint, radish, red onion, lime juice and a teaspoon of full fat mayonnaise [not that full fat mayonnaise is low carb while light mayonnaise replaces the fat with sugar]
  8. Plate up on a plate
  9. Shoot a photograph
  10. Eat the meal
  11. Wash the dishes
  12. Write the recipe

Tips and tricks

  • If you’re interested in keeping to a low carb way of eating, avoid ‘light’ or ‘lite’ foods. Fats tend to be replaced with sugars.
  • Buy chicken winglets in a plastic bag rather than by a cling wrapped plastic tray. The plastic bag the chicken comes in helps you coat the chicken with oil plus condiments. Once you’re at a stage when you can add some carbs, the plastic bag is a great way to add bread crumbs (preferably panko crumbs) or flour.
  • Coating the Brussels sprouts in a little oil and roasting reduces the bitter taste some people complain of with Brussels sprouts

3 delicious low carb meals

I really need to lose weight. The only successful way I’ve lost weight has been to take a low carb approach. Whether this goes on or not will depend on motivation. Today I was motivated.

The thing about low carb eating is that it isn’t as easy as it sounds. You may think it’s all bacon and eggs and meat but it isn’t. It’s important to carefully choose vegetables and during the initial induction phase it’s important not to eat fruit. The big risks in the induction phase are constipation and gout. Both are uncomfortable and painful. Whether I continue depends on how I feel.

For breakfast I prepared a low carb fried egg, bacon and parmesan cheese dish.

I really like cooking my bacon in a small benchtop oven which allows easy melting of cheese.
