Australian London Broil

This morning I was reading Doug’s blog Carnivore Confidential and he shared an explanation of a London broil. At the time I just thought it was interesting and commented that I prefer the Canadian version because of the pork sausage stuffing in the tenderised beef.

While I was at work I was thinking for dinner I would be cooking a chicken thigh atop Brussels sprouts and a slice of pumpkin. Something quick and easy after what I knew was going to be a slightly longer day than normal.

When I got home I went to remove the chicken thigh from my refrigerator and started to panic when I couldn’t find it. I thought I may have left it in the boot (trunk) of my car and in the cold weather there had been no smell (of putrefying animal flesh by lovely anaerobic bacteria). I then thought back to what I’ve eaten since grocery shopping on Saturday. I couldn’t remember so I went to my Instagram feed to take a look. Sure enough on Saturday night I had eaten the chicken thigh.

So what to cook for dinner? I had some chicken wings but the wings are for Wednesday night. I spied some beef mince and lup cheong. Then it came to me! Pork stuffed beef just like Doug’s London broil. Well not at all anything like Doug’s broil but still inspired by Doug.

Ingredients
  • Beef mince
  • Lup cheong
  • Brussels sprouts
  • Butter
  • Grape seed oil
  • Tasty Coon cheese
  • Pumpkin
Instructions
  1. Wrap two lup cheong with beef mince (ground beef)
  2. Rub in some oil
  3. Place five Brussels sprouts into a non-stick bowl and lay the beef mince lup cheong on top
  4. Lay a slice of Tasty Coon cheese on top
  5. Pop this into an oven at 180 °C for 1 hour along with a slice of pumpkin
  6. After 1 hour allow the meat to rest for 10 minutes
  7. Plate up
  8. Shoot a photograph
  9. Eat the dish
  10. Wash the dishes
  11. Write the recipe

How would you go about making an Australian London broil?

Baked salmon, Brussels sprouts, bacon and parmesan

Even though I’ve technically stopped salmon Mondays, I still find myself cooking salmon on a Monday. Tonight I made a baked salmon dish and supplemented it with my trendy vegetable for the moment, viz., Brussels sprouts. Even Not Quite Nigella has recently celebrated Brussels sprouts. What better way to celebrate the official birthday of Her Majesty, Queen Elizabeth II than with a favourite vegetable.

I’m still on my low carbohydrate kick and have noticed after a week of losing lots of water that my trousers have stopped their rebellion. It’s been good to know that I don’t have to go out and use my Lowes discount card on more trousers.

This is a quick and easy low carbohydrate meal which is full of flavour and very nutritious.
Ingredients
  • Salmon fillet with skin on
  • Brussels sprouts
  • Streaky bacon diced
  • Parmesan grated
  • Butter
  • Chili flakes
  • Pepper
  • Salt
  • Grape seed oil
Instructions
  1. Rub some butter inside a small oven dish
  2. Add the Brussels sprouts and bacon
  3. Top with some grated parmesan cheese
  4. Add some chili flakes and pepper
  5. Bake in the oven at 150 °C for 1 hour
  6. In the plastic bag containing the salmon add some oil and rub all over the salmon
  7. Put the salmon on a tray lined with some baking paper
  8. Add some freshly ground pepper and sea salt
  9. Once the Brussels sprouts have cooked put the salmon in the oven for 15 minutes and turn it up to 200 °C
  10. Plate up artistically on a plank of wood and try to make it look fancy

How do you like to cook a baked salmon dinner?

Today is the last day of Autumn, tomorrow Winter starts officially. When I woke up at about 4 am it was close to zero degrees Celsius. I went out for a walk and spent the time thinking of tonight’s roast lamb shoulder.

Ingredients
  • Butterflied shoulder of lamb
  • Rosemary cut from the roadside
  • Lime wedges
  • Onions
  • Flat mushrooms
  • Pepper
  • Grape seed oil
  • Brussels sprouts
  • Cauliflower
Instructions
  1. In a baking tray add the meat, cut onions, lime wedges, rosemary sprigs and mushrooms
  2. Add salt and pepper
  3. Cover the baking tray with aluminium foil and make a tight seal
  4. Put into an oven at 150 °C for 3 hours
  5. Wrap the cauliflower and Brussels sprouts in aluminium foil along with some olive oil and wait for 2 hours before putting it into the oven with the meat
  6. At the 3 hour mark remove the meat and vegetables
  7. Let everything rest at room temperature for 30 minutes
  8. Carve the meat
  9. Plate up
  10. Save the rest of the meat and vegetables for work lunch

  12. Eat the meal
  13. Wash the dishes

The meat should just melt in your mouth. I could have added some bacon pieces to the cauliflower and Brussels sprouts but you don’t want too much of a good thing.


So what else did I do today. Well after a walk and breakfast I went in to work to do something for tomorrow. In the afternoon I ironed and watched Star Trek The Next Generation episodes from season 5.
