Coles leftover pulled pork nachos

So tonight’s Coles leftover pulled pork nachos is inspired by a friend on Twitter. Hilah Johnson is a blogger from Texas (although she now lives in California with husband Chris and son Flint). Hilah is best known for her YouTube channel “Hilah Cooking“. She has a spin off series called “put it in my mouth” which shows Hilah receiving snacks from fans from around the world and she reviews the food. Hilah also sells eBooks and I think her best ones are her taco books.

So this morning Hilah is tweeting about making nachos and that got me to thinking about how to use up some of my leftover pulled pork. I’ve had pulled pork with cheese between toasted raisin toast three times this week and as much as I like it I need to try something else. The comments on Instagram have been interesting. I reckon pork loves fruity sweetness (like apple sauce) and so the raisin toast is a perfect carrier for a pulled pork sandwich.

Ingredients

So here’s what you need for Coles leftover pulled pork nachos

  • Corn chips
  • Pulled pork
  • Cheese (I like Coon)
  • Red onion
  • Jalapeño pepper
  • Chilli
  • Spring onion
  • Barbecue sauce or whatever sauce you fancy

How to put it together

  1. Heat the oven to 200 °C (that’s 400 °F)
  2. Lay out the corn chips on a baking tray with some baking paper
  3. Place the leftover pulled pork on the chips
  4. I didn’t both removing any of the fatty bits, I figure the flavour is in the fat
  5. Add some red onion (aka Spanish onion and by Spanish I don’t mean Spanish)
  6. Add some grated cheese, I use Coon because I like Coon but you could use Coles tasty or any other cheddar cheese
  7. Drizzle over some barbecue (or if you can’t spell BBQ) sauce [would you believe in grade 6 I was marked incorrectly in a spelling test for using BBQ instead of barbecue]
  8. Bake for 10 minutes
  9. Add spring onions and chives and fresh chilli to taste
  10. Serve with caramelised onion
  11. Eat while watching the footy

It’s been a good week. A busy week but a good week. Yesterday an election was held to determine the Australian government. Unlike the previous election when the conservative coalition (Liberal Party and National Party) won convincingly, we still do not know which party will govern and who our Prime Minister will be. Under our ‘caretaker’ conventions, a new government, the 45th government, will not be sworn in until the result is clear. Counting will resume on Tuesday so we will continue to wait. Last week I mentioned how I voted early to avoid crowds and queues. I had thought I may attend a polling venue or two to check out the sausage sizzles and cake stalls. It was interesting to read on Twitter how many people went for a #democracysausage Twitter was pretty cool in that when #ausvotes was used a little character of a sausage on a piece of white bread would appear in the tweet.

Yesterday a Facebook friend and I were discussing VLOGging so I had a go. I’m sorry about the volume changing midway. I’m not sure if I’ll do more, but it was pretty easy. My only problem is that the upload speeds I get with Telstra ADSL is pretty slow and it takes hours to upload a short video to YouTube.

Friday was a funny day (funny in a good way). I turned up to work (Fridays are my clinical duties day, I’m an Honorary Visiting Medical Officer in ACT Pathology at The Canberra Hospital) and noticed my laboratory coat was hooked over three hooks. I thought that was a little unusual. I continued to my work area and then I saw an old photograph from my Facebook profile on a whiteboard. It’s an old photograph that had been altered by a former work colleague in 2010. A mullet had been added and my head was put on another person’s neck. It looks pretty funny. As I continued I found copies in all sorts of unusual places, behind doors, on doors, in draws, under keyboards, on staplers, and you guessed it behind my laboratory coat. It’s nice to be considered by my work mates as someone worthy of having fun.

I don’t have a heap of food photographs from this week. I was a little unwell early in the week and didn’t feel like eating much or photographing my food.

So last month I wrote about Coles Pulled Pork and then earlier this week I was watching Greg’s Kitchen on YouTube and he was reviewing the KFC Pulled Pork Roll.

Greg hated it. I thought I’d make my own pulled pork roll using some Coles pulled pork. What could be easier? I also bought a soft bread roll, some caramelised onion and coleslaw to go on my roll.

The roll was pretty easy to make. I toasted the bread roll and then layered on the coleslaw, pork and caramelised onion.

The whole thing was delicious. The roll wasn’t sweet like the KFC one and pork was tasty and tender. I liked the caramelised onion too.

If you like pulled pork I suggest not buying a fast food version. Even buying ready made pulled pork is better than that.

 

Cheesy pulled pork toasted sambo

What could be better than cheesy pulled pork on a sandwich?

Check out my cheesy pulled pork sambo. This is a fantastic way to finish off some leftover pulled pork. Next time I may do it with macaroni cheese.

I tried to use cheeses that I knew would melt well. I went with Swiss and Colby cheeses. Because I have to use a communal toasted sandwich maker at work, I always wrap my sambos in baking paper before packing them in a lunch box. Today I had a little cheese and olive oil on the outer surfaces of the pumpkin bread to make it extra crunchy.

This was delicious and four slices of cheese had it coming out the sides getting crispy on the outside. The baking paper kept it all together and avoided any mess so the next person won’t get a contaminated sandwich.

Have you ever wondered what Coles pulled pork is like? Well I bought some and want to share my thoughts on this product.

You can find this amid other prepared meat products like lamb shanks and beef ribs in the meat section of any Coles supermarket.

While I usually buy meat in its plain butchered raw form without any flavourings or marinades, I looked at this and thought why not. It’s already been cooked and just needs reheating in an oven. You could also heat it through using a microwave oven if you were in a hurry. Who would have thought you could prepare a pulled pork meal in hurry!

See you can even cook this on the stove top as well as in the oven.

So I tried it out. I thought the best way to try this product out was in a pulled pork and macaroni cheese taco. I do have some leftover which will go into toasted sandwiches which I will enjoy at work.

Last night as part of Taco Saturday, I prepared the pulled pork. It was very easy. I opened the plastic bag, emptied the contents into a pyrex bowl, covered it with aluminium (yes that’s the correct spelling my American friends ) foil and then put it into a hot oven. After 15 minutes I took off the foil and basted the meat. I cooked it for a further 15 minutes and then pulled it out and allowed it to rest a little before pulling apart the meat. It was very easy and the meat was very tasty. The packet says it’s enough to serve two people.

I put one serve into my pulled pork and macaroni cheese taco and put the rest into an airtight container and refrigerated it.

In my opinion Coles pulled pork is a good product. Who knows what preservatives and other things have been added to it to keep it on the shelves and to make it tender. It tasted good and it was tender. I’m happy to recommend it. Please note I have done this product review without any suggestion from Coles or anyone else.
