Sandwich

Prawn and scallop sandwich

Prawn and scallop sandwich on a warm summer evening

I was inspired this morning to make this prawn and scallop sandwich after watching Quirky Katie Quinn on her YouTube channel. She was sharing her experience of a Po’ Boy in New Orleans.

Katie Quinn

I’ve been following Katie for a few years and always enjoyed her stories. Katie was sharing where to get a good Po’ Boy in New Orleans with her BF Connor.

Is this a Po’ Boy?

Now I’m not suggesting for a moment that I’ve made a Po’ Boy. I really don’t have a good enough grasp of American culinary history to suggest that I could replicate something like that. Instead, I figured I could just sautée some prawns and scallops and put it into a baguette with some lettuce, tomato and garlic aioli.

I noticed in Katie’s video that the prawns and oysters were crumbed and deep fried. I’d love to do that but I’m too lazy and sautéing in butter is good enough for me.

Did you know scallops have blue eyes?

I did eat this with some regret. A year or so ago, my friend Jennifer who blogs ate Little Monster Girl mentioned she doesn’t eat scallops because, amongst other things, they have blue eyes. You can search for scallop eyes in Google and check it out. I said to Jennifer I’d refrain from eating scallops but I couldn’t help myself today when I saw them in the display cabinet at the delicatessen section at Coles.

How did the sandwich taste?

As you’d expect, seafood, fresh bread, crispy lettuce and fresh tomato. What more could you want? It tasted great.

Parting words

I regularly post photographs of food to Twitter, Facebook and Instagram. Please feel free to connect with me on any social media platform.
I also have a podcast. It’s not food related but each show is short and it’s named Medical Fun Facts. You can find it in the iTunes podcast store as well as Stitcher. A show drops every Monday and Tuesday. It has a little cynicism, a little scepticism and occasionally some sarcasm.

The Australian Fluffernutter sammich

Thanks for visiting. Please check out the rest of Yummy Lummy. I’d love it if you shared this site with your friends.

I have never heard of a Fluffernutter sandwich until I read about it on Little Monster Girl. Creator of Little Monster Girl, Jennifer explained what a Fluffernutter is. I’ve never seen marshmallow fluff in Australia but we do have peanut paste. I teased Jennifer a little about how I would make my own version and then I discovered on Wikipedia I really have no original thoughts. Anyway, I’m labelling this the Australian Fluffernutter sammich although I did suggest I would call it The Jennifer.

Sammich because this is an awesome sandwich and not the other (sexual) meaning of sammich. I’ll let you look that up on Urban Dictionary.

So without marshmallow fluff I used whole marshmallows and melted them under a grill. I also wanted to make this a fancy fluffernutter so I used raisin toast for some extra sweetness. I always like to have Nutella with my peanut paste (or jam or marmalade) so I added some Nutella. If I was going to toast this by pan frying it then for an Elvis Presley vibe I decided to add a banana. How awesome is this sammich???

So it always helps to have everything ready. Here are two slices of raisin toast on some baking paper. You can see I’m using Nutella, peanut paste, and Coles marshmallows.

Fluffernutter

I arranged the marshmallows in a pretty pattern and spread some peanut paste on the other slice of raisin toast. This then went under the grill and you can see a pattern of marshmallows and peanut paste on raisin toast.

Fluffernutter

I then added some sliced banana and Nutella

Fluffernutter

The finished product was pretty slippery. I had trouble cutting it and keeping the slices of raisin toast together.

So what was my verdict? OMG this is a great sammich. The marshmallow, peanut paste, Nutella and banana all go so well together. Frying it all in a case of raisin toast just makes raisin toast better.

So what do you think? Would you make an Australian fluffernutter sammich?

Monday link love

I don’t have much to write about today. Yesterday I shared some photographs from a relaxing weekend.

I’ll get straight into the Monday link love from the Canberra Food Bloggers facebook group

Versatile blogger post

I should also add here that my friend Jennifer from Little Monster Girl nominated me for a Versatile Blogger award. I’m not sure how you feel about these blogging awards. I know a lot of bloggers who eschew them, even to the extent of declaring their blogs award-free zones. I think they’re harmless fun. That said, I don’t always carry through with them. I think the links above can be my substitute for nominations so I recommend you take a look at each of them as well as the LMG webcomic. Just remember the LMG webcomic is NSFW [nudity].

versatile

Here are some facts about me.

  • I like my weather warm and moist. Warm doesn’t mean hot either, I like a range of 28 to 32 °C. I like it nice and humid. Dry weather sucks.
  • I’d be happy wearing thongs and shorts every day
  • I used to be an okay swimmer at school
  • I don’t think I’d try balut
  • I really like speck
  • I want to the Captain of the Starship Enterprise and I want Beverly Crusher as my CMO
  • My favourite Tracy brother is Virgil. He’s so cool smoking cigars and playing the piano.

Crab bacon sandwich

Last week I had my first crab bacon sandwich from Ted’s Bakery in Haleiwa.

I arrived back in Canberra today after the last day in Hawaii. I wanted dinner to reflect something really special from Hawaii and something I could do easily.

Sandwiches should be easy to make and this is a pretty simple meal that anyone can put together for themselves.

Fresh crab would have been better

I love this Pialligo Farm artisan bacon. Simply the best. I’ve used this amazing bacon before

A soft bread roll. I bought this from Coles.

Lightly fried with some cream cheese. I love cream cheese.

Yum. The bacon on the cream cheese. I cooked the bacon in the oven at 200 °C for 15 minutes.

I mixed the crab with some mayonnaise. I drained the crab for a while.

I forgot the onion but I had iceberg lettuce and tomato.

This crab bacon sandwich was just as good as the one I had at Ted’s Bakery last week. It was the duck’s guts.

Have you ever had a crab bacon sandwich?
