I thought cooking scrambled eggs by bain-marie like Heston was a little tedious. By chance I came across a YouTube video of Gordon Ramsay cooking scrambled eggs and tried it this morning for breakfast.
I found this method just as easy as Heston’s and less tedious and just as delicious.
When I tweeted this morning that I’d cooked the scrambled eggs Gordon Ramsay style, my friend Sonia asked if that meant that I swore my head off

Fortunately it was so easy I just cooked quietly while listening to 1206 2CC on the radio.
Scrambled eggs Gordon Ramsay style

Ingredients
Two eggs
A good nob of butter
A good dash of cream
Salt
Pepper
Instructions
In a non-stick frying pan crack in the eggs, add the butter and the cream
Turn on the heat to a medium level and start stirring
As you stir gently break the yolks and combine the eggs, butter and cream
As the eggs begin to do their thing and scramble take off the heat and keep stirring
Put back on the keep and keep stirring
If you’ve cooked enough scrambled eggs you’ll know when to take the pan off the heat knowing the eggs will continue to cook a little until to get the eggs onto a room temperature plate
Shoot a photograph
Eat the eggs
Wash the dishes
Spend the day at work pondering how to write the blog post
I forgot wilted spinach leaves with my scrambled eggs
Oh well I had spinach leaves and it would have been nice to have something green on the plate.
I’ve been watching a bit of Heston Blumenthal on TV lately and I thought I’d give his scrambled eggs technique a go. I normally cook mine in a frying pan in butter and stir a little once every 15 seconds and the whole thing is usually ready in a couple of minutes.
Heston cooks his eggs low and slow in a bain-marie. I found this YouTube video which shows the technique nicely.
Heston always seems to add beurre noisette and sherry vinegar. I didn’t do this because I was hungry and didn’t have any unsalted butter or sherry vinegar.
The process of making the scrambled eggs turns out to be really easy although it is time consuming. Putting a glass bowl on a saucepan, i.e., a bain-marie is easy and it’s the first time I’ve used this technique, I’ve never even heated chocolate this way. In my mind it just always seemed like an extra effort and I’m a lazy person and especially a lazy cook.
It takes about seven minutes before anything starts to happen and when it does the fluffy folds of eggs start to come together. By the end the eggs are creamy and really nice. The eggs went nicely with the streaky bacon and the bacon spam.

Streaky bacon
Bacon spam
Eggs
Cream
Salt
Dried flowers
Instructions
Put the bacon and spam into a bench top oven and cook for 20 minutes at 200 °C
Get the water in the saucepan simmering
Break the eggs into the glass bowl and add some cream plus a little salt
Place the bowl over the simmering water and gently stir for about 15 minutes
When the eggs start to come together and look like scrambled eggs take the bowl off the saucepan and put the eggs on a plate
Add the bacon and spam to the plate
Add some dried flowers to the scrambled eggs to make it look pretty
But for me the best thing about Bowral is the vanilla slice at The Gumnut Patisserie
The day started well with scrambled eggs from Bron. These were so buttery and so delicious. Bron does good scrambled eggs.
The point of going to Bowral though wasn’t so much to enjoy a vanilla slice but to do a little exercise and get some fresh air on a fine Spring day.
After the vanilla slice and a coffee we went to the Bowral Cheese Shop and bought some food for lunch before going for a walk along one of the trails. While we were at The Gumnut Patisserie Bron bought some sourdough and a rye sour bread.
At the cheese store we bought some quince paste, some duck and peppercorn pâté, some Small Cow blue cheese, some truffle brie cheese and some chicken, pork and pistachio terrine. This would be an indulgent lunch.
We drove to the base of the Mount Gibraltar walking trail and walked up the stairs to the Mount Gibraltar lookout. The walk took about 40 minutes and involved some stair climbing, some trail walking and some lookout gazing. I tried to shoot some photographs but most of them turned out badly. I forgot to set my white balance properly and I forgot to bring my circular polariser. It was a very glary day and so most of the shots were not very good. We came across a wombat hole and I didn’t adjust the ISO properly and ended up with a very soft shot with a 1/2 second shutter speed. By the time I was at that point I was huffing and puffing and my heart rate was high so the shot was soft and blurry. Anyway, enough excuses, it was a good day out.
We decided to drive to the Mount Gibraltar Jellore Lookout for lunch. It’s a nice place with a good view of Mittagong.After our strenuous walk to check out a number of the fantastic views around Gibraltar rocks, we set up our picnic at the Jellore look out, which is on a little outcrop and is usually quite serene. Today it was not so, with the arrival of a number of groups, including a particularly large and boisterous family that felt the best place for their numerous selfies was half a metre from where we were sitting. After they left we were able to enjoy some peace and quite looking over the hills around Bowral before heading back to Canberra.
This was a very indulgent but utterly delicious lunch.
Eating the pâté with the rye sour bread was like eating smooth dark chocolate. It was just amazing!

We were both pretty happy with our meals. The service is friendly and relatively quick. The place gets busy though so if you want a table get there early or be prepared to wait. If the wait is too long the good thing about Kingston is the number of restaurants open for breakfast so you won’t go hungry 😉
