Avocado pea smash smoked salmon wrap

This morning I was reading blogs and one that caught my eye was “Keeping up with the Holsbys” by Danielle Colley. Danielle had posted a recipe using avocado pea smash for breakfast. I wasn’t sure what I would prepare for dinner and this recipe spoke to me.

I think it was just the notion of adding some more vegetable matter to my meal and this seemed so easy. The line of potato gems for crunch is my homage to Mavi and its special breakfast wrap which contains an hashed brown. I also thought my Essential Ingredient lemon agrumato was a nice touch. You can see it dripping from the leading lower edge of the top half of the wrap in the photograph below. Lemon and avocado goes so well together.

Ingredients
  • Helga’s flatbread wrap
  • Essential lemon agrumato
  • Shepard avocado
  • Frozen peas, carrot and corn
  • Chili flakes
  • Cracked black pepper
  • Smoked salmon
  • Mayonnaise
  • Potato gems
Instructions
  1. Start cooking the potato gems at 220 °C for 25 minutes
  2. Microwave the frozen peas, carrot and corn
  3. Smash a ripe avocado along with the peas, corn and carrot
  4. Lay out the flatbread and add a splash of the lemon agrumato (I got mine from the Essential Ingredient in Kingston)
  5. Spread on the avocado pea smash
  6. Add some chili flakes and cracked black pepper
  7. Break up some smoked salmon and add that to the wrap
  8. Spoon on some mayonnaise
  9. Add a line of potato gems
  10. Roll the wrap as tightly as you can
  11. Cut diagonally like a fancy man
  12. Plate up and shoot a photograph
  13. Eat the wrap for dinner
  14. Wash the dishes
  15. Write the recipe

Sunday and Monday sweet chili salmon quinoa wraps

Mmm… sweet chili salmon. I went to work this morning after a weekend incubating a lurgy and after an hour and a half decided it would be best to come home rather than infect others.

The good thing about my workplace is we have access to work e-mail using secure IT systems from home. I was able to keep up with things that were happening at work and not infect others.

I’d even made lunch for today

Last night and tonight I continued the wrap theme and incorporated some quinoa and used sweet chili salmon as my protein.

Ingredients
  • Salmon fillet
  • Quinoa (previously cooked in chicken fat or freshly cooked in boiling water)
  • Spinach leaves
  • Chard (Beetroot leaves)
  • Dijon mustard (I forgot to use this on Sunday evening)
  • Sweet chili sauce
  • Helga’s flat bread wraps
Instructions
  1. Oil up the salmon and add some salt and dried herbs to taste (I use a plastic bag to coat the stuff onto the salmon)
  2. Heat up a frying pan
  3. Insert the salmon put on a lid and cook for 5 minutes
  4. Remove the salmon from the heat and remove the lid
  5. Allow the salmon to rest for 5 minutes
  6. Heat up the quinoa (mix in a little dijon if you like or garlic aioli)
  7. Prepare a flat bread wrap
  8. Add some spinach leaves and chard
  9. Lay on some quinoa
  10. Lay on the quinoa the salmon
  11. Squirt on some sweet chili sauce
  12. Wrap and cut diagonally like a pouncy wanker
  13. Shoot a photograph
  14. Inhale the wrap (well if you’re not well, inhale the thing, but if your nose is full of snot and your throat is red raw, eat gingerly and drink water to soften the wrap)
  15. Wash the dishes
  16. Write the recipe

Sweet chili pulled chicken dijon quinoa wrap

Mmm…pulled chicken! Pulled meats are so popular now especially pork and beef.

Last week I posted on a KFC quinoa casserole and shared to Twitter, Facebook and Google+. After I shared to twitter my friend Kate (Star Trek podcaster and aficionado extraordinaire) asked if I had included gherkins. I hadn’t but the KFC Australia twitter account claimed it would like to see a version with a gherkin.

 

 

 

 

 

 

The next night I responded after preparing a bowl of KFC quinoa casserole with a gherkin.

Kate suggested I further explore KFC menu ideas and mentioned pulled chicken wraps.


Over the last few days I’ve experimented a little with dijon quinoa wraps in various forms. I published a post earlier on my experiments. It’s mainly photographs but worth a look.

Ingredients
  • Chicken Maryland piece
  • Quinoa
  • Dijon mustard
  • Spinach leaves
  • Chard (beetroot) leaves
  • Helga wraps
  • Sweet chili sauce
Instructions
  1. In a baking tray add some quinoa and water
  2. Add the chicken on a rack and put in the baking tray
  3. Cook the chicken and quinoa at 150 °C for 1 hour
  4. Allow the chicken to rest for 20 minutes
  5. Spoon out the quinoa and mix some dijon mustard with a few dessert spoons of quinoa
  6. Pull the meat apart from the piece of chicken
  7. Prepare a bread wrap
  8. Lay on a layer of spinach leaves and chard
  9. Add some chicken meat
  10. Add some dijon quinoa
  11. Add some sweet chili sauce
  12. Roll up the wrap
  13. Cut and shoot a photograph
  14. Eat the wrap
  15. Write the recipe
