I don’t often have a meat-free meal, but I was prompted by a comment from Canberra blogging friend Sue on my diary blog. Pumpkin soup is a wonderful winter comfort food. Normally I cook it along with some bacon and cream. I wondered how to make a nice flavourful soup without the meat products so when I saw some coconut cream on special I thought I’d use it along with some sesame oil and some other spices like Sichuan seasoning, cumin and coriander seeds as well as some curry powder.
Fried chicken quinoa rice and kale just sounds so yummy doesn’t it? What could be better than combining quinoa and kale superfoods. Okay so I’m being a little facetious. I do like quinoa and kale. Mixing them together with other yummy stuff just makes for a perfect meal for one which is quick and easy to put together.
Bake the chicken in foil at 220 °C for 40 minutes and then slice up thinly
Wilt shredded kale in a frying pan with oil
Add the shredded chicken
Add the cooked quinoa and rice
Add the capsicum
Stir fry everything until it’s cooked through
Add the flaked almonds and fried shallots
Add a good slug of low fat coconut milk and let it incorporate into the rice
Turn off the heat and stir in the fennel and red onion
Plate up and garnish with chives and parsley
Shoot a photograph
Eat the bowl of food
Wash the dishes
Write the recipe

Occasionally I go meatless and the Hearty Vegetarian is fine sans meat
I took my daughters to the Groove Train in Chermside for breakfast. I had a huge day of food on Saturday at The Ekka and didn’t want anything too heavy. I thought the vegetarian option would be lighter.
When the server came out he assumed this was for Miss19 and he was surprised when I said it was for me. This breakfast was huge. It wasn’t light at all. The mushrooms were delicious. The boston beans were the yummiest I’ve had. The beans were rich, tasty and full of flavour. The eggs were perfectly poached with the yolk oozing over the hashed brown just the way I like it. Having a little fried onion was also great with the mushrooms. I’d happily eat this again.
In addition to the Hearty Vegetarian we had bacon and eggs with hollandaise plus a breakfast burger.
