Hot days! Roast chicken drumsticks and cheesy rice

Hot days in Canberra.

We’ve had daily maximum temperatures exceeding 35 °C for the last few days. It’s also been very dry with humidity mostly under 20%. Hot and dry is awful. I much prefer warm and moist. I’ve been running a humidifier in my living room to try to keep my skin from cracking. I really don’t like hot days. 

Keeping hot

So what do you do on a hot night? Turn on the often and roast some chicken drumsticks!

I didn’t have much choice. I’d bought three chicken drumsticks on Saturday morning and I didn’t like keeping them too long in the refrigerator.

I thought I would cook them on a bed of quinoa rice and use some asparagus and broccoli I had. For a little colour, I used up some cherry tomatoes and red chillies. I stuck it all together with some grated Coon cheese.

Ingredients

Three (3) Chicken drumsticks

Red quinoa and brown rice—1 packet

Gorgonzola cheese—2 tablespoons crumbled

Feta cheese—2 tablespoons crumbled

Coon cheese—1 small handful grated

Asparagus spears—small bundle cut coarsely

Broccolini—small bundle cut coarsely

Two (2) red chillies—sliced

Chilli flakes—1 teaspoon

How did I make this magnificent creation?

Cook the microwave red quinoa and brown rice according to the packet instructions.

In a large mixing bowl add the quinoa rice, three raw chicken drumsticks, a good slosh of olive oil, the Coon cheese, asparagus spears, broccoli, chilli flakes and curry powder.

Mix with oiled hands, separate out the chicken drumsticks and then form a mound in an oven-proof frying pan

Place the chicken drumsticks on top of the mound

Place the frying pan into an oven at 150 °C (300 °F) for 45 minutes

At 45 minutes remove the frying pan and crumble over the top the Gorgonzola and feta cheese

Put back into the oven for 5 minutes

Remove from the oven and plate up

Picture perfect!

How did it taste?

The rice was crunchy and cheesy. The chicken was nicely cooked. It was pretty filling. The Gorgonzola cheese really added a distinctive flavour too. 👍👍

Nothing to report from Work

Bad news

Miss15 broke the fifth metacarpal on her dominant hand while on the balance beam. This means she won’t be competing with Ms19 at the National Club Championships in Bendigo later in September. I am so sad for Miss15. She’s already had a couple of fractured vertebrae last year as well as an injured ankle.

Performance review time. I came away very happy.

The plumber came and fixed a leak in my en suite hand basin, repaired the taps in my laundry and tightened the taps in my shower. For those querying, yes I could do this myself but all my tools are still in storage and as a renter I shouldn’t be doing my own running repairs.

It wasn’t pay day so it wasn’t an exciting Thursday. I did have a good meeting though at Russel Offices.

Dinner was a piece of chicken Maryland on a bed of crispy crunchy ‘instant’ noodles with Brussels sprouts.

Hospital day!

Highlight #3

I received a gift from a workmate who had just passed her Part I examinations for her Fellowship of the Royal College of Pathologists of Australasia. She bought me a first edition of the American Society for Microbiology’s Manual of Clinical Microbiology. I have every edition of the Manual but the first which was published in 1970. This made my day. I was so happy. In fact, this made my week.

Dinner was leftover lamb shoulder with red quinoa and brown rice done fried rice style except rather than soy sauce I used Worcestershire sauce for an English touch.

Delicious Chicken Maryland with crispy rice recipe

Here we go again with another delicious Chicken Maryland with crispy rice recipe. Apart from salmon, Chicken Maryland is a favourite here on Yummy Lummy.

So what is in tonight’s dinner?

  • one piece of chicken Maryland
  • one packet of quinoa rice cooked in the microwave oven according to the manufacturer’s instructions
  • a handful of grated cheese, I prefer Coon cheese but tonight I went with some generic tasty cheese
  • some sliced capsicum pieces
  • sliced jalapeño peppers
  • sliced red chillies and spring onions
  • freshly cracked black pepper

How did I put it all together?

  1. I cooked the quinoa rice in the microwave oven for 90 seconds and put it into the bottom of a nonstick frying pan
  2. I laid over some capsicum pieces and then some grated cheese
  3. The piece of Chicken Maryland went on next followed by some cracked pepper and then a little more cheese
  4. That went into an oven which had been heated to 200 °C for 20 minutes and then the oven was turned down to 150 °C for 40 minutes
  5. After an hour I removed the frying pan being careful to use an oven mitt
  6. I let everything rest for 10 minutes
  7. I prepared a plate and garnished with some spring onions, jalapeño peppers and red chillies

  2. Ate the meal
  3. Washed the dishes

  5. Made a nice picture in Adobe Lightroom and Adobe Photoshop

How did it taste?

It was pretty good. The cheesy chicken skin was crisp, the muscle bundles were tender and moist. The quinoa rice was crispy and the cheese added a nice taste and texture to the dish. The jalapeño peppers and chillies also helped me just how deadened my sense of taste and smell is while I am unwell.

A fine Sunday

I awoke this morning from a crapulent sleep. I wish I could sleep better. My allergies are getting worse. If it wasn’t for the continuous positive airways pressure (CPAP) machine next to my bed, I reckon I wouldn’t be able to function.

Unlike Saturday, there was no fog and the sky was a brilliant blue that is common for Canberra. As much as I detest the weather, the altitude and inland location make for the cleanest bluest skies that I’ve ever known. Canberra skies are quite brilliant.

I enjoyed a plate of chilli scrambled eggs on Rye toast with some Pialligo Estate smoked bacon for breakfast.

The pelicans are back on Lake Ginninderra

After breakfast I went for a walk around Lake Ginninderra and noticed a couple of pelicans near the boat ramp on the Western Foreshore.

I don’t know what it is about pelicans but I really like them. I was able to get quite close to a pair of them this morning. Fortunately, I had with me my 24–240 mm f/3.5–f/6.3 zoom lens. For a variable aperture zoom lens, it’s not too bad on my Sony α7 full frame body.

There was also another small black bird with the pelicans. I’ve been told it may be an Eurasian Coot.

Dinner preparation

Yesterday while grocery shopping I came across a nice looking piece of beef rump. I put together a plan in my mind to have a slowly roasted piece of beef rump with leftover beef for toasted sandwiches at work this week.

I’ve really come to like using Snapchat (my user name is garydlum if you want to be friends), especially the video feature because I can keep a copy and then share it on Instagram.

What you need to make this slowly roasted lump of rump

  • A lump of rump
  • Brown onions × 2 with the outer layer removed
  • Sweet potato—peeled and cut into large pieces
  • Potato—1 spud quartered
  • Kent pumpkin—1 generous wedge cut into 2 pieces
  • Red quinoa—2 tablespoons
  • White quinoa—2 tablespoons
  • Arborio rice—4 tablespoons
  • Bay leaves × 2
  • Water—1 cup
  • Red wine—1 cup

Putting it all together

  1. In a large heavy casserole lay down a layer of rice, quinoa and then the vegetables
  2. Lay the lump of rump over the top
  3. Pour in the water and wine
  4. Cover with a sheet of baking paper to stop the lid from getting dirty because I’m lazy and don’t like scrubbing
  5. Cover with the casserole lid
  6. Place into an oven warmed to 150 °C
  7. Cook for 4 hours
  8. Remove the casserole from the oven and allow the meat to rest for 10 minutes
  9. Slice the meat and aliquot slices into containers for lunches
  10. Plate up the meal

How did it taste?

Bloody superb (it tasted really good)

The meat was pull apart tender and moist.

The vegetables were soft.

The juices were sublimely fatty and tasty.

What I’ve eaten this week

Another week

It’s been a good week in food. While my predictability remains high, there has been some variation. I’ve also been trying to vary how I share what I’ve been eating. I’m using Snapchat more especially video which I share via Instagram. I’ve also been producing a few more YouTube videos to share how I have prepared food. I set up a page for them.

Split pea and ham soup

Last Sunday I made split pea and ham soup again in an attempt to get it to look more green. Instead of carrot I used potato. It wasn’t much greener.

Salmon

I cooked salmon in paper one night and a quick pan fried version the following evening.

On Wednesday night I made cheesy Chicken Maryland with leftover slow cooker oyster blade steak.

Thursday was a long day. I started with a 6 am teleconference and ended with a lecture at the ANU Medical School from 5.30 to 7.15 pm. I stopped at McDonalds on the way back to the apartment.
