Slowly oven roasted rump of beef with quinoa rice

Slowly oven roasted rump of beef with quinoa rice along with potato, cauliflower, Brussels sprouts and onion served with horseradish. It sounds like a mouthful but oh what a delicious mouthful.

Last night I slowly roasted a butterflied leg of lamb and tonight I wanted some beef. The good thing is all the leftovers will be eaten for lunches at work. I may spend a lot of money on meat but I like to make it last.

Ingredients
  • Lump of rump
  • Potato
  • Cauliflower
  • Onion
  • Brussels sprouts
  • White quinoa
  • Red quinoa
  • Arborio rice
  • Red wine
Instructions
  1. In a casserole add the vegetables, quinoa and rice
  2. Add a splash of red wine
  3. Place the meat on top and cook for 30 minutes with the lid off in a hot oven 220 °C
  4. Place the lid on the casserole and cook for 150 minutes at 150 °C
  5. The quinoa and rice will absorb all the fat off the beef and be creamy rich
  6. Plate up and aliquot leftovers into containers for lunches
  7. Shoot a photograph
  8. Eat the meal
  9. Write the recipe
  10. Wash the dishes

Crab meat and bacon cauliflower cheese recipe

I added crab meat and bacon to my cauliflower cheese

After a couple of nights of big meat (salmon and Wagyu beef) I needed a lighter meal.

Comfort food made better with bacon and crab meat
Ingredients
  • Crab meat (tinned)
  • Bacon
  • Cauliflower
  • Panko breadcrumbs
  • Peas
  • Capsicum
  • Mushrooms
  • Smoked cheddar cheese grated
  • Tasty Coon cheese
  • Cream
  • Pepper
Instructions
  1. Preheat a bench top oven to 200 °C
  2. In a bowl mix everything except the cream, panko breadcrumbs and tasty Coon cheese
  3. Press everything into a pyrex container
  4. Pour over some cream
  5. Lay over some tasty Coon cheese
  6. Add some panko breadcrumbs
  7. Put into the oven
  8. Shoot some photographs and make a diptic
  9. Eat the meal and enjoy the creaminess
  10. Wash the dishes
  11. Write the recipe
  12. Blog (as a verb)

A simple one person meal consisting of baked salmon and a cauliflower stack
Ingredients
  • Atlantic salmon (about 250 g)
  • Cauliflower (four large florets)
  • Frozen peas (100 g)
  • Butter
  • Pouring cream
  • Salt and pepper
  • Tasty Coon cheese slices
Instructions
  1. Gently rub vegetable oil into a fillet of salmon and add salt and pepper
  2. Place the salmon on some baking paper on a tray and insert into a 150 °C oven for 16 minutes
  3. Steam the cauliflower until really soft
  4. Mash the cauliflower and then add some butter and mash more
  5. Add some pouring cream and allow the cream to reduce away while stirring and while the salmon is baking
  6. Press a disc of cheese with an aluminium cylinder
  7. Put the remaining cheese and the peas into the saucepan with the cauliflower and stir until smooth
  8. Make the stack in the aluminium cylinder
  9. Plate the salmon fillet next to the stack
  10. Remove the aluminium cylinder to reveal the stacked cauliflower
  11. Shoot a photograph (I used my Nikon D810 and Nikkor 50mm f/1.8 at 1/60 seconds, f/5.6 and ISO 64)
  12. Eat the meal
  13. Wash the dishes
  14. Check Twitter for comments after posting the image to Twitter, Instagram, Flickr and facebook
  15. Write the recipe
