Another big day at work. Busy and interesting. The best kind of day.
I started with a fried egg on a whole grain English muffin along with some Oxford marmalade. For lunch I continued getting through my leftover organic red rice pork congee with ham hocks. For dinner I had salmon and vegetable patties with sweet corn and Brussels sprouts. My day in food was fantastic.

I had a great day at work. It was pretty busy. It was nice to have a regular break to eat! For breakfast I had overnight soaked chocolate rolled oats with strawberries. For lunch I enjoyed some leftover organic red rice pork congee with ham hocks. Tonight for dinner I baked some salmon and stirred it into a curry quinoa rice dish with salad greens wilted in plus some flaked almonds, sunflower seeds and fried shallots.

I hope everyone has had a good weekend. Mine was pretty good when it comes to food. Otherwise the weather in Canberra has been pretty ordinary. It’s been cold, wet and windy.
So this morning I made low fat scrambled eggs and enjoyed some Buderim Ginger Factory ginger, lemon and lime marmalade. I went on a walk around Lake Ginninderra and stopped at Heather’s House of Cake for a caramel chocolate caramel (yes two caramels) cupcake. For lunch I had some leftover organic red rice pork congee on rye bread. While I was watching Netflix I enjoyed a snack of almonds, cashews, Queensland nuts and golden roughs. For dinner I some baked salmon with quinoa rice which was bound with some Greek yoghurt and English marmalade.

Well it’s back to work after a good weekend. I knew I had quite a bit of work waiting for me in the office so that meant a nice early start. To make that happen I prepared breakfast on Sunday night by soaking some rolled oats in skim milk and added a teaspoon of cocoa powder plus a few strawberries. The strawberry chocolate flavoured porridge is just like eating pudding for breakfast. For lunch I had leftover red rice chicken congee which was magnificent. For dinner I baked some salmon and fried some quinoa rice with kale and added a dessert spoon of Buderim Ginger Factory ginger marmalade which made an incredible difference. I love the sweet freshness it imparts to the rice.

Well this post won’t inlcude everything I’ve eaten this weekend. I went to a party on Saturday night. A fortieth birthday of a friend. The food was amazing and I didn’t capture any photographs (except one piece if the cake). We even roasted these huge Costco marshmallows outside. I consumed vast quantities of tender chicken wings, seafood tagine, lamb tagine, a lemon curd cake and an orange cake. It was awesome.
Saturday started with an English muffin topped with a fried egg on one side and English marmalade on the other half. I then went for a walk around Lake Ginninderra and stopped at Heather’s House of Cake for cake and coffee. I enjoyed a peanut caramel chocolate cupcake. For lunch I made myself a piece of rye bread topped with avocado and tomato. In the afternoon I tried to make my own Vegemite chocolate with Nutella and Vegemite on a VitaWeat biscuit. It wasn’t too bad.
On Sunday morning I burnt by palate and tongue on a salmon cake on a poppyseed bagel. I snacked on some Lindt Arabica throughout the afternoon while my Camargue Organic Red Rice chicken congee was cooking in the slow cooker.
