BLAT Bacon lettuce avocado tomato sandwich

This week Liz from Bizzy Lizzy’s Good Things wrote about an ultimate BLT (bacon lettuce tomato) sandwich. It inspired my Saturday lunch. 

While I was thinking of replicating Liz’s version I had some left over ciabatta in the freezer as well as an avocado that needed eating. In my mind there is no point wasting good food.

Ingredients
  • Ciabatta bread
  • Vine ripened tomato
  • Streaky bacon
  • Cos lettuce
  • Avocado
  • Lemon
  • Grapeseed oil
  • Pepper
  • Butter
Instructions
  1. Add a little butter to the bread and grill butter side down in a hot pan until golden brown
  2. Cook the streaky bacon in a bench top oven at 200 °C for 15 minutes
  3. Make an avocado spread with avocado, grapeseed oil, lemon juice and some pepper
  4. Slice the tomato, drain on some kitchen towel and add pepper
  5. Cut the cos lettuce to fit the bread
  6. Apply the avocado spread to the bottom piece of bread
  7. Lay on the lettuce
  8. Lay on the streaky bacon
  9. Lay on the tomato
  10. Shoot a photograph with the top piece of bread artistically positioned over a corner of the sandwich
  11. Shoot another photograph with the rose from my garden
  12. Put some avocado spread on the top piece of bread and put the sandwich together
  13. Cut the sandwich on an angle
  14. Shoot a close up photograph showing all the internal goodness
  15. Eat the sandwich
  16. Wash the dishes
  17. Write the recipe
  18. Blog (verb)
  19. Hope that people like the recipe and the photographs

KFC Casserole recipe

I usually buy a bucket of KFC so that I can enjoy leftover fried chicken

Nothing like leftover KFC for dinner
Ingredients
  • KFC pieces
  • Celeriac roughly diced
  • Parsley
  • Whole black pepper corns
  • Cashew nuts
  • Queensland (Macadamia) nuts
  • Celery
  • Onion
  • Spring onion
  • White wine
  • Water
  • Dried mixed herbs
Instructions
  1. Heat an oven to 150 °C
  2. In a large casserole add the chicken pieces, the celeriac, celery, spring onion, onion, whole black pepper corns and mixed herbs
  3. Add a splash of white wine
  4. Add a cup and a half of water
  5. Cook for three hours
  6. Chop the parsley
  7. Plate up and add some parsley
  8. Shoot a photograph (I used a Nikon D7100 with a Tamron 90 mm MACRO lens at 1/25 seconds, f/13 and ISO 800)
  9. Eat the meal
  10. Wash the dishes
  11. Write the recipe
  12. Blog about it

Footy food for State of Origin game two

Tonight is game two in this year’s state of origin series. On the old blog you can find many posts about state of origin and where my allegiances lie. Needless to say the photograph of me on my about page has the Queensland flag as a background. The Maroon jumper I wear in my twitter and instagram avatars says it all QUEENSLANDER!!!

On the way home tonight I stopped at Jamison Takeaway in the Jamison Plaza and bought some potato scallops and calamari rings to snack on while I cooked my dinner.

A need to do a shout out to the lovely ladies at the Jamison Takeaway. They always give me an extra potato scallop. They are the best. 

For dinner I made honey soy chicken wings. They make great footy food. Click on the image if you want to see a bigger version.

Rugby league is the greatest game of all. State of origin is the greatest example of rugby league. Queensland is the greatest state in Australia and in the world, even the universe. Footy and food go hand in hand.
Ingredients
  • Chicken wings
  • Honey
  • Soy sauce
  • Olive oil
  • Sherry
  • Dessicated coconut
  • Sesame seeds
  • Chilli flakes
  • Pepper
Instructions
  1. In a bowl add the chicken and everything else
  2. Mix well and allow to rest for ten minutes
  3. Put into a preheated oven (150 °C) for one hour
  4. Plate up
  5. Capture an image with a Nikon D5300 and a Tamron 90 mm Macro lens at 1/25 seconds, f/8 and ISO 100
  6. Eat the food while watching the pregame highlights
  7. Wash the dishes
  8. Write the blog post
  9. Enjoy the game
  10. Hope Queensland defeats New South Wales
 
Notes
Just to repeat, rugby league is the greatest game of all. State of origin is what sport is all about. Queenslanders are the best FULL STOP
