Happy VD

Yeah it’s VD, you know Valentine’s Day. I prefer VD mainly because I like sexually transmitted infections and the old fashioned name was venereal disease. Hence VD.

I spent the day enjoying myself eating, walking, shooting photographs and watching TV.

For breakfast I made myself a cheese omelet.

After breakfast I went for a walk around Lake Ginninderra and shot a few photographs.

I nearly walked into this spider while walking across a bridge. It was only about 5 cm long but it looked angry I had disturbed its web. 

I came across this cow. I’d like to name this photograph, “rump steak in Belconnen”.


Someone had a good time last night with a couple of bottles of beer.

When I got back to the apartment this praying mantis was waiting for me.


For lunch I enjoyed some smoked salmon with cream cheese, chives and dill on Vita-Weat biscuits.


These are some VD roses from my garden.


  
After doing my ironing and other things this afternoon I went to Crust Pizza and bought a Crust supreme with anchovies for Happy VD dinner.

What I ate and did this weekend

I’ve had a good weekend. I’ve been doing a two day learning course on Adobe Lightroom and Adobe Photoshop. I’ve been using Lightroom for a couple of years but I know very little about Photoshop. It was a really good experience. The weekend was arranged by the Canberra School of Photography and the teacher was David Harradine. I’d happily recommend courses by Irene Lorbergs at CSP and David from whack.com.au

I’ve also eaten well this weekend mind you at the course I ate nut muesli bars, potato chips and diet coke.

What I ate today

Today has been quiet. The weather was nice, it started cold but warmed up during the day and got got cold again in the early afternoon. I walked around Lake Ginninderra and ate well.

For breakfast I decided to go with two eggs and an English muffin. Between the egg and muffin I sneaked in a little ginger, lemon and lime marmalade. For lunch I tried something new, white rice with crab meat thickened with yoghurt and some Parmesan cheese. For dinner I baked some skinless chicken thigh in aluminium foil plus some baked Parmesan chips.

3 delicious low carb meals

I really need to lose weight. The only successful way I’ve lost weight has been to take a low carb approach. Whether this goes on or not will depend on motivation. Today I was motivated.

The thing about low carb eating is that it isn’t as easy as it sounds. You may think it’s all bacon and eggs and meat but it isn’t. It’s important to carefully choose vegetables and during the initial induction phase it’s important not to eat fruit. The big risks in the induction phase are constipation and gout. Both are uncomfortable and painful. Whether I continue depends on how I feel.

For breakfast I prepared a low carb fried egg, bacon and parmesan cheese dish.

I really like cooking my bacon in a small benchtop oven which allows easy melting of cheese.


After grocery shopping I went for a walk around Lake Ginninderra and found a pelican, black swan and some other water birds

For lunch I made a beef mince roll with tasty Coon cheese wrapped in iceberg lettuce

This didn’t look that exciting but it tasted surprisingly good.

Bacon and egg breakfast wrap recipe

Regular readers and followers on Instagram will know that I have a thing for the Mavi breakfast wrap. The “Mavi special” contains an hashed brown, mushrooms, bacon, fried egg and cheese. The customer gets a choice of tomato or barbecue sauce. I’ve seen one person asked for tomato and barbecue sauce to be combined. I’m not sure of that combination.

Ingredients
  • Helga’s flatbread wrap (whole grain)
  • Bega cheese
  • Shepard avocado
  • Spinach and chard leaves
  • Fried eggs
  • Streaky bacon
  • Barbecue sauce
  • Pepper
Instructions
  1. Cook the bacon in a benchtop oven at 200 °C for 15 minutes
  2. Fry two eggs slowly and gently
  3. Wilt the spinach and chard in the frying pan
  4. Mash the avocado in a bowl
  5. Lay out the flatbread and put two slices of cheese on it
  6. Put it into a microwave oven for 10 seconds to soften the cheese and the bread
  7. Spread out some avocado
  8. Lay on the spinach and chard
  9. Lay on the eggs and some pepper
  10. Lay on the bacon
  11. Squirt on some barbecue sauce
  12. Roll the bread into a wrap
  13. Cut like a fancy man
  14. Shoot a photograph
  15. Eat the wrap
  16. Wash the dishes
  17. Write the recipe
