Making KFC better with Brussels sprouts and avocado

There’s a short and long story to why I bought KFC tonight. The short version is I ran out of cash and making KFC better with Brussels sprouts seemed like a genius idea.

I won’t go into the long version because it involves explaining a lot of my thought processes today and no one really wants to know that. Anyway, we all know that KFC tastes great, we all know too that KFC isn’t the most healthful food to eat. To balance the meal I made finger licking good KFC better with Brussels sprouts and avocado. I posted the photograph to Instagram and on one account there was a comment on how dedicated I am to eat KFC off a plate

Ingredients
  • Pieces of KFC
  • Brussels sprouts

  • Bacon pieces
  • Grape seed oil
  • Butter
  • Slivered almonds and pine nuts
  • White wine
  • Cream
  • Grated cheese
  • Avocado
  • Olive oil
  • Lemon juice
Instructions
  1. Steam the Brussels sprouts and cut them in half
  2. Sautée the Brussels sprouts and the bacon until they brown off
  3. Add some butter and cook off the butter
  4. Add a splash of white wine and cook off
  5. Add some cream and the nuts and cook to a nice creamy reduction
  6. Turn off the heat and add some grated cheese
  7. Mash the avocado with a little lemon juice and olive oil
  8. Plate it all up
  9. Shoot a photograph
  10. Eat the meal
  11. Lick fingers
  12. Wash the dishes
  13. Write the recipe

As much as I like a little original recipe KFC, I reckon this meal is an order of magnitude better with the extra Brussels sprouts, bacon and avocado.

How would you make KFC better?

Cheesy chicken nuggets and potato gems

Last night on Twitter Kate (Star Trek podcaster and aficionado extraordinaire) and I were having a bit of a KFC conversation. She suggested that KFC should consider cheesy chicken nuggets plus several other suggestions. 

 

Kate also mentioned using Bega cheese to keep it Australian.
 
 

It got me thinking that I could enjoy a Hump Day meal involving cheese, chicken nuggets and also some potato gems. It’s a bit of a carbohydrate load I know and yes I’ve been complaining of recent weight gain, but I still have this lurgy and the persistent cough had me leaving work early again today.  Lurgy begone. I’m getting sick of being sick.  2015-04-01_18.18.23_009_GARY_LUM_FB The day started with a pretty big carbohydrate load so I figured what the hell, let’s go the whole hog. At lunch I had a couple of sausage rolls with sweet chili sauce. 2015-04-01_13.10.41_001_GARY_LUM_FB 2015-04-01_13.42.22_003_GARY_LUM_FB So for dinner I had chicken nuggets, cheese and potato gems to make my cheesy chicken nuggets and potato gems. Sweet chili pulled chicken dijon quinoa wrap

Mmm…pulled chicken! Pulled meats are so popular now especially pork and beef.

Last week I posted on a KFC quinoa casserole and shared to Twitter, Facebook and Google+. After I shared to twitter my friend Kate (Star Trek podcaster and aficionado extraordinaire) asked if I had included gherkins. I hadn’t but the KFC Australia twitter account claimed it would like to see a version with a gherkin.

 

 

 

 

 

 

The next night I responded after preparing a bowl of KFC quinoa casserole with a gherkin.

Kate suggested I further explore KFC menu ideas and mentioned pulled chicken wraps.


Over the last few days I’ve experimented a little with dijon quinoa wraps in various forms. I published a post earlier on my experiments. It’s mainly photographs but worth a look.

Ingredients
  • Chicken Maryland piece
  • Quinoa
  • Dijon mustard
  • Spinach leaves
  • Chard (beetroot) leaves
  • Helga wraps
  • Sweet chili sauce
Instructions
  1. In a baking tray add some quinoa and water
  2. Add the chicken on a rack and put in the baking tray
  3. Cook the chicken and quinoa at 150 °C for 1 hour
  4. Allow the chicken to rest for 20 minutes
  5. Spoon out the quinoa and mix some dijon mustard with a few dessert spoons of quinoa
  6. Pull the meat apart from the piece of chicken
  7. Prepare a bread wrap
  8. Lay on a layer of spinach leaves and chard
  9. Add some chicken meat
  10. Add some dijon quinoa
  11. Add some sweet chili sauce
  12. Roll up the wrap
  13. Cut and shoot a photograph
  14. Eat the wrap
  15. Write the recipe

Quinoa and KFC casserole

It’s no secret that I like KFC. I’ve enjoyed Kentucky Fried Chicken and KFC for as long as I can remember, even during the 1970s and 1980s when there were rumours that some restaurants used cat instead of chicken. I wonder how Colonel Sanders would feel about a quinoa and KFC casserole. I hope he’d be happy about my making a superfood more super. I’ll let you ponder which item is the superfood

I learnt a new word. Mirepoix is 2 parts onion, one part celery and one part carrot.
Ingredients
  • KFC
  • Quinoa
  • Anchovies
  • Celery
  • Leek
  • Carrot
  • Onion
  • White wine
  • Parsley
  • Lemon juice
  • Tomatoes (2)
Instructions
  1. I cooked this in a casserole
  2. I had the oven at 150 °C and cooked everything for about 2 hours
  3. I sautéed the onion and leek and added the mixture to diced carrot and celery in the casserole
  4. I broke up the meat from the chicken and added it
  5. I added the quinoa uncooked (I had about ½ cup)
  6. I chopped the tomatoes and added them
  7. I added the lemon juice, a cup of white wine and enough water to see it peeking through
  8. I covered the casserole with some baking paper before adding the lid (I do this because I’m lazy and don’t like cleaning the lid, i.e., I don’t like scrubbing the lid
  9. At the end of cooking I shredded some parsley and tossed it in and mixed it through
  10. I should have added some coconut cream but I have left overs so I’ll do that another time
  11. I plated it up with some coleslaw vegetables
  12. Shoot a photograph
  13. Eat the meal and ponder how it could be better
  14. Wash the dishes
  15. Post the photograph to social media and note the comments asking for the recipe

Nothing like leftover KFC for dinner
Ingredients
  • KFC pieces
  • Celeriac roughly diced
  • Parsley
  • Whole black pepper corns
  • Cashew nuts
  • Queensland (Macadamia) nuts
  • Celery
  • Onion
  • Spring onion
  • White wine
  • Water
  • Dried mixed herbs
Instructions
  1. Heat an oven to 150 °C
  2. In a large casserole add the chicken pieces, the celeriac, celery, spring onion, onion, whole black pepper corns and mixed herbs
  3. Add a splash of white wine
  4. Add a cup and a half of water
  5. Cook for three hours
  6. Chop the parsley
  7. Plate up and add some parsley
  8. Shoot a photograph (I used a Nikon D7100 with a Tamron 90 mm MACRO lens at 1/25 seconds, f/13 and ISO 800)
  9. Eat the meal
  10. Wash the dishes
  11. Write the recipe
  12. Blog about it
